I am in love with this delicious sausage and chicken gumbo recipe that is actually quite good for you! I wanted create a chicken recipe that was a lighter version of a traditional Louisiana specialty. So I found a traditional recipe for homemade gumbo, took out the rice, made a few swaps and created a lower calorie version — voila!
