Yes, that’s right, a pasta recipe that has just 0 Weight Watchers Points. I made this tasty dish using the super fabulous zero calorie Miracle Noodles that I discovered not too long ago. This pasta salad recipe, which is served cold, is great to take to a picnic or barbeque party, and makes a fantastic side dish for many different meats and poultry dishes. It’s easy to prepare, delicious and has barely any calories!
Miracle Noodle Spicy Pasta Salad Recipe
2 packages of the Miracle Noodle pasta of your choice (I used the fettuccini noodles)
2 tablespoons vinegar
1 cup sliced celery
1/2 cup of cherry tomatoes, sliced into halves
1 tablespoon prepared mustard ( I chose a Dijon mustard, like Grey Poupon)
1/2 cup chopped red pepper
1 teaspoon salt
1/4 cup chopped red onion
1/8 teaspoon pepper
*You can create many variables of this recipe by adding in shrimp, bacon bits, chicken or different veggies. But if you do, just remember to add in the appropriate points!
In a large bowl, mix vinegar, mustard, salt and pepper until smooth. Add Miracle Noodle pasta, celery, tomatoes, green pepper and red onion. Toss to coat well. Refrigerate covered for at least two hours to blend flavors. Enjoy!
