Ingredients
  

  • 4 cups fresh peaches - (peeled and pitted)
  • ½ cup brown sugar
  • ¾ cup whole wheat all purpose flour
  • ½ cup fat free milk
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp light butter - (melted)
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • 1 tsp fresh grated lemon rind

Instructions
 

  • Preheat oven to 350 degrees and spray an 8 inch square baking dish with nonstick, butter flavored spray.
  • In a large bowl, combine peaches, 1/4 cup of the sugar and the nutmeg. Toss well to coat. Set aside for about 30 minutes to let the peaches soak up the sugar.
  • In another large bowl, combine the flour, baking powder, salt and remaining sugar.
  • In a separate bowl, mix together the milk, liquid egg substitute, vanilla, lemon rind and butter.
  • Slowly blend the milk mixture into the flour mixture until the batter is smooth.
  • Pour the peaches into the baking dish. Evenly spread the batter over top of the peaches and bake until the batter becomes brown - about 30-35 minutes.
  • Remove from oven and let dessert rest for half an hour before serving. Cut into 6 equally sized pieces and serve at room temp or warm if desired.

  • The serving size is 1/6 of the cobbler.

    If you want to cut `calories use stevia instead of sugar and almond flour instead of white flour

  3. Peach cobbler just isn’t “right” without cinnamon. I added a generous 1/4 teaspoon cinnamon and 1/8th fresh ground nutmeg to balance it out. Otherwise it’s great! Also works when adding a pint of blueberries along with 3 cups of peaches (rather than 4). Toss fruit together along with 2 teaspoons of cornstarch, sugar and spices and bake in the oven for 10 mins to thicken a bit, then add the cobbler topping and bake as directed.

  4. Disappointing cobbler. I put less nutmeg than called for but still too much. Didn’t taste the lemon rind. Would have been better with white flour I think.

    Sounds delightful, but calorie count is completely wrong!
    Peaches 180cal + sugar 390cal + flour 340cal + milk 50cal + light butter 50cal = 1010 calorie in all, divided thru 6 portions means 168 cal per portion !
    Its still a low cal recipe, but much more than the stated 110 cal per portion!

    Made this with 3 C drained canned peaches [Sam’s Club Golden Star 3kilo can as I am heading to FL to swim with manatees having enuf of CO winters]. Used New balance Spread & Splenda brown sugar tho only 4 T of Splenda. Then made a crumb topping from 4T flour & 6T of the Splenda [only 2 T more than in recipe]. Baked 35 minutes in 375 F oven. Topping is nicely browned & delish with perked coffee.

  8. Sounds delicious, but it would be easier to follow if the ingredients were listed in the order they are used.

    • That’s so true, so when I copied the recipe into a Word document (so I can add my own notes) I separated the ‘filling ingredients’ from the ‘topping ingredients’. I do this with all recipes where it hasn’t already been done. It does make it easier to follow the recipe. :-)
