The perfect, ice cold dessert recipe for a hot summer’s day, these Creamy Coconut Pineapple Popsicles are just as nutritious as they are delicious.

Made with just a few simple ingredients, each popsicle is just 1 Point. These are so ridiculously easy to make, and my toddler loves them too, so I can feel good about having a healthy dessert on hand that will be a hit with my picky toddler and easy on my Weight Watchers Points.

When making these, I used the Ikea Pop Ice Holder, which allowed me to make 12 popsicles, at about 3 oz each. But you can use just about any popsicle mold that you like.

These Creamy Coconut Popsicles are a must make this summer if you are a Weight Watcher who needs a sweet cold treat!

Equipment

  • 1 Blender

Ingredients
  

  • 1 can light coconut milk
  • 1 can pineapple chunks - in their own juice
  • 1 large banana
  • 1 tsp vanilla extract

Instructions
 

  • Blend all ingredients together in a blender, until smooth.
  • Pour into popsicle molds, and freeze.

  3. Could the pineapple be substituted with any fruit? I’m allergic to pineapple (much to my dismay), but love coconut and these sound really good. Is there a substitution fruit you would suggest?

  5. What size cans did you use for the pineapple and the coconut milk?

    • I used a 20oz can of Dole pineapples, and a 14oz can of Trader Joe’s Light Coconut Milk.
