Ok, don’t hate me for another cauliflower recipe (I know I’ve been on a roll with them the past couple of weeks), but I’ve been seeing so many Buffalo Cauliflower Bites Recipes on Pinterest lately, that it had me craving them and I had just had to make some.

Last year, I did a Buffalo Cauliflower Poppers Recipe that was similar, but I wanted to make a few changes. My new Buffalo Cauliflower Bites turned out amazing…my husband and I could not stop eating them.

By using a light flour coating, instead of the Panko, and baking the bites with some of the hot sauce, these ended up having a lot more flavor and a very nice texture.

Of course, these do not taste exactly like the hot buffalo wings that I’m sure you’re craving, but these Buffalo Cauliflower Bites are way healthier and are just 3 Points for a nicely sized serving. Plus, sometimes, just that hot sauce taste will help satisfy that craving.

These are the perfect Weight Watchers Super Bowl recipes to add to your game day food table this year. Serve with celery and low-calorie blue cheese dressing.

Buffalo Cauliflower Bites Recipe

This low-calorie recipe is the perfect vegetarian alternative to hot wings. You get a ton of spicy flavor but with a lot less fat and calories. These are so easy to make and are a great Weight Watchers Super Bowl Recipe to serve on game day.

Equipment

  • 1 Oven

Ingredients
  

  • 1 medium-sized head of cauliflower - chopped into florets
  • ½ cup liquid egg substitute - like EggBeaters
  • ½ cup all-purpose whole wheat flour
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • cup Franks Red Hot Sauce
  • 1 tbsp light butter

Instructions
 

  • Preheat oven to 400 degrees. Spray a small baking dish with nonfat cooking spray.
  • Place EggBeaters in one small bowl, and in a separate small bowl, combine flour, onion powder, and garlic powder.
  • Dip each piece of cauliflower into Egg Beaters, and then coat evenly with the flour mixture, and then place into the baking dish.
  • Place into oven and bake until cauliflower becomes tender.
  • In a small saucepan, melt butter and then mix in hot sauce. Heat until combined and warm, just a minute or two.
  • Remove the cauliflower from the oven and pour ½ of the hot sauce mixture over the cauliflower. Put back into the oven and bake for another 5-8 minutes.
  • Serve immediately with remaining hot sauce for dipping

    What a great idea! My husband hates cauliflower but I know he would love them covered in buffalo sauce. I can’t wait to try out the recipe.

      Wanted to report back that my husband tried them, loved them and went back for seconds! He never gets seconds on veggies.
