Serve over rice or pasta and pair with a fresh salad or roasted vegetables for a complete meal. If you aren’t concerned about Points, then I recommend also throwing in a few chicken thighs as well. They are SO juicy and flavorful in this recipe. Enjoy!

Onion Honey Dijon Chicken

Mildly sweet and tangy, this easy Weight Watchers chicken recipe is perfect for a busy weeknight. The chicken cooks so tender and juicy, and the onions add a nice extra boost of flavor.

Ingredients

  • 2lbs skinless, boneless chicken breasts, cut into 6 fillets
  • 1 large onion, thinly sliced
  • 4 tbsp dijon mustard (I used the whole grain kind)
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees. Spray a large baking dish with an olive oil mister or cooking spray.
  2. Season chicken breasts with salt and pepper and place in baking dish. Cover chicken with the sliced onions.
  3. In a medium sized bowl, whisk together the remaining ingredients.
  4. Pour over chicken and onions, and place in oven to bake, uncovered, until chicken is cooked through, about 30 minutes.

  1. I have never tried a recipe from this site that I didn’t absolutely LOVE, that is, until tonight. I’ve been looking forward to trying this for weeks and was very disappointed. I followed the instructions exactly, but my sauce was extremely watery. When I poured it over the onions it rolled right off so my onions didn’t get that caramelized look that the picture shows. I’m thinking less chicken broth and another tbspn of each the honey and the mustard. Oh well, I guess it was bound to happen at some point. Laa Loosh is still my #1 source for WW recipes!

  2. Hello, I love the recipes you share! It’s so convenient seeing these posted on Facebook with the points plus values figured already. I was just a little confused by this one. 2lbs of chicken divided into 6 fillets would make each fillet over 5 ounces. I have never heard of having 5 ounces of chicken for 4 points; in my experience it is usually 1 point per ounce at the lowest. How did this turn out to be only 4 points for over 5 ounces?

      I think it will depend on the brand of chicken you use, as nutritional stats can vary per brand. The chicken that I use is Trader Joe’s Organic Chicken Breasts. According to the package, each 4oz serving has 120 calories; 1.5g fat, 0g carbohydrates; 26g protein, and 0g fiber. So, at a total of 32 oz, divided into 6 servings, that makes each of the 6 fillets (which are 5.3oz each) 160 calories; 2g fat; 0g carbohydrates; 34.5g protein; 0g fiber. That comes out to 4 Points +. The honey Dijon sauce nutritional info doesn’t end up affecting the Points Plus value, so each serving is just 4 Points +. Hope that helps to clarify!
