Berry & Arugula Salad – 3 Points +

This salad isn’t just beautiful – it’s delicious too. I just had to try this Strawberry Poppyseed Vinaigrette, and the combination of arugula and berries seemed like the perfect place. I’m so glad I did, it was wonderful. The vinaigrette is incredibly easy to make – just stick everything in the blender. I ended up with plenty leftover. If you’re looking to make this a main dish for lunch or dinner, just add a half a chicken breast for protein. You can also mix arugula and spinach instead of just arugula. Give this salad a try, you won’t be disappointed.

Berry & Arugula Salad

A colorful salad topped with berries and a delicious sweet but tangy strawberry poppy seed vinaigrette.

Ingredients

  • Salad:
  • 8 cups arugula
  • 1 cup strawberries, sliced
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup blackberries
  • Vinaigrette
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 1/2 cups strawberries, halved
  • 2 Tbsp honey
  • 1/2 tsp poppy seeds

Instructions

  1. Evenly divide the arugula between 4 large bowls or plates.
  2. Top with the berries.
  3. In a blender, combine the water, oil, vinegar, strawberries and honey.
  4. Puree until smooth.
  5. Stir in the poppy seeds and drizzle over the salads.
  6. Serve immediately.
  7. Store leftover vinaigrette in the refrigerator
