I have to say, this Baked Ranch Chicken is one of the best Weight Watchers Chicken Recipes I’ve ever had. It’s so simple, and yet so delicious. The flavors are perfect, and the crunchy cornflakes breading works wonderfully. My family really enjoyed this dish, and it has definitely become a staple in our house. Sometimes, to make the chicken even juicier, I’ll soak it overnight in reduced fat buttermilk. This tenderizes the meat and also adds a bit of tang that brings out the flavors of the ranch seasoning. This is a great low calorie chicken recipe that can prepared very quickly with very few ingredients, and is a great dish to prepare when you are having one of those “What the heck should I make for dinner” moments. It’s one of my go to chicken recipes that satisfies everyone, including me, all for just 5 Points + per serving.

As I’ve mentioned time and time again on this blog, I am obsessed with Buffalo Chicken anything. And I’m always experimenting with new healthy, and low calorie ways to get my craving satisfied. Over the years, I’ve created a variety of Buffalo Chicken Weight Watchers Recipes, but these Baked Buffalo Chicken Taquitos are topping my list right now. Holy Moly were they good. A bit spicy for the kids, but my husband and I TORE THESE UP! If you have some leftover rotisserie chicken on hand, it works great in this recipe. I didn’t, so I just boiled a couple of chicken breasts. It’s a very quick and easy recipe to throw together and makes a fantastic Weight Watchers party appetizer or game day food. In fact, these are so good, they are making it to my Weight Watchers Super Bowl Recipes list. I also tried making some of these with the Mountain Bread that I posted about last week, and it worked perfectly with those too!
Whenever I’m having a hankering for chicken nuggets, I whip up a batch of these zero guilt Baked Cauliflower Bites instead! Barbecue sauce is my usual dip of choice, but I have also had them with homemade honey mustard dip, ranch, Frank’s Red Hot Sauce, and even ketchup. All of which were tremendously delicious. And with each serving being just 2 Points + (not including the sauce), these are a WAAAAAAYYY better choice than chicken nuggets! Because, let’s face it, the nuggets are really only the vehicle for the dipping sauce, so why spend a lot of those Precious Weight Watchers Points on a fast food chicken nugget that’s loaded with terrible ingredients? Baked Cauliflower Bites are the way to go – they are super healthy and are so low in calories that I can go to town with my dipping sauce.
