<p>Though this is not one of Weight Watchers Thanksgiving Recipes, it&#8217;s a FABULOUS stuffing recipe for anyone who needs a delicious low calorie stuffing to put on their table this year! Plus, it&#8217;s my absolute favorite Thanksgiving recipe because I LOOOOOVE stuffing and I go crazy eating this stuff every year. So I had to find a way of making a lower calorie version of my favorite Thanksgiving food. Using the basic, traditional ingredients, this Thanksgiving stuffing is really too good to be true. To create this dish, I just took my mom&#8217;s traditional stuffing recipe, and altered it with lower calorie ingredients. Using the light bread and less butter really makes a huge difference without compromising taste. It has just a 2 point value for a 1/1/2 cup serving! Not bad!! so you can still enjoy all the fabulous flavors of Thanksgiving without sacrificing that diet plan you&#8217;ve been working so hard on all year. And it&#8217;s so yummy, you may just find yourself making this dish for non Thanksgiving Dinners too! Enjoy.</p>

<h2><u>Low Calorie Thanksgiving Stuffing Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 8 slices light bread (I used Weight Watchers bread)<br />
- 1 1/2 cups fat-free chicken or vegetable broth<br />
- 1 1/2 cup chopped onion<br />
- 1 1/2 cup chopped celery<br />
- ¼ cup granny smith apples (finely chopped with skin on)<br />
- 1/3 cup fat-free liquid egg substitute<br />
- 1 tbsp fresh rosemary<br />
- 1 tbsp fresh thyme<br />
- 1 tbsp fresh sage<br />
- 2 tbsp. light butter (I used Brummel &#038; Brown)<br />
- Kosher salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
Start by drying out your bread. You can either do this by toasting in the oven, or by leaving the bread sit out at room temperature overnight.</p>
<p>Preheat oven to 325 degrees.</p>
<p>In a medium pot, combine chicken broth, onions, celery, apples, butter, salt, pepper, rosemary, thyme and sage. Cook for about 15 minutes over medium heat. Mean while, break up your bread into small ½” pieces by chopping or just breaking apart with your hands. Put bread into a large oven safe dish.</p>
<p>When broth mixture is ready, slowly pour onto bread, making sure to cover all the pieces. Next, mix in the egg substitute and make sure to cover all pieces. If bread cubes do not seem wet enough (they should be moist, but not saturated), add a tbsp or two of warm water until appropriate texture is reached. Season with more salt and pepper if desired.</p>
<p>Cover dish with foil and transfer to over. Cook for about 25 minutes. Then, take out stuffing, mix it around and fluff it a bit and put back in the oven, uncovered for about another 15 minutes. Enjoy!</p>
<p>Entire Recipe is 4 servings<br />
Serving size is 1 1/2 cup<br />

<p>With all the food filled holidays just around the corner, it&#8217;s time to start stocking up your arsenal of delicious, yet low calorie Weight Watchers Thanksgiving Recipes and Weight Watchers Christmas Recipes. And with Thanksgiving being the first in the lineup, we&#8217;ve got one tough holiday feast to conquer! And this delicious Thanksgiving Pumpkin Pie Recipe is a great dish to add to your lineup of low calorie Thanksgiving recipes! Creamy and delicious, this dessert recipe uses a light graham cracker crust instead of the traditional pie crust recipe. In my opinion, I think it actually tastes better and it helps us cut a lot of calories and Weight Watchers Points from this dish. </p>

<h2><u>Low Calorie Pumpkin Pie Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
For the crust:<br />
- 4 oz reduced-fat cinnamon graham crackers<br />
- 2 Tbsp light butter, melted (I suggest Brummel and Brown)<br />
- 2 large egg white<br />
- 1 Tbsp packed light brown sugar<br />
- 1 tsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)</p>
<p>For the pie filling:<br />
- 1 1/4 cup canned pumpkin<br />
- 1 large egg<br />
- 2 tbsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)<br />
- 2 tsp pumpkin pie spice<br />
- 1/2 cup dark brown sugar<br />
- 1/4 tsp table salt<br />
- 1/2 cup fat-free evaporated milk<br />
- Top with a dollop of Fat-Free Reddi-Whip whipped cream</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350 degrees.</p>
<p>In a food processor, combine graham crackers and light brown sugar, and process into fine crumbs. In a small bowl, combine the crumbs and the melted butter, and pancake syrup, and mix with hands. Then transfer to an ungreased 9” pie pan, and distribute crust mixture evenly, pressing it against the pan with your hands. Put in the fridge and chill for 40 minutes. Then, bake about 8-10 minutes, or until the pie crust starts to turn that yummy golden brown.</p>
<p>In a large bowl, whip egg whites into a soft peak, using an electric mixer. Fold in remaining ingredients (except the whipped cream). Beat the mixture until smooth, creamy and lump free, and pour into your pie shell. Bake for about 45-50 minutes, or until a knife inserted in the center comes out clean. Let cool for 5-10 minutes. Cut into 8 even slices and top with a nice dollop of the Fat Free Whipped Cream. Enjoy!</p>

Serving size = 1 slice<br />
Each serving = 3 Point Value</p>

<p>So, yes, it&#8217;s been a while since I posted a Fabulous Food Find Friday post, but I&#8217;ve got a yummy one today, and a coupon for all of my readers too! Forgive me? :)<br />
The super awesome folks at Yoplait sent me over some samples of their Yoplait Delights Parfait to try out and I was eager to give it a taste. I must admit that I&#8217;m typically a skeptic when it comes to low fat yogurt&#8230;it usually tastes fake or chemically to me, and that&#8217;s a turn off (see my other <a href="http://www.laaloosh.com/2008/10/20/the-best-low-calorie-yogurt/">fabulous yogurt finds</a>). But when I tried these Yoplait Delights, I was thrilled!!!! SUPER YUMMY!! And each, nicely sized portion, has just 2 Weight Watchers Points! They come in 4 sinful flavor combos, but I only taste tested the Lemon Torte and the Triple Berry Creme and LOVED them!! All 3 grocery stores I went to were out of the Creme Caramel and the Chocolate Raspberry, so I can&#8217;t share my thoughts on those flavors yet, but I LOVE&#8230;I mean seriously am IN LOVE with anything chocolate raspberry, and creamy caramel flavored goodies also steal my heart, so I can&#8217;t wait to get my hands on these low calorie snacks!</p>

- 1/2 cup Splenda (the kind in the box for baking, not the packets)<br />
- 1 tsp salt<br />
- 1/4 cup thinly sliced shallots<br />
- 1/4 cup coarsely chopped red onion<br />
- 2 tbsp sliced fresh hot red or green chilies (use more if you like it spicy!)</p>
<p>**You can peel the cumbers if you prefer, but I left the skin on on for more flavor and texture.</p>
<p><strong>Directions:</strong><br />
Combine vinegar, water, spelnda and salt and boil until Splenda and salt are dissolved. Remove from heat, cool to room temp.<br />
In a large bowl, combine cucumbers, shallots, red onion and chilies. Add cooled vinegar mixture and toss. Enjoy!</p>

<h2><u>Honey Lime Pork Chop Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 (4 oz.) lean boneless pork chops<br />
- 1 package Onion Soup Mix<br />
- 1 tbsp chopped scallions<br />
- 3 tbsp honey<br />
- 3 tbsp fresh lime juice<br />
- 1/4 cup low sodium soy sauce<br />
- 1/8 tsp ground or fresh ginger (I used fresh)<br />
- dash of Kosher salt and pepper</p>
<p><strong>Directions:</strong><br />
Start by making the marinade. In a medium sized bowl, combine all ingredients, except the pork chops. Place 1/2 of the marinade into an 8&#215;8 inch baking dish. Place the pork chops on top followed by the remaining marinade. Cover and refrigerate for up to 24 hours (2 hours minimum), turning occasionally. Remove the pork chops from the marinade, discarding any left over marinade. Grill or broil the pork chops, turning only once, until the pork chops are done.</p>

<p>Ok, so I know it&#8217;s been a while since I last posted, but my husband and I just moved, and that was a LOT of work. And doing that while trying to take care of a 6 month old was incredibly time consuming. So posting (or doing anything else for that matter) was out of the question.</p>
<p>Anyway, excuses aside, I&#8217;m doing my best to get back on track with a tasty and healthy salad dressing recipe that is loaded with antioxidants and yet low in Weight Watchers Points! Our friends over at <a href="http://www.pomwonderful.com/index.html" rel="nofollow" >POM Wonderful</a> sent us some samples of their fabulously delicious POM juice to try out. The juice by itself is really really yummy, but a small, 8oz bottle of it is about 4 Weight Watchers Points. A bit too many Points to spend on a beverage, in my opinion. So, I decided to experiment with it, and I found lots of ways to incorporate POM Juice  into some Weight Watchers Recipes, while still keeping the recipes low in Points. Pomegranate Juice is so incredibly good for you &#8211; it&#8217;s health benefits are endless. And it tastes pretty amazing too! POM Juice is actually grown and manufactured in California where it&#8217;s hand-picked and squeezed into bottles that are even manufactured by POM too. Other brands are made with juice from Iran and Turkey, and were shown to contain added sugar, colorants and other low-grade filler juices, despite being labeled as &#8220;100% Pomegranate Juice&#8221;. </p>
<p>With that being said, the benefits that Pomegranate Juice has to offer are countless &#8212; cardiovascular health, prostate health, erectile function&#8230;.and the list goes on. It&#8217;s super high antioxidant potency is a major benefit too. So finding ways to add some POM Juice into your diet is a great idea! And this delicious, low calorie vinaigrette recipe is a great way to get started!</p>

<h2><u>POM Vinaigrette Dressing Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/3 cup POM Wonderful 100% Pomegranate<br />
    Juice<br />
- 1/3 cup arils from 1 large POM Wonderful<br />
    Pomegranate (optional)<br />
- 1/4 cup olive or vegetable oil<br />
 &#8211; 1/3 cup red or white wine vinegar<br />
 &#8211; 2 tablespoons grated red or brown onion<br />
- 1/2 teaspoon sugar, or to taste<br />
 &#8211; 1/2 teaspoon salt<br />
- 1/8 teaspoon freshly ground pepper</p>
<p><strong>Directions:</strong><br />
 Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/3 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) In a screw-top jar or plastic container with tight-fitting lid, combine juice, the 1/3 cup arils and remaining dressing ingredients. Cover and shake well. Set aside or refrigerate for up to 2 days before serving.</p>
<p>Serving size = 2 tablespoons<br />
Each serving = 2 Point Total</p>

Each serving has just a 5 Point Total, which is a phenomenal count, considering that a traditional cobb salad recipe can clock in at well over 20 Weight Watchers Points per serving&#8230;SCARY! So this lighter version is a real treat. And it still has all of the yummy goodness that makes a cobb salad tasty! Bacon, blue cheese, egg&#8230;mmmmm! If you love cobb salads, then this low calorie recipe is a MUST try!</p>

<h2><u>Light Cobb Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/2 head of romaine, coarsely chopped<br />
- 1 cucumber, chopped or sliced into small pieces<br />
- 1/2 head of Boston lettuce (or Iceberg), coarsely chopped<br />
- 2 hard-boiled large eggs, separated, whites and yolks finely chopped<br />
- 5 slices of extra lean turkey bacon, cooked and crumbled<br />
- 1 ripe avocado, cut into small pieces<br />
- 6 oz chicken breast, cooked and diced<br />
- 2 tomatoes, finely chopped<br />
- 1/2 cup blue cheese</p>
<p>Dressing<br />
- 1/3 cup red-wine vinegar<br />
- 2/3 cup olive oil<br />
- 1 tbsp Dijon mustard<br />
- 1 tsp lemon juice<br />
- 1 small clove garlic, crushed<br />
- Salt and pepper</p>
<p><strong>Directions:</strong><br />
Combine chopped lettuce in a large salad bowl.<br />
Arrange the chicken, bacon, tomato, egg and avocado over the greens.<br />
Whisk vinegar, mustard, lemon juice, garlic, salt and pepper. Add the oil in a slow stream, whisking until it is emulsified. Serve separately.</p>

<p>This simple summer salad is probably one of my favorite salad recipes ever. I just adore the taste combination of sweet tomatoes and basil with the tang of balsamic vinegar and the creaminess of the mozzarella cheese. Plus, it&#8217;s an incredibly fast &#038; easy dish to make, and it&#8217;s pretty diet friendly. It&#8217;s also a great way to get some vitamins, calcium and antioxidants into your diet! And each serving has just a 3 Point Total (5 Point Total for two servings). So, while you can&#8217;t go hog wild and eat the whole thing, it&#8217;s still a healthy, diet-friendly salad to enjoy in controlled portions. This tasty tomato, basil, and mozzarella salad makes a great healthy side dish recipe to serve along with a hearty sandwich or healthy grilled chicken. Though, it&#8217;s such a versatile recipe, you can really serve this with just about any meal. It also makes a great appetizer recipe! </p>

<h2><u>Caprese Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 large tomato, sliced into 8 slices<br />
- 8 oz fresh mozzarella, sliced into 8 slices<br />
- 5-6 basil leaves, sliced or whole<br />
- 1 tbsp extra virgin olive oil<br />
- 1 tsp balsamic vinegar<br />
- salt and fresh pepper</p>
<p><strong>Directions:</strong><br />
Place sliced tomato on a large plate or platter. Whisk together olive oil, vinegar and salt and pepper. Top tomato slices with mozzarella and then drizzele olive oil and vinegar mixture over all the slices. Spread basil leaves evenly over all slices.</p>

- 1 tbsp chopped cilantro<br />
- 1 tsp olive oil<br />
- salt and pepper to taste</p>
<p>NOTE: For added heat and spice, try adding in 1 tsp finely chopped jalapeno peppers! Or add a little variety by adding 1 tbsp of pear or papaya for a sweeter, fresher taste.</p>
<p><strong>Directions:</strong><br />
In a medium bowl, combine onion, tomato, lime juice, olive oil, cilantro salt and pepper. Add crab meat and toss well.<br />
Cut avocado open, remove pit and spoon out avocado. Cut into large chunks and add to crab. Mix carefully, not to mash the avocado. Spoon back into avocado shells and enjoy!</p>
