/> - 36 large shrimp, peeled and deveined, tails intact (about 1 pound)<br
/> - 1 1/2 medium limes, cut into 12 wedges<br

/> 1 spray nonfat cooking spray<br
/> 1 Tbsp lime zest<br
/> 2 Tbsp unpacked light brown sugar, divided<br
/> 2 Tbsp fresh lime juice<br
/> 1 tsp table salt<br
/> 2 Tbsp ginger root, fresh, grated, divided<br
/> 1/4 tsp cayenne pepper</p><p><strong>Directions:</strong><br
/> Preheat grill and coat with nonfat cooking spray. Place zest, lime juice, 1 tablespoon of brown sugar, 1 tablespoon of ginger, salt and cayenne pepper in a resealable plastic bag; seal bag and shake to combine. Add fish to bag. Reseal, shake again, place bag on a plate and allow to marinate at room temperature for 20 minutes, turning once. Meanwhile, in a second plastic bag, place remaining tablespoon each of brown sugar and ginger, and pineapple. Seal bag and allow to marinate for 5 minutes; remove pineapple and add resulting juices to fish bag. Grill pineapple until heated through, turning once, about 8 minutes. Remove to a serving platter; cover with foil to keep warm. Cook fish over direct heat, brushing with marinade, until cooked through, about 3 to 4 minutes per side. Unfortunately, those burgers can come with some pretty hefty nutritional stats. But my recipe is so amazingly delicious, it will knock your socks off! And don&#8217;t worry &#8212; it&#8217;s not a veggie burger or even a turkey burger &#8212; it&#8217;s a real, honest-to-goodness real beef hamburger! It&#8217;s the perfect Weight Watchers Fourth of July recipe to use if you are following the Weight Watchers plan, but still want to partake in all the holiday BBQ yumminess! This is definitely you&#8217;ll want to add to your 4th of July picnic&#8217;s menu!</p><p><span
id="more-231"></span></p><h2><u>4th of July Hamburger Recipe</u></h2><p><strong>Ingredients:</strong><br
/> 1 package of Wonder Light Hamburger Buns (8 buns in package)<br
/> 32 oz. extra lean ground beef (it should be around 140 calories for 4 oz)<br
/> 1/4 cup egg whites<br
/> 1 packet of dry ranch seasoning/salad mix<br
/> 4 minced garlic gloves<br
/> 1 tsp salt<br
/> 1/2 tsp pepper</p><p><strong>Directions:</strong><br
/> In a large bowl, combine ground beef, egg whites, ranch seasoning mix, garlic, and salt and pepper together, until thoroughly blended.  Form meat into 8 flat and thin hamburger shaped patties. Barbecue on the grill until desired level of cooking is reaching. Place patty on bun and garnish. Enjoy!</p><p>*You can garnish your hamburger with any of the following and it will not affect the  Weight Watchers Points value: lettuce, tomato, onions, pickles, jalapeños, roasted peppers, or mushrooms.<br
/> **Make it a cheeseburger by adding a slice of reduced fat swiss or cheddar cheese, and add on 1 additional Weight Watchers Point</p><p>Serves 8.<br

I thought I&#8217;d share a few awesome, healthy, low calorie recipes that are easy to make and perfect for that 4th of July BBQ! So I&#8217;ve decided to devote this week&#8217;s posts entirely to yummy, yet low in Point Value, Fourth of July barbecue recipes! /> 3/4 pound uncooked boneless, skinless chicken breast, cut into strips3 Tbsp Cajun seasoning<br
/> 4 medium tortillas, flour, fat-free<br
/> 1 Tbsp all-purpose flour<br
/> 1/2 small onion(s), red, thinly sliced<br
/> 1 tsp paprika<br
/> 2 cup mixed baby greens<br
/> 3 tbsp Cajun seasoning<br
/> 1/2 tsp Cajun seasoning<br
/> 8 medium basil, leaves<br
/> 1 1/2 tsp fresh lemon juice<br
/> 4 tsp fat-free mayonnaise<br
/> 1 small tomato cut into strips<br
/> salt and pepper to taste</p><p><strong>Directions:</strong><br
/> Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. On each tortilla, spread 1 teaspoon dressing, add greens, onion slices, two basil leaves and some slices of tomatoes. Top with chicken pieces and wrap. Enjoy!<br

/> 3 pounds beef boneless chuck roast (try to get the leanest meat available)<br
/> 1 cup barbecue sauce<br
/> 1/2 cup apricot preserves<br
/> 2 tablespoons red or green bell pepper &#8212; chopped<br
/> 1 tablespoon Dijon mustard<br
/> 2 teaspoons brown sugar &#8212; packed<br
/> 1 small onion &#8212; sliced<br
/> 12 whole grain hamburger buns or Kaiser rolls &#8212; split</p><p>Remove excess fat from beef. Cut beef into 4 pieces. Place beef in 4 or 5 quart slow cooker.<br
/> Mix remaining ingredients except buns; pour over beef. Cover and cook on low heat setting 7 to 8 hours or until beef is tender.  Remove beef from slow cooker. Cut beef into thin slices; stir back into sauce. Cover and cook on low heat setting 20 to 30 minutes longer or until beef is hot. Fill buns with beef mixture. /> 2 tablespoons brown sugar<br
/> 1 garlic clove &#8212; crushed<br
/> 1 tablespoon Worcestershire sauce<br
/> 2 tablespoons red wine vinegar<br
/> 1/4 teaspoon liquid smoke flavoring<br
/> 1/4 teaspoon salt<br
/> 1/8 teaspoon pepper<br
/> 12 French rolls or sandwich buns; <strong>try to find low calorie, high fiber rolls</strong></p><p>Place beef in slow cooker. Combine remaining ingredients, except rolls. Pour over meat. Cover and cook on LOW 8 to 9 hours. Refrigerate or prepare barbecue sandwiches now. Shred beef by pulling it apart with 2 forks. Add one cup sauce. Reheat mixture in microwave or on stovetop. Spoon BBQ beef onto warm, open-face rolls or buns.
