<p>When I found this Weight Watchers Beef Stew Recipe for the crock pot, I literally was drooling. Though I initially thought it was just a traditional beef and vegetable stew recipe, it&#8217;s actually a classic Jewish recipe for Tzimmes! I&#8217;ve had Tzimmes before, but I&#8217;ve never had it prepared with the beef and vegetables so I was so excited to give it a try, and YOWSA!! IT WAS SO YUMMY!! Hearty and delicious, this Weight Watchers Recipe for Beef Stew is an incredibly filling meal, and with 8 Weight Watcher Points per serving, it&#8217;s much lower in calories than most stews. Try serving this stew up with a tasty <a href="http://www.laaloosh.com/2008/07/01/asparagus-cherry-tomato-salad-recipe/">0 Points Salad</a> for a complete and tasty meal! But keep in mind that it will also make a wonderful Passover Recipe and/or Hanukkah Recipe! This Weight Watchers crock pot recipe offers a truly unique and delicious take on beef stew by adding in some non traditional ingredients like prunes, cinnamon and honey &#8211; and it is definitely worth trying!</p>

<h2><u>Weight Watchers Beef Stew Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 7 oz frozen chopped onions, about 2 cups<br />
- 3 pounds raw, lean beef brisket, trimmed, boneless, cut into 1-inch pieces<br />
- 2 large garlic cloves, minced<br />
- 2 medium sweet potatoes, peeled and cut into bite-size chunks<br />
- 1/2 pound baby carrots, cut in half if large<br />
- 8 small uncooked new potatoes, cut in half (unpeeled)<br />
- 16 prunes, pitted<br />
- 4 tbsp fresh lemon juice, divided (from 2 small lemons)<br />
- 5 tsp honey, divided<br />
- 1 1/2 tsp Kosher salt<br />
- 1/2 tsp black pepper<br />
- 1/4 tsp ground cinnamon<br />
- 1 cup beef broth</p>
<p>NOTES: You can substitute dried apricots for the prunes if you prefer.<br />
For a stew with thicker gravy, spoon 1 tablespoon of flour into a cup and stir in 1/4 cup of the tzimmes liquid until the mixture is lump-free. Add the flour mixture to the slow cooker, cover and cook on low for 10 minutes. (Adding the flour does not affect the recipe’s POINTS value.)</p>
<p><strong>Directions:</strong><br />
Place onion, beef, garlic, sweet potatoes, carrots, new potatoes, prunes, 2 tablespoons of lemon juice and 1 tablespoon of honey in a 5- to 6-quart slow cooker. Add salt, pepper, cinnamon and broth; stir well.<br />
Cook on low setting for 7 to 8 hours. About 5 minutes before serving, stir in remaining 2 tablespoons of lemon juice and remaining 2 teaspoons of honey; cover and cook on low for 5 minutes. </p>
<p>Entire Recipe makes 8 servings<br />
Serving size is 1 ½ cups<br />
Each serving = 8 Weight Watchers Points</p>

<h2><u>Weight Watchers Roasted Brisket Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 large onion, sliced<br />
- 2 medium garlic cloves, minced<br />
- 1 pound baby carrots<br />
- 5 oz mushrooms, sliced (about 2 to 2 1/2 cups)<br />
- 2 1/2 pounds raw lean beef brisket, trimmed, use brisket from the flat half<br />
- 28 oz canned crushed tomatoes<br />
- 1 tsp paprika<br />
- 3/4 tsp Kosher salt<br />
- 1/4 tsp black pepper<br />
- 1/4 tsp crushed red pepper flakes<br />
- 2 tbsp fresh lemon juice<br />
- 2 tbsp sugar</p>
<p>TIP: For added color and flavor, substitute a cup of frozen green bell pepper strips for half of the mushrooms.</p>
<p><strong>Directions:</strong><br />
Preheat oven to 325ºF.<br />
Spread onion slices and garlic on bottom of a nonstick roasting pan; top with carrots and mushrooms. Arrange beef over vegetables.<br />
In a mixing bowl, combine tomatoes, paprika, salt, pepper, red pepper flakes, lemon juice and sugar; stir to dissolve sugar.<br />
Pour tomato mixture over brisket and vegetables; tightly cover with a sheet of heavy-duty aluminum foil. Roast for 2 hours and then remove from oven; uncover, stir and use pan juices to baste meat. Return brisket to oven and roast for about 1 hour more, uncovered, basting every 15 minutes.<br />
Remove pan from oven and let stand for 10 minutes before slicing into 1/4-inch thick pieces. Serve meat and vegetables with sauce spooned over top. Entire recipe makes 8 servings.</p>
<p>Serving size is 3oz of beef plus ¾ cup of vegetables and sauce<br />
Each serving = 5 Weight Watchers Points</p>

It makes a great appetizer recipe too, so try serving it at your next dinner party and impress your guests with it&#8217;s unique flavor combination. </p>

<h2><u>Weight Watchers Beef and Spinach Quesadillas Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/3 cup cooked lean ground beef<br />
- 3 tbsp taco sauce<br />
- 4 large burrito-size wheat flour tortillas<br />
- 4 oz blue cheese, crumbled<br />
- 10 oz chopped frozen spinach, thawed and squeezed dry<br />
- 1/2 cup sliced mushrooms<br />
- 1/2 tsp red pepper flakes<br />
- 1 tsp cumin<br />
- salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
In a small bowl, stir together beef and taco sauce.<br />
Lay two tortillas on a flat surface and divide beef mixture between them. Sprinkle each tortilla with half of cheese, cumin, mushrooms, spinach and red pepper flakes; top each with a remaining tortilla.<br />
Set a large, heavy nonstick skillet over medium-high heat. Place one quesadilla in skillet and cook until brown spots form on bottom of tortilla, about 3 to 4 minutes; flip and cook until brown spots form again, about 3 to 4 minutes. Remove quesadilla to a large cutting board and cover to keep warm; repeat with remaining quesadilla.<br />
Cut each quesadilla into 8 wedges and serve. </p>
<p>Serving size is 2 quesadilla wedges<br />
Each serving =  2 Weight Watchers Points</p>

But, I&#8217;ve created and found some AWESOME Weight Watchers Superbowl Recipes that are SOOOO good, all those football lovin&#8217; fans will never know that they they are eating healthy Superbowl snacks!  If you like the traditional Hot Dog Pigs in a Blanket Recipe, then this low calorie version will knock your socks off! It&#8217;s just as good as the high calorie wiener wraps, but these babies have just 1 Weight Watchers Point each!! So you can knock back a few and feel no guilt at all. Plus, they are super cute, fun little finger foods that are still manly enough for the big game! Enjoy!</p>

<h2><u>Cheesy Hot Dog Wraps Recipe</u></h2>
<p><strong>Ingredients: </strong><br />
- 4 Ball Park Fat Free Beef Franks (you can use the fat free turkey ones, if you prefer)<br />
- 2 low fat, low carb, high fiber Tortillas (I used<a href="http://www.latortillafactory.com/jadworks/ltf/jwsuite.nsf/ViewSelection/26D37C24E4814A3B8825723B006711A5?Open&#038;site=Home*ViewSelection=Products**dl"rel="nofollow"  target="_blank"> La Tortilla Factory</a>)<br />
- 2 slices of fat free American cheese</p>
<p>** Feel free to add in optional chopped onions, pickles sauerkraut or relish for no extra Points!</p>
<p><strong>Directions:</strong><br />
Grill up your hot dogs, broil them, boil them, nuke them, or cook them anyhow you&#8217;d like. I prefer grilling them, but any method is fine. Then, cut cheese slices and tortillas in half, so now you should have 4 tortilla pieces, and 4 cheese pieces. Place each cheese slice on top of each tortilla piece. Then, put in the hot dog and roll it up! Bake in oven for about 5 min at 325 degrees, until wrap starts to become golden brown. Makes 4 YUMMY servings.</p>

<p><strong>Directions:</strong><br />
Wrap cabbage leaves in plastic wrap or moist paper towels and microwave on HIGH for 2 minutes, until soft. Cut off the thickest, white portion of the spine of each leaf to make leaves pliable and easy to fold; set aside.<br />
Combine beef, rice, water, bread crumbs, carrot, onion, garlic, egg white, salt and pepper in a large bowl; mix well.<br />
Spoon about 1/4 cup of beef mixture onto center of each leaf. Fold up bottom of leaf to cover filling, tuck in sides and then continue rolling to make loose rolls (rice will expand during cooking so it is important not to roll them too tightly).<br />
Heat oil in a large stockpot over medium-high heat; add rolls and saute until golden brown on all sides, turning frequently, about 5 minutes. Add tomatoes and bring to a simmer. Reduce heat to low, cover and cook until cooked through, checking pot every 15 minutes and stirring to prevent sticking, about 1 hour. (If sauce thickens or reduces, add water.) Enjoy!</p>

<h2><u>Weight Watchers Herb Crusted Pot Roast Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 pounds lean whole beef ribs (Kosher beef if you are preparing for Hanukkah)<br />
- 1 1/2 tsp table salt<br />
- 1/2 tsp black pepper<br />
- 2 medium garlic cloves<br />
- 1/4 cup<br />
- Dijon mustard<br />
- 2 tbsp reduced-calorie mayonnaise<br />
- 1 1/2 tsp horseradish sauce<br />
- 1/4 cup parsley<br />
- 2 tbsp thyme<br />
- 2 tbsp dill</p>
<p><strong>Directions:</strong><br />
Preheat oven to 375°F. Season roast with salt and pepper.<br />
In a small bowl, combine garlic, mustard, mayonnaise and horseradish. In another small bowl, combine parsley, thyme, dill and 1 tablespoon of mustard mixture.<br />
Place meat, rib-bone down, in a roasting pan; coat top with remaining mustard mixture and cook meat until an instant-read thermometer inserted in center of roast registers 110°F. Coat roast with remaining mustard mixture and press herb mixture onto mustard with your hands.<br />
Continue cooking roast until a thermometer inserted in center of meat registers 140°F for medium, or longer until desired degree of done-ness. Cover loosely with foil and then let stand 20 to 30 minutes before carving into 12 thick slices. </p>

<p><strong>Ingredients:</strong><br />
1 pound ground turkey breast or extra lean ground beef<br />
1 large onion &#8212; finely chopped<br />
2 fresch garlic cloves, minced<br />
1 can (approx 15ox) black beans &#8212; rinsed and drained<br />
1 large can (approx 29 oz) diced tomatoes<br />
2 tbsp tomato paste<br />
2 cups water<br />
1 small green pepper diced<br />
1 small red pepper diced<br />
1 small yellow pepper diced<br />
7 oz diced green chilies<br />
1 tbs. chili powder<br />
1 tsp. ground cumin<br />
1 tsp. salt<br />
1 tsp black pepper</p>
<p><strong>Directions:</strong><br />
In nonstick skillet over medium heat, cook ground meat and garlic until meat is no longer pink; drain. Transfer meat to Crock Pot. Add remaining ingredients and stir until combined. Cook on &#8220;high&#8221; for 4 hours; remove lid and stir quickly halfway through. Enjoy!</p>

And don&#8217;t worry &#8212; it&#8217;s not a veggie burger or even a turkey burger &#8212; it&#8217;s a real, honest-to-goodness real beef hamburger! It&#8217;s the perfect Weight Watchers Fourth of July recipe to use if you are following the Weight Watchers plan, but still want to partake in all the holiday BBQ yumminess! This is definitely you&#8217;ll want to add to your 4th of July picnic&#8217;s menu!</p>

<h2><u>4th of July Hamburger Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
1 package of Wonder Light Hamburger Buns (8 buns in package)<br />
32 oz. extra lean ground beef (it should be around 140 calories for 4 oz)<br />
1/4 cup egg whites<br />
1 packet of dry ranch seasoning/salad mix<br />
4 minced garlic gloves<br />
1 tsp salt<br />
1/2 tsp pepper</p>
<p><strong>Directions:</strong><br />
In a large bowl, combine ground beef, egg whites, ranch seasoning mix, garlic, and salt and pepper together, until thoroughly blended.  Form meat into 8 flat and thin hamburger shaped patties. Barbecue on the grill until desired level of cooking is reaching. Place patty on bun and garnish. Enjoy!</p>
<p>*You can garnish your hamburger with any of the following and it will not affect the  Weight Watchers Points value: lettuce, tomato, onions, pickles, jalapeños, roasted peppers, or mushrooms.<br />

1 cup frozen whole kernel corn – thawed<br />
1 10 oz. can healthy Request Tomato Soup<br />
1/2 cup water<br />
1 tsp. dried parsley flakes<br />
1 can mushrooms<br />
Salt and Pepper</p>
<p><strong>Directions:</strong><br />
In large skillet brown meat, onion &#038; celery mixture and mushrooms. In slow cooker &#8211; sprayed with a butter flavored spray (or a non-stick cooking spray), combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.</p>

Plus, I always find it helpful to have soup on hand when I&#8217;m dieting because it&#8217;s a great thing to eat before a meal. It tends to fill you up so that you don&#8217;t over eat the main dish. This is a very good thing! So with this cabbage soup crock pot recipe, I&#8217;ll divide it up into its 4 Point portions and then freeze it. So whenever I&#8217;m hungry and have no patience to prepare a meal, I have quick access to a tasty soup that will help curb my appetite a bit. It&#8217;s a lifesaver. :)</p>

1 pound ground round<br />
3 1/2 cups water<br />
2 cups coarsely chopped green cabbage<br />
1 cup sliced carrot<br />
1/2 cup sliced celery<br />
1/2 cup chopped onion<br />
1/2 teaspoon dried dill<br />
1/2 teaspoon dried oregano<br />
1/2 teaspoon dried basil<br />
1/2 teaspoon pepper<br />
3 cans beef consommé &#8211; undiluted&#8211;10.5 ounces per can<br />
2 cans diced tomatoes &#8211; undrained&#8211;14.5 ounces per can<br />
1/2 cup uncooked converted rice<br />
salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
Brown meat in a nonstick skillet over medium-high heat; drain well. Place meat in a 4-quart electric slow cooker; stir in water and next 10 ingredients. Cover; cook on low-heat for 8 hours. Increase heat setting to high; stir in rice. Cover and cook an additional 30 minutes or until rice is<br />
