<h2><u>Weight Watchers Chicken Jambalaya Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 spray non fat cooking spray<br />
- 2 1/2 oz raw turkey sausage, chopped<br />
- 1 large onion, chopped<br />
- 1 medium celery, stalk, chopped<br />
- 1 small green pepper, chopped<br />
- 1/4 tsp cayenne pepper, or to taste<br />
- 1/2 tsp dried thyme<br />
- 1 tsp table salt<br />
- 1/2 tsp black pepper, ground<br />
- 2 medium garlic cloves, minced<br />
- 2 medium chicken breast, cooked, skinless, cubed (about 2 cups)<br />
- 28 oz canned tomatoes, whole, plum, peeled with juice<br />
- 2 cups fat-free chicken broth<br />
- 1 cup uncooked white rice, long-grain</p>
<p><strong>Directions:</strong><br />
Coat a large, nonstick saucepan with cooking spray. Over high heat, sauté sausage until crispy on edges. Add onion, celery and green pepper; sauté until tender.<br />
Reduce heat and stir in cayenne, thyme, salt, pepper and garlic; sauté until garlic is fragrant.<br />
Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and let cook until rice is tender, about 20 minutes.<br />
Flavor Booster: Popcorn rice, a specialty of Louisiana, is a delicious substitute for long-grain rice. The rice, which has a mild nutty taste like basmati rice, is available through gourmet food stores and Internet specialty shops</p>

<p>It&#8217;s just a few days away from Super Bowl Sunday, and I still have some great Weight Watchers Recipes that are manly enough for the boys to devour, but still easy on your diet! This Jalapeno Popper Recipe is really easy to make and taste so good that no one will have any idea they are eating a low calorie snack! These fabulous baked and battered little bacon wrapped jalapeno poppers are the perfect Super Bowl Recipe to share on game day. They are low on calories, but high in flavor and are sure to be a huge hit! There is such a nice variety of flavor layers in this recipe and they all coinside together perfectly. I&#8217;ve had the traditional fried jalapeno poppers before, but when I tried this baked version of bacon wrapped poppers, I thought I&#8217;d died and gone to heaven! Not only did it taste better than the fried, but it was waaaaay lower in fat and calories, so I could really enjoy them! With just 3 Weight Watchers Points per serving, this Bacon Wrapped Jalapeno Popper Recipe is a must have for your Super Bowl party menu!</p>

<h2><u>Weight Watchers Jalapeno Poppers Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 sprays non fat olive oil cooking spray<br />
- 2 oz light cream cheese<br />
- 1/2 cup low-fat shredded cheddar cheese<br />
- 1 tbsp fat-free mayonnaise<br />
- 8 small jalapeno peppers<br />
- 1/4 cup fat-free egg substitute<br />
- 1 cup Fiber One Cereal (ground to breadcrumb like consistency)<br />
- 1 tsp Kosher salt<br />
- 1/2 tsp pepper<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
-  16 slices <a href="http://www.jennieo.com/products/BreakfastMeats/ExtraLeanTurkeyBacon.aspx"rel="nofollow" target="_blank" >Jennie-O Extra Lean Turkey Bacon</a></p>
<p><strong>Directions:</strong><br />
Preheat oven to 350ºF. Coat a large baking sheet with cooking spray.<br />
In a medium bowl, combine cream cheese, cheddar cheese and mayonnaise; mix well and set aside. Halve jalapenos lengthwise and remove seeds. (Oil and seeds from the peppers can be irritating — wear gloves or put plastic bags over your hands. And don’t rub your eyes.) Stuff jalapeno halves with cream cheese mixture.<br />
Place egg substitute in a shallow dish. Place Fiber One crumbs in a separate shallow dish, and mix in salt, pepper, garlic powder, and onion powder. Dip stuffed jalapeno halves into egg substitute and then roll in Fiber One crumbs to coat. Then wrap one slice of bacon around popper, similar to how it appears in this photo: </p>

Bake until filling is bubbly, about 30 minutes. Serve hot. Recipe makes 16 Bacon Wrapped Jalapeno Poppers.</p>

<h2><u>Weight Watchers Buffalo Chicken Wings Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 spray olive oil cooking spray, or enough to coat sheet<br />
- 12 oz uncooked skinless chicken wings<br />
- 1 1/4 oz Old El Paso Taco Seasoning Mix, or similar product<br />
- 1 cup Frank’s Red Hot Sauce<br />
- 1/2 cup fat-free sour cream<br />
- 2 tbsp blue cheese, or gorgonzola, crumbled<br />
- 2 tbsp fat-free skim milk<br />
- 4 medium stalks celery, cut into 2-inch pieces</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.<br />
Dip wings in Frank’s Red Hot Sauce. Then, place chicken wings in a zip-close plastic bag, add taco seasoning, seal bag and shake to coat. Transfer wings to prepared baking sheet and bake until cooked through, about 18 to 20 minutes.<br />
Meanwhile, to prepare dip, whisk together sour cream, cheese and milk.<br />
Serve wings with dip and celery on the side. Recipe makes 4 servings. </p>
<p>Serving size is 3 wings, 3 tablespoons of dip and 1 celery stalk<br />

<p>Since the Fourth of July is coming up in just a few days, and just about everyone I know will be going to some kind of cookout, barbecue or picnic. I thought I&#8217;d share a few awesome, healthy, low calorie recipes that are easy to make and perfect for that 4th of July BBQ! So I&#8217;ve decided to devote this week&#8217;s posts entirely to yummy, yet low in Point Value, Fourth of July barbecue recipes! <p>My first 4th of July recipe is for the amazingly delicious Weight Watcher Cajun Chicken Wraps. With just a 3 Weight Watcher Point Value per serving, these babies are not only diet friendly, but they are SO good and so easy to share, making them a perfect Fourth of July picnic treat!<br />

<h2><u>Weight Watcher Cajun Chicken Wrap Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
3/4 pound uncooked boneless, skinless chicken breast, cut into strips3 Tbsp Cajun seasoning<br />
4 medium tortillas, flour, fat-free<br />
1 Tbsp all-purpose flour<br />
1/2 small onion(s), red, thinly sliced<br />
1 tsp paprika<br />
2 cup mixed baby greens<br />
3 tbsp Cajun seasoning<br />
1/2 tsp Cajun seasoning<br />
8 medium basil, leaves<br />
1 1/2 tsp fresh lemon juice<br />
4 tsp fat-free mayonnaise<br />
1 small tomato cut into strips<br />
salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. On each tortilla, spread 1 teaspoon dressing, add greens, onion slices, two basil leaves and some slices of tomatoes. Top with chicken pieces and wrap. Enjoy!<br />

<p>This sausage and chicken recipes is one of my fiancé’s all time favorites. And I like cooking it because it’s an easy recipe to prepare. Not to mention it’s delicious and a big serving is only 6 Weight Watchers POINTS! Gumbo, which is a local version of French bouillabaisse, has graced every proud Louisianan table at one time or another. And this lightened up version is just as tasty as the traditional delicacy of the bayou.</p>
<p><u>TIP:</u> This homemade gumbo recipe can be prepared with fresh vegetables for a slightly more crunchy texture.</p>

<h2><u>Sausage and Chicken Gumbo Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
6 oz uncooked boneless, skinless chicken breast, cut into 1-inch cubes<br />
6 oz sausage, spicy (chicken, turkey or pork), cut into 1-inch cubes<br />
2 sprays olive oil cooking spray<br />
1 Tbsp all-purpose flour<br />
10 oz frozen gumbo-style vegetables, (corn, pepper, okra and onion)<br />
1 medium garlic clove(s), minced<br />
1 cup canned crushed tomatoes<br />
1 cup canned chicken broth<br />
1 tablespoon of Cajun seasoning<br />
¼ cup of fresh parsley<br />
1 piece bay leaf<br />
1/8 tsp table salt<br />
1 tablespoon of Worcestershire sauce<br />
1/4 tsp dried thyme<br />
1 medium scallion(s), green part only, chopped<br />
1/8 tsp black pepper<br />
Hot sauce as desired</p>
<p><strong>Directions:</strong><br />
Start by coating a Dutch oven with cooking spray. Add the chicken and sausage and stir constantly, until lightly browned; approximately 2 minutes.<br />
Mix in garlic and vegetables. Sauté until vegetables are thawed (if you are using frozen), or slightly tender if you are using fresh vegetables); about 5 minutes.<br />
Next, sprinkle the mixture with flour and let cook for1 minute. Stir in chicken broth and make sure to scrape up any browned bits in bottom of Dutch oven.<br />
Add in the crushed tomatoes, salt and pepper, thyme and bay leaf, thyme, parsley, Cajun seasoning and Worcestershire sauce; simmer for 5 minutes. Remove bay leaf. Divide evenly into 4 bowls, sprinkle with scallions and serve.</p>
<p>Each serving has about 1 1/4 cups of the sausage and chicken gumbo recipe.</p>
