<p>Full of fiber and flavor, this tasty black bean dip recipe is incredibly filling. Serve it as a dip with fresh veggies, baked pita chips, or baked tortilla chips as a delicious and healthy appetizer recipe. I also used this dip as a sandwich spread on a turkey breast sandwich. Deeelish! This is really such an easy dip recipe, you can make it in no time, so it&#8217;s a great snack idea if you need to whip up something healthy &#8211; fast! Also, I am obsessed with spicy foods, so if you don&#8217;t like things as hot as I do, just take out the jalapenos in this recipe. :) Though this is not an official one of Weight Watchers Dip Recipes, it&#8217;s 1 Point Total servings, make it an ideal dip for any dieter.</p>

<h2><u>Spicy Black Bean Dip Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 15 oz can of black beans, rinsed and drained<br />
- 1/2 cup fresh cilantro, roughly chopped<br />
- 1/4 cup red onion, chopped<br />
- 1/4 cup shredded carrots<br />
- 3/4 cup fresh pico de gallo or chunky salsa<br />
- 1 tbsp fresh lime juice<br />
- 1 tbsp fresh jalapenos, de-seeded and roughly chopped<br />
- 1/2 cup plain, fat-free yogurt<br />
- 1 tsp ground cumin<br />
- 1/2 tsp paprika<br />
- 1/2 tsp salt<br />
- 1/4 tsp black pepper</p>
<p><strong>Directions:</strong><br />
Blend all ingredients in a blender or food processor blend until chunky or smooth (depending on which consistency you prefer) Spoon into a serving bowl and garnish with cilantro. </p>
<p>Entire Recipe makes 8 servings<br />

<p>I&#8217;m always on the lookout for healthy and unique salad recipes that are quick and easy to make, taste delish and are low in Weight Watchers Points. This Corn and Black Bean Salad Recipe was a HUGE hit at our family dinner the other night, and has just a 2 Point Total per serving. The kids loved the colors of this corn salad, and my 15 month old loved being able to easily eat it with his fingers. It&#8217;s full of fiber and low on calories, fat and tastes amazing! It&#8217;s a wonderful side dish recipe that can accompany many different meals. Though this is not an official one of Weight Watchers Recipes, it&#8217;s a must try for any dieter looking for new healthy salad recipes that taste great. Give it a try!</p>

<h2><u>Black Bean and Corn Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 16oz bag of frozen corn<br />
- 1 cup black beans<br />
- 1 large tomato, chopped<br />
- 1/2 of a red onion, finely chopped<br />
- 1 tbsp fresh cilantro, minced<br />
- juice from 1 lime<br />
- salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
Defrost corn. Toss all items together in a medium sized bowl, and add salt &#038; pepper as needed</p>
<p>Entire Recipe = 5 servings<br />
Serving size is approximately 1 cup<br />

<p class="summary">Tostada Salads have always been a favorite Mexican food of mine. There&#8217;s just something about that crunchy shell that I adore! However, in traditional tostada salad recipes, the shell is fried, thus adding tons of fat, calories and weight watchers points. My slimmed down version has just a 7 Point Total, (for the entire dish) and still offers that yummy, crunchy shell &#8211; but baked, not fried. Plus, it&#8217;s loaded with fiber! And the best part, is that is still has all the delicious flavors of the ground beef tostada salad that you would buy from your favorite Mexican restaurant. Though this is not an official one of Weight Watchers Salad Recipes, it&#8217;s a fabulous meal idea for any one who wants a low calorie Mexican recipe!</p>

<h4>Ingredients:</h4>

<li class="ingredient"><span class="name">1 La Tortilla Factory Smart &#038; Delicious 100 Calorie Tortilla</span></li>
<li class="ingredient"><span class="name">4 oz extra lean ground beef</span></li>
<li class="ingredient"><span class="name">2 tbsp black beans</span></li>
<li class="ingredient"><span class="name">1/2 packet taco seasoning mix</span></li>
<li class="ingredient"><span class="name">1 cup shredded Romaine lettuce</span></li>
<li class="ingredient"><span class="name">1/4 cup <a href="http://www.laaloosh.com/2009/05/28/pico-de-gallo-recipe/">0 Point Pico de Gallo</a></span></li>
<li class="ingredient"><span class="name">1 tbsp reduced fat sour cream</span></li>
<li class="ingredient"><span class="name">a few sliced jalapenos (optional)</span></li>
</ul>
<h4>Directions:</h4>
<div class="instructions">Preheat oven to 400 degrees. To make your tostada shell, use a small, round, oven safe baking bowl or tin. Lightly spray with non-fat cooking spray and place your tortilla over the tin. Lightly spray the tortilla with the non fat cooking spray, and place an oven safe bowl over the tortilla and the baking tin. It should be covered just enough so that the bottom edges of the tortilla are exposed. Bake in the oven for 10 minutes, which should be just enough time to get the tortilla to mold to the baking tin. Now remove the oven safe bowl, and place the tortillas back in the oven for approximately 10 more minutes, or until the shell is hard, but not burned. Remove shell from oven, and take off of the baking tin and set aside.

<p>In a medium sized frying pan, brown your ground beef and mix in the taco seasoning and black beans. Now fill your tostada shell with the lettuce and top with the ground beef. Next, add on your pico de gallo, sour cream and jalapeno slice.</p></div>

- 1 medium Hass avocado<br />
- 4 oz lump crab meat<br />
- 1 tbsp chopped red tomato<br />
- 2 tbsp chopped red onion<br />
- 1 lime, juice of<br />
- 1 tbsp chopped cilantro<br />
- 1 tsp olive oil<br />
- salt and pepper to taste</p>
<p>NOTE: For added heat and spice, try adding in 1 tsp finely chopped jalapeno peppers! Or add a little variety by adding 1 tbsp of pear or papaya for a sweeter, fresher taste.</p>
<p><strong>Directions:</strong><br />
In a medium bowl, combine onion, tomato, lime juice, olive oil, cilantro salt and pepper. Add crab meat and toss well.<br />
Cut avocado open, remove pit and spoon out avocado. Cut into large chunks and add to crab. Mix carefully, not to mash the avocado. Spoon back into avocado shells and enjoy!</p>

Actually, I&#8217;ve just been so busy hunting down yummy and new Weight Watchers Recipes for you all!! :) But, I hope you&#8217;ll forgive me when I tell you about today&#8217;s Fabulous Food Find! I have uncovered a tasty, low calorie tortilla chip that comes in 8 varieties and is so incredibly yummy that it can be eaten by itself or dipped into salsa, guacamole or any other dip. Each serving of these rockin&#8217;, low calorie tortilla chips have just 2 Weight Watchers Points. And all 8 flavors have just 125 calories or less, 2-3 grams of fat and 2 grams of fiber! They make a fantastic party snack &#8211; even for those not watching their weight, because they are THAT good. So, what are these fabulous tortilla chips, you ask? You can get them in: Yellow Corn, Blue Corn, Chipotle, Chili Verde, Chili Lime, Mucho Nacho, Black Bean, and Unsalted Yellow Corn. With just the right amount of heat and tang, this Weight Watchers Spinach and Beef Quesadilla Recipe is sure to be a hit with your Super Bowl party or any other fun get together! It makes a great appetizer recipe too, so try serving it at your next dinner party and impress your guests with it&#8217;s unique flavor combination. </p>

<h2><u>Weight Watchers Beef and Spinach Quesadillas Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/3 cup cooked lean ground beef<br />
- 3 tbsp taco sauce<br />
- 4 large burrito-size wheat flour tortillas<br />
- 4 oz blue cheese, crumbled<br />
- 10 oz chopped frozen spinach, thawed and squeezed dry<br />
- 1/2 cup sliced mushrooms<br />
- 1/2 tsp red pepper flakes<br />
- 1 tsp cumin<br />
- salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
In a small bowl, stir together beef and taco sauce.<br />
Lay two tortillas on a flat surface and divide beef mixture between them. Sprinkle each tortilla with half of cheese, cumin, mushrooms, spinach and red pepper flakes; top each with a remaining tortilla.<br />
Set a large, heavy nonstick skillet over medium-high heat. Place one quesadilla in skillet and cook until brown spots form on bottom of tortilla, about 3 to 4 minutes; flip and cook until brown spots form again, about 3 to 4 minutes. Remove quesadilla to a large cutting board and cover to keep warm; repeat with remaining quesadilla.<br />
Cut each quesadilla into 8 wedges and serve. </p>
<p>Serving size is 2 quesadilla wedges<br />
Each serving =  2 Weight Watchers Points</p>

<p>A great alternative to traditional chili recipes, this Weight Watchers Turkey Chili Recipe has a wonderfully unique taste that even the most pickiest eater will enjoy! I first learned of this recipe through my good friend, and fellow Weight Watcher, Janice, who is the writer of the fabulous blog, <a href="http://www.sewgirlyalterations.com" rel="nofollow" target="_blank" >Sew Girly</a>. She prepares this white bean chili recipe frequently and after hearing about how fabulous it is, I decided to try it myself, and I was blown away! It is such a nice change of pace from the typical chili recipe! This White Bean Chili also makes a fabulous Weight Watchers Crock Pot Recipe and it makes great leftovers so it tastes even better the next day for lunch! I prefer to prepare this as a crock pot recipe, and then divide the whole thing up into individual portions and freeze them so I can reheat it in a pinch for a quick and easy meal. With just 4 Weight Watchers Points per serving, and TONS of fiber and protein, this dish also makes a fantastic Momentum Plan Recipe. Each serving is really quite large so it will fill you up and won&#8217;t be hungry. And there&#8217;s nothing better than feeling full when you are dieting!! So if you are following the Weight Watchers Momentum Plan, or if you are just looking to expand your collection of yummy chili recipes, you are gonna want to give this white bean turkey chili a try, ASAP!</p>

<h2><u>Weight Watchers White Bean Turkey Chili Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 large onion, chopped<br />
- 5 cloves garlic, minced<br />
- 1 pound extra lean ground turkey (SHOULD BE ABOUT 120 CALORIES PER 4 OZ)<br />
- 2 (4 ounce) cans canned green chile peppers, chopped<br />
- 1 tablespoon ground cumin<br />
- 1 tablespoon dried oregano<br />
- 1 tablespoon finely chopped fresh cilantro<br />
- 1 teaspoon ground cinnamon<br />
- Kosher salt to taste<br />
- ground cayenne pepper to taste<br />
- ground white pepper to taste<br />
- 2 (15 ounce) cans cannellini beans, drained and rinsed<br />
- 1/2 cup fat free Half &#038; Half<br />
- 2 – 3 cups fat free chicken broth (add as needed if chili is too thick)<br />
- 1/2 cup reduced fat, shredded Monterey Jack cheese<br />
- 1/2 cup green onions</p>
<p>**OPTIONAL: Top with 1 tbsp of reduced fat sour cream (will not affect overall Points value)<br />
*Note: The White Bean Chili in the picture shows some pomegranate seeds and celery on top of the sour cream for garnish, which is a nice idea! But I used the reduced fat cheese and green onions instead.</p>
<p><strong>Directions:</strong><br />
In a large pot over medium heat, or in a crock pot on medium, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, salt, cayenne pepper, and white pepper to taste and saute for 5 more minutes.<br />
Add one can of the beans and the chicken broth to the pot. Take the second can of beans and puree them in a blender or food processor. Add this to the pot along with the Half and Half. Stir well and simmer for 10 minutes. If you are using this as a crock pot recipe, let simmer on low heat for about 2-4 hrs. Top each serving with 1/8 cup of reduced fat shredded Monterey Jack cheese, green onions, and 1 tbsp of reduced fat sour cream (optional). Recipe makes 4 HUGE servings.</p>
<p>Serving size is about 2 cups<br />
Each serving = 4 Weight Watchers Points</p>

Now, even though guacamole is really nutritious, given that the main ingredient is the nutrient rich avocado, it&#8217;s still loaded with calories and fat (even though that&#8217;s the healthy, monounsaturated fat), making it higher in Weight Watchers Points than most all other fruits. So, how&#8217;s a Weight Watcher supposed to get her guacamole fix without breaking her Points bank? By trying this amazing, Low Calorie Guacamole Recipe of course! The key to rockin&#8217; this much loved dip recipe is to find ways to bulk it up with other low calorie ingredients, and (and don&#8217;t get scared reading this part) to substitute some of the avocado quantity with peas. It may sound odd, but you really can&#8217;t tell! And of course, you will still use some avocado in it, but by adding in some low Point peas, we are able to add quantity and volume without adding a lot more calories and therefore keeping the Points value low. This guacamole dip recipe is perfectly delicious when served with some baked tortilla chips or veggies for dipping. <h2><u>Weight Watchers Guacamole Recipe </u></h2>
<p><strong>Ingredients:</strong><br />
- 1 medium avocado, ripe, peeled and pitted<br />
- 1 15-oz. can young peas, drained and rinsed<br />
- 1/4 cup chopped tomatillos<br />
- 1/4 cup finely chopped red onions<br />
- 1/3 cup chopped tomatoes<br />
- 1/4 cup Labane Yogurt Cheese* or fat-free plain Greek yogurt<br />
- 2 tbsp lime juice<br />
- 4 cloves chopped garlic<br />
- 1 tsp cumin<br />
- 2 tbsp chopped cilantro<br />
- Kosher salt and pepper to taste</p>
<p>*Labane Cheese can be found at most Kosher Grocery Stores</p>
<p><strong>Directions:</strong><br />
Put peas in a medium bowl and mash with a fork until almost smooth. Add in avocado and mash that into the peas until smooth.</p>
<p>Add remaining ingredients and stir until combined. Cover surface with plastic wrap and refrigerate up to 1 day. Makes 6 servings.</p>
<p>Serving size is 1/3 cup.<br />
Each serving = 1 Weight Watchers Point</p>

- 1 cup fat-free sour cream<br />
- 2 tbsp reduced-sodium taco seasoning<br />
- 1 tsp Kosher Salt<br />
- 1/2 tsp pepper<br />
- 9 oz fat-free bean dip, about 1 heaping cup<br />
- 6 oz guacamole, about 3/4 cup<br />
- 1/4 cup low-fat shredded cheddar cheese<br />
- 4 medium scallions, chopped<br />
- 1 large tomato, chopped<br />
- 1/2 cup chopped red onion<br />
- 3 small tomatillos, finely chopped<br />
- 6 medium olives, black, sliced<br />
- 2 tbsp fresh cilantro, finely chopped</p>
<p>* Top this killer Mexican Bean Dip Recipe with some sliced jalapenos for an added kick!</p>
<p><strong>Directions:</strong><br />
Combine sour cream and taco seasoning; mix well. In a large bowl, combine, tomatoes, tomatillos, red onions, cilantro, salt and pepper.<br />
In a separate 12-inch round glass serving bowl, spread bean dip on bottom. Top with guacamole, sour cream, tomato mixture, cheese, scallions, and olives. </p>
