<p>I was so excited to try out this casserole recipe when I first found it. I&#8217;ve just always been a fan of casseroles, and I thought this Weight Watchers Casserole Recipe, I thought it looked really unique and delicious. So I cooked this for dinner a couple of weeks ago and it was fabulous!  Creamy and tasty and so full of different flavors and textures, this Weight Watchers Corn Casserole Recipe is getting added to my list of favorite casserole recipes immediately! For just 3 Weight Watchers Points per serving, this corn casserole makes an excellent side dish recipe for any family meal, and is a great dish to take to a potluck dinner as well! If you are looking for a new casserole recipe to try out that not only tastes fantastic, but is low in calories and Points, this is the one to try! It&#8217;s a dish the whole family will love and it will keep you on track with your Weight Watcher Plan!</p>

<h2><u>Weight Watchers Corn Casserole Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 sprays cooking spray, divided<br />
- 1 slice bacon, uncooked, finely diced<br />
- 2/3 cup onions, diced<br />
- 2/3 cup sweet red peppers, diced<br />
- 1 tbsp all-purpose flour<br />
- 14 3/4 oz canned cream-style white corn<br />
- 3 medium corn on the cob, kernels removed* (about 1 3/4 cups)<br />
- 1/4 cup fat-free egg substitute<br />
- 3/4 cup low-fat Swiss cheese, shredded<br />
- 1/4 tsp table salt<br />
- 1/8 tsp black pepper, freshly ground<br />
- 3/4 cup seasoned croutons, whole-grain, coarsely crushed</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F. Coat a 2-quart shallow baking dish with nonstick spray.<br />
Cook bacon in a medium nonstick skillet over medium-low heat until crisp, about 5 minutes. Drain on paper towels and set aside. Pour off and discard drippings from skillet.<br />
Add onion to skillet. Reduce heat and cook, stirring occasionally, until softened, about 4 minutes. Add red pepper and cook, stirring occasionally, until vegetables are tender, about 6 to 8 minutes. Add flour and cook, stirring constantly, about 1 minute.<br />
Transfer vegetables to a large bowl and let cool 5 minutes. Stir in bacon, canned corn, fresh corn, egg substitute, cheese, salt and ground pepper. Spread corn mixture in baking dish. Top evenly with croutons and lightly spray croutons with cooking spray. Cover with foil and bake 30 minutes. Uncover and bake until top is golden and center is set, about 15 minutes more. Let stand 10 minutes before serving. </p>
<p>Serving size is 1/2 cup<br />
Each serving = 3 Weight Watchers Points</p>

<h2><u>Hamburger Casserole Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
16 oz. extra lean gr. beef (or turkey)<br />
2 cups sliced raw potatoes<br />
1 1/2 cups sliced carrots (I used frozen)<br />
1 cup chopped celery<br />
1/2 cup chopped onion<br />
1 cup frozen peas –thawed<br />
1 cup frozen whole kernel corn – thawed<br />
1 10 oz. can healthy Request Tomato Soup<br />
1/2 cup water<br />
1 tsp. dried parsley flakes<br />
1 can mushrooms<br />
Salt and Pepper</p>
<p><strong>Directions:</strong><br />
In large skillet brown meat, onion &#038; celery mixture and mushrooms. In slow cooker &#8211; sprayed with a butter flavored spray (or a non-stick cooking spray), combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.</p>
<p>Serving = 1 cup<br />
Each serving = 5 Weight Watchers Points</p>

<p>Alpine Chicken is Chicken slow cooked with ham or Canadian bacon, cheese, noodles, and seasonings. It’s a rich, hearty, southern dish that can typically be pretty fattening. But I came across this fantastic recipe that manages to still deliver all “YUM factor”, but with a lot less calories and fat! This dish is a must-do!<br />

<h2><u>Alpine Chicken Casserole Recipe</u></h2>
<p>2 teaspoons chicken bouillon granules<br />
1 tablespoon chopped fresh parsley<br />
3/4 teaspoon poultry seasoning<br />
4 ounces diced Canadian bacon<br />
2 carrots &#8212; thinly sliced, &#8212; (up to 3)<br />
1 rib celery &#8212; thinly sliced, &#8212; (up to 2)<br />
1 small onion &#8212; thinly sliced<br />
1/4 cup water<br />
6 Chicken breast halves, boneless skinless<br />
1 can low-fat condensed cheddar cheese soup &#8212; (11 oz.)<br />
1 tablespoon all purpose flour<br />
2 tablespoons sliced pimento<br />
2 tablespoons grated parmesan cheese<br />
1 package wide egg noodles &#8212; cooked, drained (16 &#8212; oz.) Don’t forget to add pts. for noodles.</p>
<p>In a small bowl, mix bouillon granules, chopped parsley, and poultry seasoning; set aside.  Layer in a slow cooker, in order. Canadian bacon, carrots, celery and onion. Add water.  Remove skin, if desired, and excess fat from chicken; rinse and pat dry. Place meat in slow cooker. Sprinkle with half of the reserved seasoning mixture. Top with remaining chicken and sprinkle with remaining seasoning mixture. Stir soup and flour together; spoon over top. DO NOT STIR.</p>
<p>Cover and cook on high for 3 to 3 1/2 hours or on low for 6-8 hours or until chicken is tender and juices from chicken run clean and vegetables are tender.  Spread cooked noodles in a shallow 2 or 2 1/2 quart broiler proof serving dish. Arrange chicken on noodles. Stir soup mixture and vegetables until combined. Spoon vegetables and some of the liquid over chicken. Sprinkle with pimento and Parmesan cheese. 6. Broil 6 inches from heat source for 6-8 minutes or until lightly browned.</p>
