/> - 4, 4oz boneless, skinless chicken breasts<br
/> - 4 slices of low fat ham lunch-meat, any brand<br
/> - 4 slices reduced fat Swiss cheese<br
/> - 2 wedges of Laughing Cow Light Blue Cheese<br
/> - 1/4 cup honey mustard<br
/> - 1 tbsp white wine<br
/> - 1/2 cup regular Fiber One Cereal<br
/> - 1 tbsp granulated onion powder<br
/> - 1 tsp dried parsley<br
/> - 1 tbsp garlic powder<br
/> - 1/2 tsp paprika<br
/> - 1 tsp salt<br
/> - 1/2 tsp black ground pepper</p><p><strong>Directions:</strong><br
/> Preheat oven to 400°F. Coat a baking sheet with non stick, non fat cooking spray.<br
/> Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Spread ½ of a Laughing Cow Light Blue Cheese wedge onto each chicken breast. Then, top with 1 slice of ham and 1 slice of Swiss cheese.<br
/> Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends and secure with toothpicks.<br
/> In a food processor or blender, process the Fiber One Cereal until it becomes a breadcrumb like consistently. Combine the cereal mix into a small bowl with onion powder, parsley, garlic powder, paprika, salt and pepper.<br
/> In a separate bowl, mix honey mustard and white wine. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.<br

/> - 4 (8 oz) chicken breast halves, sliced in half<br
/> - 1/4 cup seasoned breadcrumbs<br
/> - ½ cup Fiber One cereal, ground into fine, breadcrumb-like consistency<br
/> - 1/4 cup grated Parmesan cheese<br
/> - 2 tbsp low calorie butter, melted (I like Brummel &#038; Brown Spread)<br
/> - 3/4 cup reduced fat mozzarella cheese<br
/> - 1 cup marinara<br
/> - Non-fat cooking spray</p><p><strong>Directions:</strong><br
/> Preheat oven to 450°. Spray a large baking sheet lightly with spray.<br
/> Combine breadcrumbs, Fiber One, and Parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken. Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes. The trick is just learning how to prepare a healthier, lower calorie version that ends up being lower in Weight Watcher Points. One of my readers requested a delicious Weight Watchers Fried Chicken Recipe, and after looking around and experimenting a bit in the kitchen, I have finally found this super crispy and yummy Southern Style Oven Fried Chicken Recipe that&#8217;ll knock your socks off! The crust is so deliciously yummy and savory and the chicken is so tender and juicy, no one will suspect that this is actually a low calorie fried chicken recipe! By making a few adjustments in the traditional fried chicken recipes, I was able to take this American favorite and turn it from an average of 11 Weight Watchers Points per serving to just 4 Weight Watcher Points, simply by eliminating the chicken skin and the oil &#8211; and this chicken is SO good, you won&#8217;t miss &#8216;em! The chicken is actually &#8220;oven-fried&#8221;, so that will save you a TON of calories, but without sacrificing the taste. And I&#8217;ve added a few tricks into the recipe to still make you feel like you are eating a &#8220;bad&#8221; food, so you can enjoy it :). /> - 3 oz buttermilk<br
/> - 1/2 cup cornflake crumbs, crushed finely<br
/> - 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces*</p><p>* You can use chicken wings and drumsticks with this recipe as well, just make sure to remove the skin</p><p><strong>Directions:</strong><br
/> Preheat oven to 365ºF. Lightly coat an 8 X 8 X 2-inch baking dish with the butter flavored nonstick, non-fat cooking spray; set aside.<br

/> 8 oz skinless, boneless chicken breast<br
/> 1/2 cup egg whites or egg alternative<br
/> 1 cup original Fiber One Cereal<br
/> 2 tsp salt<br
/> 1 tbsp garlic powder<br
/> 1 tbsp onion powder<br
/> 1 tsp paprika<br
/> 1/2 tsp black pepper<br
/> 1 cup and 2 tbsp Frank&#8217;s Red Hot Sauce<br
/> 1 tbsp light butter (I used <a
rel="nofollow" href="http://www.thedailyplate.com/nutrition-calories/food/balade/light-butter">Balade Light Butter</a>)</p><p><strong>Directions:</strong><br
/> Preheat oven to 400 degrees, and spray a baking sheet with nonstick cooking spray. Wash and cut chicken breasts into strips that are approximately 1 1/2 inches wide (should be about 6 strips total). Set aside.<br
/> In a food processor, combine cereal, salt, garlic powder, onion powder, paprika and pepper and pulverize to a fine powder or breadcrumb like consistency. Pour mixture into a shallow bowl or onto a small plate. Set aside.<br
/> In a small saucepan, melt butter and then add in 1 cup of the hot sauce. Mix well and warm until heated, but not bubbling or boiling. Pour into a small, shallow bowl, and set aside.<br
/> In a small bowl, mix egg whites (or egg alternative) with the 2 tbsp or remaining hot sauce. Now take each chicken strip, and coat with egg and hot sauce mixture. Shake off all excess egg from the meat. Next coat chicken in cereal mix until strip is fully breaded. Lay strip on baking sheet. Repeat until all pieces of chicken are breaded and on the baking sheet. Now, with a brush or spoon, drizzle about 3/4 hot sauce and butter mixture over all the chicken pieces. Make sure to coat well.<br
/> Bake chicken at 400 degrees until breading becomes crispy and chicken is cooked through (approximately 15-20 minutes). Serve with remaining hot sauce mixture for dipping. YUM!!!!!</p><p>Entire recipe makes 2 servings<br

/> 1/2 cup dried bread crumbs<br
/> 1 1/2 cup canned tomato sauce<br
/> 1/2 cup part-skim mozzarella cheese, shredded<br
/> 1 Tbsp grated Parmesan cheese</p><p><strong>Directions:</strong><br
/> First, preheat the oven to 350ºF. Spray an 8-inch square pan with light cooking spray.<br
/> In a small, shallow bowl place the egg whites. In another shallow bowl, mix the bread crumbs with salt and Italian seasoning and salt. Place the chicken in egg whites and coat each breast evenly. Then put the chicken in bread crumb mixture and evenly coat.<br
