<p>I&#8217;m on big salad kick lately. Maybe it&#8217;s because it&#8217;s so hot out, I just don&#8217;t feel like eating anything else. Or maybe it&#8217;s because I&#8217;ve found such awesome low calorie salad recipes lately that I actually ENJOY eating it! Either way, I&#8217;m all about the greens. And I&#8217;ve recently come across this amazingly good low calorie Cobb Salad Recipe. Each serving has just a 5 Point Total, which is a phenomenal count, considering that a traditional cobb salad recipe can clock in at well over 20 Weight Watchers Points per serving&#8230;SCARY! So this lighter version is a real treat. And it still has all of the yummy goodness that makes a cobb salad tasty! Bacon, blue cheese, egg&#8230;mmmmm! If you love cobb salads, then this low calorie recipe is a MUST try!</p>

<h2><u>Light Cobb Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/2 head of romaine, coarsely chopped<br />
- 1 cucumber, chopped or sliced into small pieces<br />
- 1/2 head of Boston lettuce (or Iceberg), coarsely chopped<br />
- 2 hard-boiled large eggs, separated, whites and yolks finely chopped<br />
- 5 slices of extra lean turkey bacon, cooked and crumbled<br />
- 1 ripe avocado, cut into small pieces<br />
- 6 oz chicken breast, cooked and diced<br />
- 2 tomatoes, finely chopped<br />
- 1/2 cup blue cheese</p>
<p>Dressing<br />
- 1/3 cup red-wine vinegar<br />
- 2/3 cup olive oil<br />
- 1 tbsp Dijon mustard<br />
- 1 tsp lemon juice<br />
- 1 small clove garlic, crushed<br />
- Salt and pepper</p>
<p><strong>Directions:</strong><br />
Combine chopped lettuce in a large salad bowl.<br />
Arrange the chicken, bacon, tomato, egg and avocado over the greens.<br />
Whisk vinegar, mustard, lemon juice, garlic, salt and pepper. Add the oil in a slow stream, whisking until it is emulsified. Serve separately.</p>

<p>Ok, I know it&#8217;s been a while since I&#8217;ve last posted, so pleeeeease forgive my delay on posting new healthy recipes that are low calorie and yummy. I&#8217;ve been pre-occupied launching my new business, Pretty Paper Invitations, offering <a href="http://www.prettypaperinvitations.com" rel="nofollow" >DIY wedding invitations</a>. Not food related, but I&#8217;m super excited about it!<br />
Anyway, on to today&#8217;s delicious low calorie Chicken Parmesan recipe. This tasty dish has a Point Total of just 5, so it&#8217;s the perfect healthy dinner recipe that won&#8217;t use up all your Weight Watchers Points! It&#8217;s loaded with protein and fiber, so aside from being low calorie, it&#8217;s got some great healthy benefits too. And I love that this Baked Chicken Parmesan Recipe is so super easy to prepare. It&#8217;s simple, yet low calorie and delicious. If you love traditional Italian recipes, but are petrified of their fat and calorie content, give this version a try!</p>

<h2><u>Baked Chicken Parmesan Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 (8 oz) chicken breast halves, sliced in half<br />
- 1/4 cup seasoned breadcrumbs<br />
- ½ cup Fiber One cereal, ground into fine, breadcrumb-like consistency<br />
- 1/4 cup grated Parmesan cheese<br />
- 2 tbsp low calorie butter, melted (I like Brummel &#038; Brown Spread)<br />
- 3/4 cup reduced fat mozzarella cheese<br />
- 1 cup marinara<br />
- Non-fat cooking spray</p>
<p><strong>Directions:</strong><br />
Preheat oven to 450°. Spray a large baking sheet lightly with spray.<br />
Combine breadcrumbs, Fiber One, and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken. Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted. Enjoy!</p>

- 1 medium celery, stalk, chopped<br />
- 1 small green pepper, chopped<br />
- 1/4 tsp cayenne pepper, or to taste<br />
- 1/2 tsp dried thyme<br />
- 1 tsp table salt<br />
- 1/2 tsp black pepper, ground<br />
- 2 medium garlic cloves, minced<br />
- 2 medium chicken breast, cooked, skinless, cubed (about 2 cups)<br />
- 28 oz canned tomatoes, whole, plum, peeled with juice<br />
- 2 cups fat-free chicken broth<br />
- 1 cup uncooked white rice, long-grain</p>
<p><strong>Directions:</strong><br />
Coat a large, nonstick saucepan with cooking spray. Over high heat, sauté sausage until crispy on edges. Add onion, celery and green pepper; sauté until tender.<br />
Reduce heat and stir in cayenne, thyme, salt, pepper and garlic; sauté until garlic is fragrant.<br />
Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and let cook until rice is tender, about 20 minutes.<br />

- 10 (20 oz) boneless skinless chicken thighs<br />
- 1 bunch asparagus, ends trimmed, cut in half<br />
- 3 red bell peppers<br />
- 1 cup carrots, sliced in half long way<br />
- 2 red onions, chopped in large chunks<br />
- 1 package sliced mushrooms<br />
- 1/2 cup plus 2 tbsp balsamic vinegar<br />
- 1/4 cup extra virgin olive oil<br />
- 1 tsp sugar<br />
- salt and pepper<br />
- 3 tbsp fresh rosemary<br />
- 2 cloves garlic, smashed and sliced<br />
- 2 tbsp oregano or thyme<br />
- 4 leaves fresh sage, chopped</p>
<p><strong>Directions:</strong><br />
Preheat oven to 425°. Wash and dry the chicken well with a paper towel. Combine all the ingredients together and using your hands and arrange in a very large roasting pan. The vegetables should not touch chicken or it will steam. All ingredients should be spread out in a single layer, if necessary use two baking dishes or disposable tins to achieve this. Bake for 35 &#8211; 40 minutes. Makes 5 servings.</p>

<p>Anyway, on to today&#8217;s tasty Weight Watchers Recipe&#8230;.this is another tasty and fabulous crock pot recipe, designed for the Weight Watcher who wants a an easy to make meal that&#8217;s also really good for you and low in Weight Watchers Points. Low fat, and low in Points, this dish is slow cooked with shredded chicken, beans and vegetables, so it&#8217;s loaded with fiber, protein and other nutrients. It&#8217;s also a perfect Momentum Plan Recipe! It&#8217;ll definitely fill you up so you won&#8217;t be hungry again shortly after eating. TIP: You can prepare it the night before, and then just turn your crock pot on in the morning for an easy weeknight meal. This is truly a fantastic Weight Watchers Crock Pot Recipe to keep on file. :)</p>

- 14.4 oz can fat free chicken broth<br />
- 3 scallions, chopped<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
- 1 tsp cumin<br />
- 1 tsp cayenne pepper (to taste)<br />
- salt to taste</p>

<p>Just because you are a Weight Watcher doesn&#8217;t mean you have to give up your favorite foods! The trick is just learning how to prepare a healthier, lower calorie version that ends up being lower in Weight Watcher Points. One of my readers requested a delicious Weight Watchers Fried Chicken Recipe, and after looking around and experimenting a bit in the kitchen, I have finally found this super crispy and yummy Southern Style Oven Fried Chicken Recipe that&#8217;ll knock your socks off! The crust is so deliciously yummy and savory and the chicken is so tender and juicy, no one will suspect that this is actually a low calorie fried chicken recipe! By making a few adjustments in the traditional fried chicken recipes, I was able to take this American favorite and turn it from an average of 11 Weight Watchers Points per serving to just 4 Weight Watcher Points, simply by eliminating the chicken skin and the oil &#8211; and this chicken is SO good, you won&#8217;t miss &#8216;em! The chicken is actually &#8220;oven-fried&#8221;, so that will save you a TON of calories, but without sacrificing the taste. And I&#8217;ve added a few tricks into the recipe to still make you feel like you are eating a &#8220;bad&#8221; food, so you can enjoy it :). This Weight Watchers Southern Fried Chicken Recipe is one of the Weight Watchers Recipes that will be a staple in your meal plan for a long time to come!</p>

<h2><u>Weight Watchers Southern Style Oven Fried Chicken Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/3 cup all-purpose flour<br />
- Pam Butter Flavored Non-Fat, Nonstick Cooking Spray<br />
- 1/2 tsp Kosher salt<br />
- 1/4 tsp black pepper<br />
- 1/4 tsp cayenne pepper<br />
- 1/2 tsp granulated onion powder<br />
- 3 oz buttermilk<br />
- 1/2 cup cornflake crumbs, crushed finely<br />
- 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces*</p>
<p>* You can use chicken wings and drumsticks with this recipe as well, just make sure to remove the skin</p>
<p><strong>Directions:</strong><br />
Preheat oven to 365ºF. Lightly coat an 8 X 8 X 2-inch baking dish with the butter flavored nonstick, non-fat cooking spray; set aside.<br />
Combine flour, salt, pepper, onion powder and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.<br />
Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs.<br />
Place coated chicken breasts in prepared baking dish. Spray chicken with a light coating of the Butter Flavored non-fat cooking spray. Bake until chicken is tender and no longer pink, about 25 to 30 minutes (there is no need to flip the chicken during baking).  Makes 4 servings.</p>

This Sweet and Sour Chicken Crock Pot Recipe is SO good, and it tastes just as good, if not better, than the sweet and sour chicken you get in a Chinese Fast Food Restaurant. And, this crock pot recipe is really good for you too! It&#8217;s loaded with protein and fiber to fill you up. <h2><u>Weight Watchers Sweet and Sour Chicken Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 lb boneless, skinless chicken breast<br />
- 5.5 oz  (about half of the 11.5 oz jar) <a href="http://www.laaloosh.com/kikkoman/sweet-sour-sauce"rel="nofollow" target="_blank" >Kikkoman Sweet &#038; Sour Sauce</a><img src="http://www.assoc-amazon.com/e/ir?t=laaloocom-20&#038;l=as2&#038;o=1&#038;a=B0000CNU5D" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /><br />
- 1/4 teaspoon garlic powder<br />
- 1/4 teaspoon onion powder<br />
- 8 oz pineapple chunks in juice, drained (reserve 1/4 cup juice)<br />
- 1 tablespoons brown sugar<br />
- 16 oz bag of frozen stir-fry vegetables</p>
<p>** If you are feeling ambitious (not lazy), nix the bag of frozen veggies, and cut your own! I used green and red bell peppers, 2 stalks of green onions, broccoli, and some sugar snap peas &#8212; SOOOOOO yummy!</p>
<p><strong>Directions:</strong><br />
Cut the raw chicken breast into bite sized pieces. Spray your crock-pot with cooking spray. Add chicken, garlic powder and onion powder; stir. Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice. Cover and cook on low for 3-4 hours. Add frozen vegetables during the last 30 minutes of cooking and cook on high. Makes 4 servings</p>
<p>Serving size is 1/4th of the entire recipe<br />

This chicken recipe is actually a pretty traditional slow cooker recipe that&#8217;s been around for a while, but I revamped it to make it lower in calories and Weight Watchers Points, yet without sacrificing any of the fabulous taste. I like to prepare this dish and then serve it over top of some <a href="http://www.laaloosh.com/miracle-noodle/zero-calorie-pasta "rel="nofollow" target="_blank" >Miracle Noodle Fettucine Noodles</a>, which add 0 Points because it&#8217;s a 0 calorie pasta! So it provides a great way to bulk up the dish without adding on any extra Points! Besides, that Parisienne Sauce is just too good to waste!! Trust me when I tell you that this dish is so fabulous NO ONE will have any idea that&#8217;s part of a collection of Weight Watchers Crock Pot Recipes. It just tastes too good to be healthy and diet friendly!</p>

<h2><u>Weight Watchers Chicken Parisienne Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 6 skinless, boneless chicken breasts (approx 4 oz each)<br />
- salt and pepper to taste<br />
- paprika to taste<br />
- 1/2 cup dry white wine<br />
- 1 (10.75 ounce) can Campbell’s 98% Fat Free Cream of Mushroom Soup<br />
- 1 package fresh mushrooms, sliced (about 10 oz)<br />
- 1 cup fat free sour cream<br />
- 1/4 cup all-purpose flour</p>
<p><strong>Directions:</strong><br />
Sprinkle chicken breasts lightly with salt, pepper, and paprika to taste. Place in slow cooker. In a mixing bowl, combine the wine, condensed soup, and mushrooms. In another bowl, mix together sour cream and flour. Stir sour cream mixture into the mushrooms and wine. Pour over chicken in slow cooker. Sprinkle with additional paprika, if desired.<br />
Cover, and cook on Low for 6 to 8 hours. Makes 6 servings.</p>
<p>Serving size is 1 chicken breast with approximately 1/6th of the Parisienne sauce<br />

<h2><u>Weight Watchers Buffalo Chicken Wings Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 spray olive oil cooking spray, or enough to coat sheet<br />
- 12 oz uncooked skinless chicken wings<br />
- 1 1/4 oz Old El Paso Taco Seasoning Mix, or similar product<br />
- 1 cup Frank’s Red Hot Sauce<br />
- 1/2 cup fat-free sour cream<br />
- 2 tbsp blue cheese, or gorgonzola, crumbled<br />
- 2 tbsp fat-free skim milk<br />
- 4 medium stalks celery, cut into 2-inch pieces</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.<br />
Dip wings in Frank’s Red Hot Sauce. Then, place chicken wings in a zip-close plastic bag, add taco seasoning, seal bag and shake to coat. Transfer wings to prepared baking sheet and bake until cooked through, about 18 to 20 minutes.<br />
Meanwhile, to prepare dip, whisk together sour cream, cheese and milk.<br />
Serve wings with dip and celery on the side. Recipe makes 4 servings. </p>
<p>Serving size is 3 wings, 3 tablespoons of dip and 1 celery stalk<br />

<p>*If you don’t like spicy, feel free to eliminate the jalapenos</p>
<p>NOTE: Try adding 1 cup cooked black beans to the recipe for some added protein and fiber, but add on one additional Point per serving, if you do. </p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.<br />
Arrange tortillas on baking sheet; spray tortillas with cooking spray and sprinkle with salt. Bake until golden, about 10 minutes.<br />
Arrange tortillas in bottom and up sides of 4 salad bowls, so that each bowl will have 8 tortilla wedges. Place 1/4 of lettuce, cilantro, chicken, tomatoes, black olives, bell peppers, onions, and tomatillos in each bowl.<br />
In a small bowl, whisk together sour cream, salsa, cumin and pepper sauce. Drizzle about 3 tablespoons dressing over each salad. Top with sliced jalapenos . Enjoy!</p>
