So I&#8217;ve been baking away in the kitchen trying to come up with my own knock-off version for a healthy White Chocolate Chip Macadamia Nut Cookie Recipe, and boy oh boy was I successful! Each cookie is just 2 Points +, making them an ideal low calorie snack to indulge in. It took me a few tries to get the ingredients just right, and in my attempts, I realized that I couldn&#8217;t use certain types of butter substitutes and/or egg substitutes. So I had to figure out a way to fit all the good ingredients in, but still keep it a low calorie, low fat cookie. In the end, an amazing, low Points White Chocolate Macadamia Nut Cookies Recipe was born that tastes just as good as the higher fat version, but is a lot better in helping you reach your weight loss goals. /> - 1 tsp vanilla extract<br
/> - ½ tsp almond extract<br
/> - 1/8 tsp salt</p><p><strong>Directions:</strong><br
/> Preheat oven to 225°F. Cover 2 cookie sheets with parchment paper; set aside.<br
/> Combine 1 egg white, 1/4 cup of cocoa, 2 tablespoons of sugar and both flavors of extract in a large bowl. Beat the remaining 4 egg whites and salt with an electric mixer just until soft peaks form; add the remaining 1/2 cup of sugar, 1 tablespoon at a time, while beating, until the egg whites are stiff and glossy. Fold the egg whites into the chocolate mixture in three batches. Fill a pastry bag with the mixture and pipe out the cookies onto the cookie sheets. Each cookie should be about 1-inch wide. Omg, they were SO good. Words cannot describe. Well, ever since then, I&#8217;ve been hesitant to treat my self to these high calorie goodies, and I couldn&#8217;t find a Weight Watchers Lemon Cookies recipe that I liked. Needless to say, I&#8217;ve been <em>dying</em> for some lemon tea cookies!! So after playing around a bit with a few traditional lemon cookie recipes, I managed to create one that is decently lower in weight watchers points than the regular versions. Of course, I still wish they would be even lower in points so I could eat 100 or so, but alas, just a few will have to do. Enjoy!</p><p><span
id="more-3550"></span></p><h2><u>Lemon Cookies Recipe</u></h2><p><strong>Ingredients:</strong><br
/> - 1 1/2 cup unbleached, all-purpose flour<br
/> - 1 cup sugar<br
/> - 1/4 cup light butter, room temp<br
/> - 1/2 tsp table salt<br
/> - ¼ cup powdered sugar<br
/> - 2 large egg yolks<br
/> - 1/4 cup fat free plain or vanilla Greek yogurt<br
/> - 1 tsp baking powder<br
/> - 1 tbsp lemon zest, freshly grated<br
/> - 1 tbsp fresh lemon juice</p><p><strong>Directions:</strong><br
/> In a small bowl, combine flour, salt and baking powder; set aside. In a medium bowl, using an electric mixer, cream butter and sugar until light and fluffy; add egg yolks and combine thoroughly. Add lemon juice and zest; beat well. Add yogurt and a small amount of flour mixture (about 2 tbsp); beat to combine. Add rest of flour mixture and mix thoroughly. Turn dough out onto a large piece of plastic wrap. Cover tightly and refrigerate for 2 hours and up to 24 hours.  Preheat oven to 375ºF. Coat 2 cookie sheets with nonstick spray.  Use large tablespoons of dough and roll int 30 balls; place about 2-inches apart on prepared cookie sheets. Bake until edges of cookies turn golden, about 9 to 12 minutes. Remove and cool slightly. Put powdered sugar into a food storage bag; shake still-warm cookies, a few at a time, to coat lightly.</p><p>Entire recipe makes 15 servings<br

Well, this low calorie cookie recipe is one of my old standbys. These fabulous little chocolate chip cookies are so divinely decadent, you&#8217;ll feel like you are being really bad (which feels really good)! The cookies are small, but they pack quite a chocolate punch. And with just 1 Weight Watchers Point per 2 cookies, you can go ahead and grab a handful of these mini chocolate chip cookies without an ounce of guilt. Just because you are dieting and eating healthy, doesn&#8217;t mean you can&#8217;t enjoy the treats you love, but having a healthier version of them sure helps keep you on track.</p><p><span
id="more-1075"></span></p><h2><u>Weight Watchers Chocolate Chip Cookies Recipe</u></h2><p><strong>Ingredients:</strong><br
/> &#8211; 2 tbsp light butter, softened (I like <a
rel="nofollow" target="_blank" href="http://brummelandbrown.com/product1.aspx">Brummel and Brown Spread</a>)<br
/> - 2 tsp canola oil<br
/> - 1/2 cup packed brown sugar, dark-variety<br
/> - 1 tsp vanilla extract<br
/> - 1/8 tsp table salt<br
/> - 1 large egg white<br
/> - 3/4 cup all-purpose flour<br
/> - 1/4 tsp baking soda<br
/> - 3 oz semi-sweet chocolate chips, about 1/2 cup</p><p><strong>Directions:</strong><br
/> Preheat oven to 375ºF.<br
/> In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.<br
/> In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.<br
/> Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Makes 24 servings.</p><p>Serving size is 2 cookies<br
