<h2><u>Cuban Pork Crock Pot Stew Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 lb lean pork loin, cut into 1-inch pieces<br />
- 1 lb sweet potatoes, peeled and cut into 1/2-inch pieces<br />
- 1 large green pepper, chopped<br />
- 1 red pepper, chopped<br />
- 14 1/2 oz canned diced tomatoes<br />
- 1 small can green chilies<br />
- 2 medium garlic cloves, minced<br />
- 1 small red onion, chopped<br />
- 1/4 cup orange juice<br />
- 3 medium green onions<br />
- 1 tsp table salt<br />
- 1/4 tsp ground cumin<br />
- 1/4 tsp black pepper<br />
- 2 tbsp fresh lime juice<br />
- 2 tbsp fresh chopped cilantro<br />
- 1 tbsp fresh chopped parsley  </p>
<p><strong>Directions:</strong><br />
In your slow cooker, put pork, potatoes, chilies, tomatoes, peppers, garlic, orange juice, green onions, yellow onion salt, pepper, and; cover and cook on low setting for 6-8 hours.<br />
Stir in parsley lime juice, and cilantro; cover slow cooker and cook for 10 minutes more. </p>
<p>Serving size = 2 cups<br />
Each serving = 6 Point Total</p>

<p>It&#8217;s no surprise that the creamy dips, greasy chips, fried finger foods, and super-sized sandwiches usually served at Superbowl parties are not diet or health-friendly.  The good news is that with a few recipe makeovers, all the flavors of football can be savored without wreaking havoc on your New Year’s weight-loss resolutions. So today, I&#8217;m sharing one of the YUMMIEST meatball recipes EVER. These Crock Pot BBQ Meatballs are crazy delicious and still pretty low in Points Total. They are a perfect Superbowl party food that will be adored by weight watchers and non-weight watchers alike. They stay nice and warm and moist in your crock pot, and the spicy BBQ sauce adds such a nice flavor to the meat. And with just a 2 Point Total per serving, these make a great appetizer recipe. Or, double the size of your meatballs, and serve it as a main dish recipe! Though not an official one of Weight Watchers Superbowl Recipes, these barbecue meatballs will definitely be a hit with all weight watching Superbowl snackers, and makes a great Superbowl party food idea.</p>

<h2><u>Crock pot BBQ Meatballs Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 1/2 pounds extra lean ground beef<br />
- 1/2  cup uncooked quick oats<br />
- 1/4 cup dry red wine<br />
- 1/4 cup liquid egg whites<br />
- 1 large yellow onion, finely chopped<br />
- 2 garlic cloves, minced<br />
- 1/4  cup fresh parsley, chopped<br />
- 1 tbsp dried oregano<br />
- 1 tbsp Kosher salt<br />
- 1 cup beef broth<br />
- 1/2  tsp black pepper<br />
- 1 1/4  cup BBQ sauce</p>
<p><strong>Directions:</strong><br />
In a large bowl, combine the meat, eggs, garlic, parsley, oregano, onions, salt and pepper. In a small bowl, soften the oats with the wine for 10 minutes Add the oats and wine to the meat mixture and mix well &#8211; you will need to do this with your hands in order to get everything incorporated well. Coat a baking sheet with cooking spray. Shape meatball mixture into sixty 1-inch balls; place on baking sheet.<br />
Bake at 350ºF until cooked through, about 25 minutes. Transfer meatballs to a crock pot to keep warm. Meanwhile, heat barbecue sauce and beef broth over medium-high heat until hot. Pour sauce over cooked meatballs, toss gently and serve. For parties, I just set the crock pot up on the food table, set on warm.</p>

<p><strong>Ingredients:</strong><br />
- 1 8oz. can tomatoes, finely chopped and un-drained<br />
- 1 10oz. can Healthy Request Tomato Soup<br />
- 1 1/2 tsp. Italian seasoning<br />
- 1/2 tsp. dried minced garlic<br />
- 1/2 cup sliced mushrooms, fresh or canned<br />
- 1/2 cup chopped green bell pepper<br />
- 1/2 cup chopped onion<br />
- 16oz. skinned and boned uncooked chicken breast cut into 4 pieces<br />
- Non Fat Cooking spray</p>
<p><strong>Directions: </strong><br />
In a crock pot container sprayed cooking spray, combine un-drained tomatoes, tomato soup, Italian seasoning and garlic. Stir in mushrooms, green pepper, onion and chicken pieces. Mix well to combine. Cover and cook on low for 6 to 8 hours. Evenly spoon sauce over chicken to serve. </p>

And the best part, is that it&#8217;s so low in fat and calories, so each serving has just a 3 Point total! So if you are following the Weight Watchers plan, I&#8217;m thinking you&#8217;ll definitely appreciate this rockin&#8217; Lemon Garlic Chicken Slow Cooker Recipe. <h2><u>Lemon Garlic Chicken Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 8 boneless skinless chicken breasts<br />
- 10 garlic cloves, finely chopped or minced<br />
- 2 yellow onions, chopped<br />
- 2 cups fat free, low sodium chicken broth<br />
- 1/4 cup lemon pepper seasoning<br />
- 4 tbsp paprika<br />
- 2 tbsp fresh parsley, finely chopped<br />
- 1 tablespoon kosher salt<br />
- 1 tsp lemon zest</p>
<p><strong>Directions:</strong><br />
Rinse the chicken and pat dry. Mix together the lemon pepper seasoning, paprika and salt. Coat the chicken with the spice mixture. Place the coated chicken in the crock pot and cover with the fat free chicken broth, garlic cloves, parsley and onions and lemon zest. Cook on low heat for about 3-4 hours (or until done).</p>
<p>Entire recipe makes 8 servings<br />
Serving size is 1 breast, with approx 4 tbsp of sauce<br />

Plus, it&#8217;s seasonal flavor makes it a wonderful soup to add to your collection of holiday crock pot recipes. Though this is not an official one of Weight Watchers Crock Pot Recipes, I think anyone watching their weight will truly enjoy this sweet potato soup. </p>

<h2><u>Sweet Potato Soup Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 cups fat-free chicken broth<br />
- 4 medium sized sweet potatoes<br />
- 1 1/2 cups fat-free half-and-half<br />
- 2 packets Splenda or Truvia<br />
- 1/2 teaspoon allspice<br />
- 1 tsp salt<br />
- 1 tsp dry mustard</p>
<p>OPTIONAL: I topped mine with a tablespoon of non-fat sour cream for additional flavor and 0 points</p>
<p>NOTE: To make this into a vegetarian recipe, just use vegetable broth instead of chicken broth</p>
<p><strong>Directions:</strong><br />
Peel and slice the sweet potatoes. Place them with the chicken broth in your slow cooker. Cover and cook on medium for about 3 hours (or until the potatoes are tender).<br />
Using an immersion blender (or putting the sweet potatoes and broth into a food processor), blend until smooth. Put the soup back into the crock pot. Add the half-and-half, Splenda, salt, dry mustard and allspice. Cover and cook on medium for about 1-3 hours.</p>
<p>Entire recipe makes 6 servings<br />

<p>It was a cold and chilly morning here in LA, and I was craving a hot and hearty breakfast. And this tasty Pumpkin Oatmeal Crock pot Recipe really hit the spot! All of the autumn like flavors in this breakfast recipe were just what I was looking for on this winter&#8217;s day. This delicious oatmeal recipe is a definite crowd-pleaser that not only tastes fantastic, but is really quite good for you too! It&#8217;s also a wonderful vegan or vegetarian recipe. Though this is not an official Weight Watchers breakfast recipe, it&#8217;s a wonderful dish for any weight watcher who wants a hot, nutritious slow cooker oatmeal recipe that will warm you up anytime of the year! And with just a 3 Point Total per serving, this filling breakfast will leave you feeling satisfied. </p>

<h2><u>Pumpkin Oatmeal Crockpot Recipe</h2>

<p><strong>Ingredients:</strong><br />
- 1 15 oz can of canned pumpkin OR 3 cups of fresh pumpkin (peeled, seeded, and cut into small cubes)<br />
- 5 cups water<br />
- 1 1/2 cups steel-cut oats<br />
- 1/4 cup honey<br />
- 1 tbsp brown sugar<br />
- 1 tsp ground cinnamon<br />
- 1/2 tsp nutmeg<br />
- 1/2 tsp salt<br />
OPTIONAL: Garnish with a few dried cranberries, for a fabulous taste and dislpay</p>
<p><strong>Directions:</strong><br />
Combine everything in a crock pot, cover and cook on low for 6 hours. Stir well before serving.<br />
NOTE: If you use the canned pumpkin instead of the fresh, your oatmeal texture will be creamier and more like a chunky puree.</p>

<p>As the cold weather really kicks in for these last few weeks of 2009, it&#8217;s time to enjoy some hot, yummy holiday recipes that will warm your tummy and soul! This Peppered Beef Brisket in Beer crock pot recipe is the perfect dish to take away that winter chill. It&#8217;s an easy holiday recipe that takes minimal prep, but delivers maximum taste. I love using my crock pot, so I jump at every chance I get to try out some delicious crock pot recipes! And I plan on making this one for my Christmas Eve dinner this year. The best thing is that it only has a 6 Point Total per serving. Though this is not an <em>official </em>one of Weight Watchers Christmas Recipes, it&#8217;s great for anyone who is a weight watcher and this dish makes a wonderful, low calorie Christmas recipe. Pair it with some salad or roasted veggies to keep your overall meal points low. Enjoy!</p>

<h2><u>Crockpot Peppered Beef Brisket in Beer Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 (4 lb) beef brisket, the leanest you can find<br />
- 1 large yellow onion, chopped<br />
- 1 tsp pepper<br />
- 1 tsp paprika<br />
- 1 tsp cumin<br />
- 1 tsp Kosher salt<br />
- 3 tbls all-purpose flour<br />
- 3 tbls brown sugar<br />
- 3 garlic cloves, minced<br />
- 3/4 cup beer<br />
- 2/3 cup chili sauce </p>
<p><strong>Directions:</strong><br />
Trim fat from brisket; and cut in half. In a small bowl, combine salt, pepper, paprika and cumin. Evenly rub the mixed spices. Place onions in slow cooker. Place brisket halves over onions. In a small bowl, combine flour, brown sugar and garlic and gradually add beer and chili sauce, stirring until well blended. Pour over brisket. Cover with lid and cook on high setting for 1 hour then reduce to low setting and cook 6-8 hours our until tender. </p>
<p>TIP: To make serving sizes easier to dish out, cut the brisket into 12 evenly sliced pieces after rubbing with seasonings and before putting in the slow cooker.</p>
<p>Entire Recipe = 12 servings<br />
Serving size is 3 oz and approx 6 tbsp of sauce<br />

<p>When I found this Weight Watchers Beef Stew Recipe for the crock pot, I literally was drooling. Though I initially thought it was just a traditional beef and vegetable stew recipe, it&#8217;s actually a classic Jewish recipe for Tzimmes! I&#8217;ve had Tzimmes before, but I&#8217;ve never had it prepared with the beef and vegetables so I was so excited to give it a try, and YOWSA!! IT WAS SO YUMMY!! Hearty and delicious, this Weight Watchers Recipe for Beef Stew is an incredibly filling meal, and with 8 Weight Watcher Points per serving, it&#8217;s much lower in calories than most stews. Try serving this stew up with a tasty <a href="http://www.laaloosh.com/2008/07/01/asparagus-cherry-tomato-salad-recipe/">0 Points Salad</a> for a complete and tasty meal! But keep in mind that it will also make a wonderful Passover Recipe and/or Hanukkah Recipe! This Weight Watchers crock pot recipe offers a truly unique and delicious take on beef stew by adding in some non traditional ingredients like prunes, cinnamon and honey &#8211; and it is definitely worth trying!</p>

<h2><u>Weight Watchers Beef Stew Crock Pot Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 7 oz frozen chopped onions, about 2 cups<br />
- 3 pounds raw, lean beef brisket, trimmed, boneless, cut into 1-inch pieces<br />
- 2 large garlic cloves, minced<br />
- 2 medium sweet potatoes, peeled and cut into bite-size chunks<br />
- 1/2 pound baby carrots, cut in half if large<br />
- 8 small uncooked new potatoes, cut in half (unpeeled)<br />
- 16 prunes, pitted<br />
- 4 tbsp fresh lemon juice, divided (from 2 small lemons)<br />
- 5 tsp honey, divided<br />
- 1 1/2 tsp Kosher salt<br />
- 1/2 tsp black pepper<br />
- 1/4 tsp ground cinnamon<br />
- 1 cup beef broth</p>
<p>NOTES: You can substitute dried apricots for the prunes if you prefer.<br />
For a stew with thicker gravy, spoon 1 tablespoon of flour into a cup and stir in 1/4 cup of the tzimmes liquid until the mixture is lump-free. Add the flour mixture to the slow cooker, cover and cook on low for 10 minutes. (Adding the flour does not affect the recipe’s POINTS value.)</p>
<p><strong>Directions:</strong><br />
Place onion, beef, garlic, sweet potatoes, carrots, new potatoes, prunes, 2 tablespoons of lemon juice and 1 tablespoon of honey in a 5- to 6-quart slow cooker. Add salt, pepper, cinnamon and broth; stir well.<br />
Cook on low setting for 7 to 8 hours. About 5 minutes before serving, stir in remaining 2 tablespoons of lemon juice and remaining 2 teaspoons of honey; cover and cook on low for 5 minutes. </p>
<p>Entire Recipe makes 8 servings<br />
Serving size is 1 ½ cups<br />

But things are starting to get back to normal now, so I should have more time to get back to blogging!</p>
<p>Anyway, on to today&#8217;s tasty Weight Watchers Recipe&#8230;.this is another tasty and fabulous crock pot recipe, designed for the Weight Watcher who wants a an easy to make meal that&#8217;s also really good for you and low in Weight Watchers Points. Low fat, and low in Points, this dish is slow cooked with shredded chicken, beans and vegetables, so it&#8217;s loaded with fiber, protein and other nutrients. It&#8217;s also a perfect Momentum Plan Recipe! It&#8217;ll definitely fill you up so you won&#8217;t be hungry again shortly after eating. TIP: You can prepare it the night before, and then just turn your crock pot on in the morning for an easy weeknight meal. - 15 oz can black beans<br />
- 8 oz frozen corn<br />
- 1/4 cup chopped fresh cilantro<br />
- 14.4 oz can fat free chicken broth<br />
- 3 scallions, chopped<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
- 1 tsp cumin<br />
- 1 tsp cayenne pepper (to taste)<br />
- salt to taste</p>

<p><strong>Directions:</strong><br />
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Makes 8 servings.</p>

- 1/2 cup uncooked barley<br />
- 1 bay leaf<br />
- 1/4 tsp dried thyme, crushed<br />
- 1/4 tsp black pepper<br />
- 4 oz Canadian-style bacon, cut into 1/4-inch pieces<br />
- 1/2 cup(s) fat-free evaporated milk<br />
- 2 oz fat-free half-and-half</p>
<p><strong>Directions:</strong><br />
In a slow cooker, combine potatoes, carrots, leek, garlic, broth, barley, bay leaf, thyme, pepper and bacon; cover and cook on low for 6 hours.<br />
Stir in evaporated milk and half-and-half; heat through, uncovered, about 10 minutes. </p>
