<p>A few weeks back, I was contact by the folks over at <a href="http://www.yoplaitgreek.com/" rel="nofollow" target="_blank">Yoplait</a> to try out their Nonfat Greek Yogurt and review the product. I love Greek Yogurt, so I was happy to oblige, as I use yogurt in many recipes and had never yet tried Yoplait&#8217;s Greek Yogurt. So, after picking up some of the yogurt, I headed into the kitchen last night to try out their Greek Turkey Burger Recipe with Homemade Tzatziki sauce. I&#8217;m a big fan of burgers and of Greek food, so I was excited to combine the two. I made a few alterations to the recipe in order to make it more Weight Watchers friendly, and I have to say, these low calorie turkey burgers turned out SOOOOOO yummy!! The feta cheese and homemade Tzatziki sauce really added a nice flavor, while still keeping it low in points. Each burger, with bun and sauce came out to just a 4 Point Total each. While I didn&#8217;t find the Yoplait Greek Yogurt better or much different than other non fat Greek yogurts I&#8217;ve used, their Greek Turkey Burger is definitely a hit and something that the whole family would enjoy.</p>

<h2><u>Greek Turkey Burger Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
Tzatziki Sauce:<br />
- 1 container (6 oz) Yoplait© Greek Fat Free plain yogurt<br />
- 1/4 cup chopped cucumber<br />
- 3 tablespoons chopped red onion<br />
- 1 tablespoon chopped fresh dill weed<br />
- 2 teaspoons fresh lemon juice<br />
- 2 garlic cloves, minced<br />
- ¼ tsp salt</p>
<p>PS. This sauce also makes a great low calorie dip recipe for veggies, pita chips or my <a href="http://www.laaloosh.com/2009/02/02/weight-watchers-baked-sweet-potato-chips-recipe/">1 Point Baked Sweet Potato Chips Recipe</a>!</p>
<p>Burgers:<br />
- 1 lb lean ground turkey<br />
- 1 cup crumbled fat free feta cheese (4 oz)<br />
- 1/3 cup chopped red onion<br />
- 1 tablespoon chopped fresh dill weed<br />
- 1 teaspoon salt<br />
- 1/2 teaspoon pepper<br />
- 3 garlic cloves, minced<br />
- 4 <a href="http://www.amazon.com/gp/product/B0033GMUOC?ie=UTF8&#038;tag=laaloocom-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B0033GMUOC" rel="nofollow" target="_blank">Arnold Select Sandwich Thins Multi-Grain</a><br />
- 1 medium tomato, thinly sliced<br />
- fresh lettuce leaves</p>
<p><strong>Directions:</strong><br />
In small bowl, mix 1/2 cup yogurt and remaining sauce ingredients; refrigerate until serving.  Heat gas or charcoal grill. In medium bowl, mix all burger ingredients and remaining yogurt. Shape mixture into 4 patties, about 1/2 inch thick.<br />
Place patties on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning after 5 minutes, until thermometer inserted in center of patties reads 160°F. Place burgers in buns with tomato slices and sauce.<br />
If you choose to broil your burgers instead, broil patties with tops about 6 inches from heat 4 minutes; turn patties. Cook 6 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F.<br />
Place a patty on one of the sandwich thins, top with 1 tbsp of Tzatziki sauce, a few tomato slices and a few fresh lettuce leaves.</p>
<p>Entire recipe makes 4 burgers<br />
Serving size is 1 Greek Turkey burger with bun, 1 tbsp Tzatziki sauce and lettuce/tomato<br />
Each serving = 4 Point Total</p>

And being a weight watcher, I had to just accept this fact and do my best to create weight watchers recipes that involved bread and were still low in points. And when I tried this Baked Croutons Recipe, I was absolutely thrilled!! I have always loved croutons and really feel that they make a salad so much more yummy and satisfying. But store bought croutons aren&#8217;t always weight watcher friendly. So, using some low calorie bread, I decided to make my own. And I must say, they turned out SO good, I will never go back to regular croutons again! This homemade croutons recipe is not only amazingly delicious, but it&#8217;s full of fiber and has just a 1 Point Total per serving!! Truly the perfect salad topping. If you are a carb lover &#8211; this recipe is a MUST try.</p>

<p><strong>Ingredients:</strong><br />

- 2 tsp garlic powder<br />
- 2 tsp kosher salt<br />
- 2 tsp onion powder<br />
- 1 tbsp dried parsley<br />
- 1 tbsp <a href="http://www.amazon.com/gp/product/B00032A4W4?ie=UTF8&#038;tag=laaloocom-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B00032A4W4" rel="nofollow" target="_blank">Kraft Fresh Reduced Fat Grated Parmesan Cheese</a><br />
- non-fat cooking spray (I used the butter flavored kind)</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350 degrees. Spray a baking sheet with non fat cooking spray.<br />
While still frozen, remove crusts from bread; chop into bite-size pieces. Lightly coat bread with cooking spray and put into a large Ziploc bag. Add in salt, garlic powder, onion powder, parmesan cheese and dried parsley. Close bag tightly and shake gently, but thoroughly, making sure that all bread pieces are coated evenly with seasonings. Place croutons on baking sheet and bake in oven until croutons are browned well on both sides. (You may have to flip croutons over halfway through the baking to ensure even browning).</p>
<p>Entire recipe is 2 servings<br />
Serving size is ½ of entire recipe (1 slice of bread with the seasonings)<br />

- 1/2 cup fat-free sour cream<br />
- 1 tsp dried dill<br />
- 2 cloves garlic, minced<br />
- 1/3 cup crumbled fat free feta cheese<br />
- 2 tbsp fresh chives, minced<br />
- 2 tsp fresh lemon juice<br />
- salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
Steam spinach for about 2-3 minutes, or until the leaves just begin to wilt.<br />
Place spinach, green onions, cream cheese, garlic, sour cream, feta cheese, dill, chives, lemon juice in a blender; puree. Taste dip and add salt and pepper to taste. Empty dip into a serving bow and dig in! </p>

<h2><u>Spicy Black Bean Dip Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 15 oz can of black beans, rinsed and drained<br />
- 1/2 cup fresh cilantro, roughly chopped<br />
- 1/4 cup red onion, chopped<br />
- 1/4 cup shredded carrots<br />
- 3/4 cup fresh pico de gallo or chunky salsa<br />
- 1 tbsp fresh lime juice<br />
- 1 tbsp fresh jalapenos, de-seeded and roughly chopped<br />
- 1/2 cup plain, fat-free yogurt<br />
- 1 tsp ground cumin<br />
- 1/2 tsp paprika<br />
- 1/2 tsp salt<br />
- 1/4 tsp black pepper</p>
<p><strong>Directions:</strong><br />
Blend all ingredients in a blender or food processor blend until chunky or smooth (depending on which consistency you prefer) Spoon into a serving bowl and garnish with cilantro. </p>

<p>Ever since the first time I tried Eggs Benedict, I have been in LOVE with Hollandaise Sauce. Something about that ooey gooey, creamy, buttery goodness that I just can&#8217;t get enough. But since the two main ingredients in traditional hollandaise sauce recipes are eggs and butter, it can end up being a pretty fattening sauce, loaded with Weight Watchers Points. But by making a few small changes, I slimmed it down, and made it a much more weight watchers friendly recipe. This delicious French sauce works well over eggs, salmon, toast, or roasted veggies (like asparagus). With just a 1 Point Total per serving, you can treat yourself to a gourmet and decadent dressing that the whole family will enjoy. And this recipe shows you how to make it a blender instead of using a double boiler, so it&#8217;s the best easy hollandaise sauce recipe!</p>

<h2><u>Hollandaise Sauce Recipe</u></h2>
<p><strong> Ingredients:</strong><br />
- 2 large egg yolks<br />
- 2 tbsp water<br />
- 1/4 tsp Dijon mustard<br />
- 1/3 cup light butter, melted (I used Brummel &#038; Brown)<br />
- 2 tsp fresh lemon juice<br />
- salt &#038; white pepper to taste</p>
<p><strong>Directions:</strong><br />
In the container of a blender, combine the egg yolks, salt &#038; pepper, mustard, water and lemon juice. Cover, and blend for about 5 seconds.<br />
Place the butter in a glass measuring cup. Heat butter in the microwave for about 1 minute, or until completely melted, hot, and bubbling. Set the blender on high speed, and pour the butter into the egg yolk mixture in a thin stream. It should thicken almost immediately. Keep the sauce warm until serving by placing the blender container in a pan of hot tap water. </p>

- 2 large cloves garlic<br />
- 2 tbsp chopped red onion<br />
- 1 medium jalapeno chopped, seeds and membrane removed<br />
- 1 cup fresh, chopped cilantro<br />
- zest from 1 lime<br />
- 2 tbsp fresh lime juice<br />
- 1 teaspoon kosher salt<br />
- dash of white pepper</p>
<p><strong>Directions:</strong><br />
Purée all ingredients in a food processor until smooth. Refrigerate for 2 – 3 hours before serving.</p>

<p><strong>Ingredients:</strong><br />
- 1 cup low fat buttermilk<br />
- 4 tbsp balsamic vinegar<br />

- 1 tbsp honey (warmed to pour more easily)<br />
- 1 tbsp light mayo<br />
- 1/2 tsp basil, finely chopped<br />
- 1 small garlic clove, minced<br />
- 1/4 tsp black pepper<br />
- 1/2 tsp salt</p>
<p><strong>Directions:</strong><br />
Blend together until smooth and transfer to a seal tight container. Refrigerate overnight to blend flavors.</p>
<p>Entire Recipe makes 1/1/2 cups<br />
Serving size is 4 tbsp<br />

I love Superbowl parties as much as anyone, but if you&#8217;re not careful, these parties can be a weight watchers nightmare!! So this week, I&#8217;m devoting each day to a different low calorie Superbowl recipes that not only taste good, but will help keep you on track to reaching your weight loss goals. Though these aren&#8217;t official Weight Watchers Superbowl Recipes, they are ideal for anyone who wants healthier, lower calorie versions of their favorite Superbowl snacks. And today, I&#8217;m posting this super rockin&#8217; 2 Point Total Buffalo Chicken Dip Recipe that will knock your socks off! It&#8217;s a very easy Superbowl recipe that will be adored by all, and is a great (and less messy) alternative to serving buffalo wings. Try serving it with some 0 Point veggies (I like celery and green pepper strips the best), or some low points tortilla chips. If you love buffalo flavored anything, this low calorie dip recipe is a must try! </p>

<h2><u>Buffalo Chicken Dip Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 16 oz boneless, skinless chicken breasts<br />
- 1 tsp salt<br />
- 1/2 tsp pepper<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
- 8-oz. fat-free cream cheese, softened<br />
- 1/2 cup fat free sour cream<br />
- 1/2 cup Frank&#8217;s RedHot Original Cayenne Pepper Sauce<br />
- 2 tbsp low calorie butter ( I used Brummel &#038; Brown)<br />
- 1/2 packet of <a href="http://www.amazon.com/gp/product/B000EDM3JO?ie=UTF8&#038;tag=laaloocom-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000EDM3JO" rel="nofollow" target="_blank">Hidden Valley Ranch Dressing Dry Mix</a></p>
<p>NOTE: If you are feeling lazy, you can use two 9.75oz cans of white chicken meat in water (drained), instead of the grilled chicken, but the taste isn&#8217;t nearly as good as using actual grilled chicken breasts.</p>
<p><strong>Directions:</strong><br />
Preheat oven to 325 degrees. Rub chicken breasts with salt, pepper, garlic powder and onion powder. Spray a skillet with non-fat cooking spray, and set on med/high heat. Put in chicken breasts, and cook until brown on both sides and meat is cooked through. Once meat is cooked, cut it up into bite sized shredded chunks. Set aside. In a large, oven safe bowl, stir cream cheese and butter until smooth. Add in chicken and other remaining ingredients, and mix until thoroughly combined. Bake in the oven for about 20-25 minutes, or until dip has heated all the way through.</p>

Serving size is approx 1/2 cup<br />

<p>Traditional hummus recipes get a new twist with this flavorful version! When I found this pumpkin hummus recipe, I was really excited to give it a try! I love hummus, and even though it&#8217;s good for you, it tends to be pretty caloric, which can really rack up those weight watchers points. This lower calorie version uses pumpkin instead of the traditional garbanzo beans, which helps you get more quantity in each serving than you would with your traditional hummus recipe. It doesn&#8217;t taste <em>exactly</em> like regular hummus, but the new taste is absolutely fantastic! Each serving of the Pumpkin Hummus Recipe has just a 2 Point Total, which isn&#8217;t bad. And I think it&#8217;s a really unique dip recipe that is ideal for any party or appetizer. Try serving with some <a href="http://www.laaloosh.com/2009/03/13/1-weight-watchers-point-bagels-english-muffins-and-pita-bread/">1 Point Pita Bread,</a> or with some 0 point veggies!
