<p>Haroset is a traditional Jewish dish that is an integral part of any Passover meal. This Weight Watchers Haroset recipe is crunchy and sweet, and delicious sandwiched between matzo. So you can enjoy all the wonderful flavors and traditions of Passover, and yet still be able to stick to your Weight Watchers Plan. This tasty and traditional Jewish Recipe has just 2 Weight Watcher Points per serving and is loaded with all sorts of nutritional tidbits! <h2><u>Weight Watchers Haroset Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 medium apples, cored and cut into 4 pieces each*<br />
- 8 fl oz sweet dessert wine, Kosher for Passover (1 cup)<br />
- 1 cup raisins, golden-variety, chopped<br />
- 1 cup walnut halves, chopped<br />
- 1 tsp ground cinnamon<br />
- 1/4 tsp ground nutmeg<br />
- 1 tbsp honey</p>
<p>NOTES:<br />
*Four different varieties of apples recommended. </p>
<p>This recipe can be made a day or two ahead. The mixture will turn brown the longer it sits but the flavors really blend well.</p>
<p><strong>Directions:</strong><br />
Shred apples into a large, non-reactive bowl; add remaining ingredients and toss well to coat. Cover and refrigerate for at least one hour. Entire recipe makes 24 servings.</p>
<p>Serving size is 1/3 cup<br />
Each serving = 2 Weight Watchers Points</p>

<h2><u>Weight Watchers Butternut Squash Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 1/2 pounds butternut squash<br />
- 2 tbsp vegetable oil<br />
- 2 tbsp apple juice<br />
- 2 tbsp apple cider vinegar<br />
- 2 tbsp red onions, chopped<br />
- 1 tsp curry powder<br />
- 1/2 tsp sugar<br />
- 1/4 tsp table salt<br />
- 1/8 tsp black pepper<br />
- 1 tbsp parsley, fresh, chopped</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400°F. Line a baking pan with aluminum foil.<br />
Cut squash in half crosswise where it starts to widen (where the round &#8220;bulb&#8221; meets the &#8220;neck&#8221;). Place both pieces of squash cut side down in prepared pan. Bake until bottom half of squash is just tender when pierced with a fork, about 20 to 25 minutes; remove bottom half from oven and set aside. Bake top half of squash until just tender, about 15 minutes more. Remove from oven and cool.<br />
Meanwhile, combine remaining ingredients in a small bowl; set aside.<br />
Peel and seed cooled squash; cut into 3/4–inch cubes. Place in a serving bowl and toss with dressing. Makes 6 servings.</p>

- 3 tbsp reduced-calorie margarine</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F.<br />
Stir together apples, 1/4 cup of brown sugar, cinnamon and lemon juice; pour into a 1 1/2 quart baking dish.<br />
Cut flour, oatmeal, remaining brown sugar and margarine together with a pastry blender or fork in a medium bowl; sprinkle over apple mixture.<br />
Bake until apples are tender and top is browned, about 45 minutes.</p>

<p>Good old American apple pie. Who doesn’t love it? Can you imagine a Thanksgiving Dinner without it? I certainly can’t. And since I’m a big apple pie fan, I was determined to find a tasty, low calorie apple recipe that would be low in Weight Watchers Points, but still delicious enough to impress my dinner guests. I hit the jackpot with this one! Part apple pie recipe, part apple cobbler recipe, this dessert is a must for fall parties and dinners. Only 4 Weight Watchers Points per slice! Woo hoo!!</p>

<h2><u>Apple Pie Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
4 medium apple(s), McIntosh, peeled and thinly sliced<br />
3 Tbsp reduced-calorie margarine, chilled and cut up in small chunks<br />
1 cup all-purpose flour<br />
2 Tbsp water, or more if necessary<br />
1/3 cup uncooked old fashioned oats<br />
2 tsp sugar<br />
1 Tbsp cornstarch<br />
2 Tbsp reduced-calorie margarine, melted<br />
5 Tbsp all-purpose flour<br />
1/4 cup sugar<br />
1/2 tsp ground cinnamon<br />
2 Tbsp sugar</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Start by making the crust. First, in a large mixing bowl or a food processor, combine 2 teaspoons of sugar and 1 cup of flour. Add 3 tablespoons of chilled, reduced calorie margarine and process until mixture looks crumbly, like coarse meal. If you don’t have a food processor, just use your fingers. Then start to mix in cold water, one tablespoon at a time, and mix well forming a dough. Using a rolling pin, flatten dough in a circle a bit larger than a9-inch pie pan. Press dough into the bottom and up the sides of the pie pan.<br />
Next, make the filling. To do this, combine 1/4 cup of sugar, apples, cinnamon and cornstarch in a large bowl; add in the apple slices and toss to coat. Place mixture in prepared piecrust.<br />
Finally, make the topping by mixing 2 tablespoons of sugar, melted margarine, 5 tablespoons of flour, 2 tablespoons of sugar and oats in a small bowl; scatter over apples.</p>
<p>Bake for about 45 to 50 minutes or until crumbly topping is golden brown in color and apples are tender. Cool for at least a half hour before serving. Serves 8.</p>
<p>SERVING SIZE = 1 slice</p>

<p>And for those of you who’ve never had it before, here&#8217;s a little background info&#8230; Apple butter is a highly concentrated form of apple sauce, produced by long, slow cooking of apples with cider or water to a point where the sugar in the apples caramelizes, turning the apple butter a deep brown. The concentration of sugar gives apple butter a much longer shelf life as a preserve than applesauce. Apple butter was a popular way of using apples in colonial America, and well into the 19th century. The term &#8220;butter&#8221; refers to the thick, soft consistency, and apple butter&#8217;s use as a spread for breads. Typically seasoned with cinnamon, cloves, lemon juice and other spices, apple butter may be spread on buttered toast, used as a side dish, an ingredient in baked goods, or as a condiment.</p>

<h2><u>Apple Butter Recipe</u></h2>
<p>Makes 4 cups</p>
<p>12 medium Granny Smith or other cooking apples, peeled and cut into fourths<br />
1 1/2 cups packed brown sugar<br />
1/2 cup apple juice<br />
1 tsp.  ground allspice<br />
1 tsp.  ground nutmeg<br />
1/2 tsp.  ground cloves</p>
<p>Mix all ingredients in 5-6 qt. slow cooker.  Cover and cook on LOW 8-10 hours or until apples are very tender. Mash apples with potato masher or large fork. Cook uncovered on LOW 1 to 2 hours, stirring occasionally, until mixture is very thick. Cool about 2 hours. Spoon apple butter into container. Cover and store in refrigerator up to 3 weeks.</p>
