/> Coarsely chop walnuts in a food processor. Add graham cracker crumbs and process until the mixture looks like fine crumbs.<br

/> - 1 ¼ cup uncooked old fashioned oats<br
/> - 2/3 cup dried cranberries<br
/> - 1 cup fresh blueberries<br
/> - 1 cup packed light brown sugar<br
/> - 3 tbsp light butter, room temp<br
/> - ¼ cup liquid egg substitute<br
/> - 1 large egg white<br
/> - 1 ½ tsp vanilla extract<br
/> - 1 tbsp pumpkin pie spice<br
/> - ½ tsp baking soda<br
/> - ½ tsp table salt</p><p><strong>Directions:</strong><br
/> Heat oven to 350ºF. Spray a 9&#215;13-inch baking dish with butter flavored non stick cooking spray, then dust lightly with a bit of flour. In a large bowl, cream sugar and butter with an electric mixer; beat in egg, egg white, pumpkin, vanilla and buttermilk. In a separate bowl, combine flour, oats, pumpkin pie spice, baking soda and salt. Stir into pumpkin mixture just until moistened, then add blueberries and cranberries and gently mix. Sweet, tangy, crispy and delicious, I absolutely LOVED this low calorie dish as a healthy alternative for blueberry pie recipes. It&#8217;s SUPER easy to make, and doesn&#8217;t involve a lot of fancy ingredients, but man it&#8217;s good! Each serving has just a 4 Point Total, but if you are into using Splenda as a sugar substitute, swap out the sugar with 3-4 packets of Splenda and knock a Point off of each serving. You can also serve it with a scoop of Weight Watchers ice cream to jazz it up as a satisfying dessert. Though this isn&#8217;t an official one of Weight Watchers Breakfast Recipes, it&#8217;s a must have dish for any weight watcher who loves blueberry pie or fritters!</p><p><span
id="more-3526"></span></p><h2><u>Blueberry Crisp Fritter Recipe</u></h2><p><strong>Ingredients:</strong><br
/> - 1/4 cup low-fat, ready-to-eat granola cereal<br
/> - 10 oz unsweetened frozen blueberries<br
/> - 2 1/2 tsp cornstarch<br
/> - 1/8 tsp nutmeg<br
/> - 2 tbsp sugar<br
/> - 1/4 tsp orange zest<br
/> - 1/2 cup fresh blueberries<br
/> - 1/4 tsp table salt<br
/> - 1 tsp honey</p><p><strong>Directions:</strong><br
/> In a saucepan, combine sugar, nutmeg, frozen berries, and cornstarch in a saucepan; bring to a boil, stirring gently and frequently with a rubber spatula. Reduce to a simmer and cook until thickened &#8211; about 3 minutes. Turn off heat, stir in fresh blueberries, orange rind and salt, and set aside to cool for 10 minutes.<br
/> Meanwhile, in toaster oven or dry skillet, toast granola until lightly browned, about 3 to 4 minutes.<br

I found this awesome Weight Watchers Baked Stuffed French Toast Recipe and I wanted to share. I made it just this past Sunday and O M G&#8230;..Sooooooooooo delicious! Stuffed French Toast has never tasted so good! The thing I love most is that it&#8217;s so decadent&#8230;you feel like you&#8217;ve just ordered a fancy, gourmet breakfast from some over-priced restaurant. And of course, with just 4 Weight Watchers Points, it&#8217;s a guilt-free breakfast recipe that&#8217;ll knock your socks off.</p><p><span
id="more-267"></span></p><h2><u>Peach-Blueberry Stuffed French Toast Recipe</u></h2><p><strong>Ingredients:</strong><br
/> 16 slice light whole wheat bread (I like Sara Lee Delightful Whole Grain)<br
/> 1 cup blueberries, fresh, or 1 cup frozen, thawed blueberries<br
/> 1 large peach(es), chopped or 1 cup frozen, thawed peach slices<br
/> 2 1/2 cup fat-free skim milk<br
/> 2 cup fat-free egg substitute<br
/> 2 Tbsp sugar, granulated<br
/> 1 tsp ground cinnamon<br
/> 1 tsp vanilla extract<br
/> 1 Tbsp powdered sugar</p><p><strong>Directions:</strong><br
/> Preheat oven to 400ºF. Arrange 8 slices of bread in bottom of a 9 X 13-inch baking dish, squishing slices together to make one layer; sprinkle blueberries and peaches over top. In a medium bowl, whisk together milk, egg substitute, granulated sugar, cinnamon and vanilla extract. Pour half of milk mixture over fruit; top with remaining 8 slices of bread. Pour remaining milk mixture over bread; using a spatula, press top layer of bread slices down to saturate with milk mixture. Cover dish with aluminum foil and bake 20 minutes; uncover dish and bake until egg mixture is set and top is golden brown, about 10 minutes more. Cool slightly before sifting powdered sugar over top. Slice into 8 pieces and serve.</p><p>Makes 8 Servings<br
