<p>Haroset is a traditional Jewish dish that is an integral part of any Passover meal. This Weight Watchers Haroset recipe is crunchy and sweet, and delicious sandwiched between matzo. So you can enjoy all the wonderful flavors and traditions of Passover, and yet still be able to stick to your Weight Watchers Plan. This tasty and traditional Jewish Recipe has just 2 Weight Watcher Points per serving and is loaded with all sorts of nutritional tidbits! Fiber, healthy fats, antioxidants, Vitamin C, Vitamin A, and more! And it&#8217;s much lower in calories than traditional Haroset recipes. <h2><u>Weight Watchers Haroset Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 medium apples, cored and cut into 4 pieces each*<br />
- 8 fl oz sweet dessert wine, Kosher for Passover (1 cup)<br />
- 1 cup raisins, golden-variety, chopped<br />
- 1 cup walnut halves, chopped<br />
- 1 tsp ground cinnamon<br />
- 1/4 tsp ground nutmeg<br />
- 1 tbsp honey</p>
<p>NOTES:<br />
*Four different varieties of apples recommended. </p>
<p>This recipe can be made a day or two ahead. The mixture will turn brown the longer it sits but the flavors really blend well.</p>
<p><strong>Directions:</strong><br />
Shred apples into a large, non-reactive bowl; add remaining ingredients and toss well to coat. Cover and refrigerate for at least one hour. Entire recipe makes 24 servings.</p>
<p>Serving size is 1/3 cup<br />
Each serving = 2 Weight Watchers Points</p>

<h2><span style="text-decoration: underline;">Pineapple &amp; Peppers Chicken Stir Fry Recipe</span></h2>
<p><strong>Ingredients:</strong><br />
- 8 oz skinless, boneless chicken breast, chopped into small chunks or stir fry shaped pieces<br />
- 1 chopped green bell pepper<br />
- 1 chopped red bell pepper<br />
- 1 chopped yellow bell pepper<br />
- 1 chopped orange bell pepper<br />
- 10 oz of canned pineapple tidbits or chunks in their own juice (NOT in syrup), drained; this is about half of a 20oz can<br />
- 1 tbsp Frank&#8217;s Red Hot Sauce<br />
- 1 tsp paprika<br />
- 1 tsp garlic powder<br />
- salt and pepper to taste</p>
<p>**Feel free to add more or less hot sauce as you desire, as it does NOT affect the Points value. I like mine super hot and tangy, so I use about 1/4th cup of the hot sauce ;)</p>
<p><strong>Directions:</strong><br />
Start by spraying a large frying pan with a bit on non-fat cooking spray. Add chicken pieces, garlic, paprika, and salt and pepper, and grill until chicken is cooked through. Then, add pineapples and hot sauce, and cook on Medium for about 5 minutes. Then, add all peppers and stir fry for about 10-12 min, or until peppers are cooked through and softened. Serve immediately. Makes 2 big servings. Enjoy!</p>

- 1 1/4 cup all-purpose flour<br />
- 1/2 cup unpacked brown sugar<br />
- 1/2 tsp table salt<br />
- 1/2 tsp baking soda<br />
- 1/4 tsp baking powder<br />
- 1/2 tsp allspice<br />
- 3 tsp canola oil<br />
- 1 large egg, beaten<br />
- 2 medium egg whites, beaten<br />
- 3 large bananas, ripe<br />
- 1 cup uncooked old fashioned oats</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.<br />
In a smaller bowl, mash bananas with a potato masher or fork. Add bananas and oatmeal to batter.<br />
Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.</p>

<h2><u>Weight Watchers Butternut Squash Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 1/2 pounds butternut squash<br />
- 2 tbsp vegetable oil<br />
- 2 tbsp apple juice<br />
- 2 tbsp apple cider vinegar<br />
- 2 tbsp red onions, chopped<br />
- 1 tsp curry powder<br />
- 1/2 tsp sugar<br />
- 1/4 tsp table salt<br />
- 1/8 tsp black pepper<br />
- 1 tbsp parsley, fresh, chopped</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400°F. Line a baking pan with aluminum foil.<br />
Cut squash in half crosswise where it starts to widen (where the round &#8220;bulb&#8221; meets the &#8220;neck&#8221;). Place both pieces of squash cut side down in prepared pan. Bake until bottom half of squash is just tender when pierced with a fork, about 20 to 25 minutes; remove bottom half from oven and set aside. Bake top half of squash until just tender, about 15 minutes more. Remove from oven and cool.<br />
Meanwhile, combine remaining ingredients in a small bowl; set aside.<br />

<p><strong>Ingredients:</strong><br />
- 3 tbsp fat-free cream cheese<br />
- 1 oz Gorgonzola cheese, about 1/4 cup<br />
- 1/4 pounds endive, Belgian (about 24 Small leaves)<br />
- 3 medium dried figs, stems trimmed and cut into 8 pieces each</p>
<p><strong>Directions:</strong><br />
Blend together cream cheese and Gorgonzola cheese. Top the base of each endive leaf with about 1 teaspoon of cheese mixture and 1 piece of fig. (If you&#8217;re a handy baker, pipe the cheese mixture onto the endives through a pastry bag, for a bit more decorative flare.) Serve and enjoy!</p>

- 4 medium apples<br />
- 1/2 cup unpacked brown sugar<br />
- 1/2 tsp ground cinnamon<br />
- 2 tbsp fresh lemon juice<br />
- 1/4 cups all-purpose flour<br />
- 1/4 cups uncooked old fashioned oats<br />
- 3 tbsp reduced-calorie margarine</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F.<br />
Stir together apples, 1/4 cup of brown sugar, cinnamon and lemon juice; pour into a 1 1/2 quart baking dish.<br />
Cut flour, oatmeal, remaining brown sugar and margarine together with a pastry blender or fork in a medium bowl; sprinkle over apple mixture.<br />
Bake until apples are tender and top is browned, about 45 minutes.</p>
<p>Serving size = 1/2 cup<br />
Each serving = 3 Weight Watchers Points</p>

So, this week, I&#8217;ve decided to share some of my favorite Thanksgiving recipes, made-over to have less calories and fat but still taste delicious. The first in my series of Thanksgiving delights is this amazingly good Weight Watchers Cranberry Sauce recipe. With just 1 Weight Watchers Point per serving, you don&#8217;t need to feel any guilt about indulging in this tasty, low calorie cranberry sauce recipe! Give it a try and serve it up on your Thanksgiving table this year.</p>

<h2><u>Thanksgiving Cranberry Sauce Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 12 oz bag of whole cranberries<br />
- 2/3 cup Splenda No Calorie Sweetener (granulated)<br />
- 1 cup of water<br />
- 1/4 cup granulated white sugar<br />
- 1 dash cinnamon<br />
- 1 dash nutmeg</p>
<p><strong>Directions:</strong><br />
In a medium sized pot, combine water, sugar, and Splenda over high heat until sugar and Splenda have dissolved. Then add bag of cranberries and dash of cinnamon and bring to a boil. When cranberries start to &#8220;pop&#8221;, stir gently and remove from heat. Transfer cranberry sauce into serving dish and place in fridge to chill. </p>
<p>Each serving = 1/2 cup<br />
1 Serving = 1 Weight Watchers Point</p>

<h2><span style="text-decoration: underline;">Minty Mango-Pineapple Smoothie Recipe</span></h2>
<p><strong>Ingredients:</strong><br />
1 cup pineapple, chunks (very ripe and cold)<br />
1 1/2 medium mango(es), or 1 large mango, peeled, pitted and cubed (very cold)<br />
1/2 cup orange juice<br />
1 1/2 cup ice cube(s)<br />
1/4 cup mint leaves, reserve 2 sprigs for garnish</p>
<p><strong>Directions:</strong><br />
Place all ingredients into a blender and blend until slushy. Pour into 2 tall glasses; garnish with mint and serve. Yields 1 1/2 cups per serving.</p>
<p>Serves 2.<br />
Each serving = 3 Weight Watchers Points</p>

<p>With summer coming to an end soon, it&#8217;s time to savor our last days of those delicious and healthy summer fruits. I found this awesome Weight Watchers Baked Stuffed French Toast Recipe and I wanted to share. I made it just this past Sunday and O M G&#8230;..Sooooooooooo delicious! Stuffed French Toast has never tasted so good! The thing I love most is that it&#8217;s so decadent&#8230;you feel like you&#8217;ve just ordered a fancy, gourmet breakfast from some over-priced restaurant. And of course, with just 4 Weight Watchers Points, it&#8217;s a guilt-free breakfast recipe that&#8217;ll knock your socks off.</p>

<h2><u>Peach-Blueberry Stuffed French Toast Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
 16 slice light whole wheat bread (I like Sara Lee Delightful Whole Grain)<br />
 1 cup blueberries, fresh, or 1 cup frozen, thawed blueberries<br />
 1 large peach(es), chopped or 1 cup frozen, thawed peach slices<br />
 2 1/2 cup fat-free skim milk<br />
 2 cup fat-free egg substitute<br />
 2 Tbsp sugar, granulated<br />
 1 tsp ground cinnamon<br />
 1 tsp vanilla extract<br />
 1 Tbsp powdered sugar</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Arrange 8 slices of bread in bottom of a 9 X 13-inch baking dish, squishing slices together to make one layer; sprinkle blueberries and peaches over top. In a medium bowl, whisk together milk, egg substitute, granulated sugar, cinnamon and vanilla extract. Pour half of milk mixture over fruit; top with remaining 8 slices of bread. Pour remaining milk mixture over bread; using a spatula, press top layer of bread slices down to saturate with milk mixture. Cover dish with aluminum foil and bake 20 minutes; uncover dish and bake until egg mixture is set and top is golden brown, about 10 minutes more. Cool slightly before sifting powdered sugar over top. Slice into 8 pieces and serve. </p>
