<p>It&#8217;s no surprise that the creamy dips, greasy chips, fried finger foods, and super-sized sandwiches usually served at Superbowl parties are not diet or health-friendly.  The good news is that with a few recipe makeovers, all the flavors of football can be savored without wreaking havoc on your New Year’s weight-loss resolutions. So today, I&#8217;m sharing one of the YUMMIEST meatball recipes EVER. These Crock Pot BBQ Meatballs are crazy delicious and still pretty low in Points Total. They are a perfect Superbowl party food that will be adored by weight watchers and non-weight watchers alike. They stay nice and warm and moist in your crock pot, and the spicy BBQ sauce adds such a nice flavor to the meat. And with just a 2 Point Total per serving, these make a great appetizer recipe. Or, double the size of your meatballs, and serve it as a main dish recipe! Though not an official one of Weight Watchers Superbowl Recipes, these barbecue meatballs will definitely be a hit with all weight watching Superbowl snackers, and makes a great Superbowl party food idea.</p>

<h2><u>Crock pot BBQ Meatballs Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 1/2 pounds extra lean ground beef<br />
- 1/2  cup uncooked quick oats<br />
- 1/4 cup dry red wine<br />
- 1/4 cup liquid egg whites<br />
- 1 large yellow onion, finely chopped<br />
- 2 garlic cloves, minced<br />
- 1/4  cup fresh parsley, chopped<br />
- 1 tbsp dried oregano<br />
- 1 tbsp Kosher salt<br />
- 1 cup beef broth<br />
- 1/2  tsp black pepper<br />
- 1 1/4  cup BBQ sauce</p>
<p><strong>Directions:</strong><br />
In a large bowl, combine the meat, eggs, garlic, parsley, oregano, onions, salt and pepper. In a small bowl, soften the oats with the wine for 10 minutes Add the oats and wine to the meat mixture and mix well &#8211; you will need to do this with your hands in order to get everything incorporated well. Coat a baking sheet with cooking spray. Shape meatball mixture into sixty 1-inch balls; place on baking sheet.<br />
Bake at 350ºF until cooked through, about 25 minutes. Transfer meatballs to a crock pot to keep warm. Meanwhile, heat barbecue sauce and beef broth over medium-high heat until hot. Pour sauce over cooked meatballs, toss gently and serve. For parties, I just set the crock pot up on the food table, set on warm.</p>

Serving size is 2 meatballs<br />

<p>Its almost that time of year again&#8230;.the day we get together, turn on the TV, and allow ourselves to consume large quantities of super yummy, fattening foods, and lots of beer, in order to celebrate the most anxiously awaited game in the NFL&#8230;the SUPERBOWL!! I love Superbowl parties as much as anyone, but if you&#8217;re not careful, these parties can be a weight watchers nightmare!! So this week, I&#8217;m devoting each day to a different low calorie Superbowl recipes that not only taste good, but will help keep you on track to reaching your weight loss goals. Though these aren&#8217;t official Weight Watchers Superbowl Recipes, they are ideal for anyone who wants healthier, lower calorie versions of their favorite Superbowl snacks. And today, I&#8217;m posting this super rockin&#8217; 2 Point Total Buffalo Chicken Dip Recipe that will knock your socks off! It&#8217;s a very easy Superbowl recipe that will be adored by all, and is a great (and less messy) alternative to serving buffalo wings. Try serving it with some 0 Point veggies (I like celery and green pepper strips the best), or some low points tortilla chips. If you love buffalo flavored anything, this low calorie dip recipe is a must try! </p>

<h2><u>Buffalo Chicken Dip Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 16 oz boneless, skinless chicken breasts<br />
- 1 tsp salt<br />
- 1/2 tsp pepper<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
- 8-oz. fat-free cream cheese, softened<br />
- 1/2 cup fat free sour cream<br />
- 1/2 cup Frank&#8217;s RedHot Original Cayenne Pepper Sauce<br />
- 2 tbsp low calorie butter ( I used Brummel &#038; Brown)<br />
- 1/2 packet of <a href="http://www.amazon.com/gp/product/B000EDM3JO?ie=UTF8&#038;tag=laaloocom-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000EDM3JO" rel="nofollow" target="_blank">Hidden Valley Ranch Dressing Dry Mix</a></p>
<p>NOTE: If you are feeling lazy, you can use two 9.75oz cans of white chicken meat in water (drained), instead of the grilled chicken, but the taste isn&#8217;t nearly as good as using actual grilled chicken breasts.</p>
<p><strong>Directions:</strong><br />
Preheat oven to 325 degrees. Rub chicken breasts with salt, pepper, garlic powder and onion powder. Spray a skillet with non-fat cooking spray, and set on med/high heat. Put in chicken breasts, and cook until brown on both sides and meat is cooked through. Once meat is cooked, cut it up into bite sized shredded chunks. Set aside. In a large, oven safe bowl, stir cream cheese and butter until smooth. Add in chicken and other remaining ingredients, and mix until thoroughly combined. Bake in the oven for about 20-25 minutes, or until dip has heated all the way through.</p>
<p>Entire recipe makes 12 servings<br />
Serving size is approx 1/2 cup<br />
Each serving = 2 Point Total</p>

Combining beef, spinach mushrooms and blue cheese, this quesadilla packs a fabulous punch of flavor and has just 2 Weight Watchers Points per serving and is one of my all time favorite Weight Watcher Recipes!  With just the right amount of heat and tang, this Weight Watchers Spinach and Beef Quesadilla Recipe is sure to be a hit with your Super Bowl party or any other fun get together! It makes a great appetizer recipe too, so try serving it at your next dinner party and impress your guests with it&#8217;s unique flavor combination. </p>

<h2><u>Weight Watchers Beef and Spinach Quesadillas Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1/3 cup cooked lean ground beef<br />
- 3 tbsp taco sauce<br />
- 4 large burrito-size wheat flour tortillas<br />
- 4 oz blue cheese, crumbled<br />
- 10 oz chopped frozen spinach, thawed and squeezed dry<br />
- 1/2 cup sliced mushrooms<br />
- 1/2 tsp red pepper flakes<br />
- 1 tsp cumin<br />
- salt and pepper to taste</p>
<p><strong>Directions:</strong><br />
In a small bowl, stir together beef and taco sauce.<br />
Lay two tortillas on a flat surface and divide beef mixture between them. Sprinkle each tortilla with half of cheese, cumin, mushrooms, spinach and red pepper flakes; top each with a remaining tortilla.<br />
Set a large, heavy nonstick skillet over medium-high heat. Place one quesadilla in skillet and cook until brown spots form on bottom of tortilla, about 3 to 4 minutes; flip and cook until brown spots form again, about 3 to 4 minutes. Remove quesadilla to a large cutting board and cover to keep warm; repeat with remaining quesadilla.<br />
Cut each quesadilla into 8 wedges and serve. </p>
<p>Serving size is 2 quesadilla wedges<br />
Each serving =  2 Weight Watchers Points</p>

<h2><u>Weight Watchers Crispy Chipotle Potato Skins Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 large potatoes, baking-variety, cooked, cooled and quartered lengthwise<br />
- Non-Fat Olive Oil cooking spray<br />
- 1 tsp chili powder, or chipotle chili powder<br />
- 1/4 tsp hot Extra Lean Turkey Bacon (you can also use Bacon Bits if you can’t find the Turkey Bacon)<br />
- 3/4 cups shredded low fat cheddar cheese<br />
- 2 medium tomatoes, diced<br />
- 3 medium scallions, finely chopped<br />
- 3/4 cup low fat sour cream</p>
<p><strong>Directions:</strong><br />
Preheat oven to 425°F. Scoop out flesh of potatoes, leaving a thin layer of potato flesh in potato. (Reserve remaining potato flesh for another use such as mashed potatoes.)<br />
In a small bowl, combine oil, chili powder and hot pepper sauce. Spray insides of potato wedges with nont fat cooking spray. Place potato wedges in a single layer on a large nonstick baking sheet; sprinkle with bacon and cheese.<br />
Bake until cheese melts and potatoes are heated through, about 15 minutes. Sprinkle with tomatoes and scallions; serve with sour cream on the side. Makes 8 servings.</p>
<p>Serving size is 2 potato skins and about 1 1/2 tablespoons of sour cream<br />
Each serving = 4 Weight Watchers Points </p>

<p>It&#8217;s just a few days away from Super Bowl Sunday, and I still have some great Weight Watchers Recipes that are manly enough for the boys to devour, but still easy on your diet! This Jalapeno Popper Recipe is really easy to make and taste so good that no one will have any idea they are eating a low calorie snack! These fabulous baked and battered little bacon wrapped jalapeno poppers are the perfect Super Bowl Recipe to share on game day. They are low on calories, but high in flavor and are sure to be a huge hit! There is such a nice variety of flavor layers in this recipe and they all coinside together perfectly. I&#8217;ve had the traditional fried jalapeno poppers before, but when I tried this baked version of bacon wrapped poppers, I thought I&#8217;d died and gone to heaven! Not only did it taste better than the fried, but it was waaaaay lower in fat and calories, so I could really enjoy them! With just 3 Weight Watchers Points per serving, this Bacon Wrapped Jalapeno Popper Recipe is a must have for your Super Bowl party menu!</p>

<h2><u>Weight Watchers Jalapeno Poppers Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 sprays non fat olive oil cooking spray<br />
- 2 oz light cream cheese<br />
- 1/2 cup low-fat shredded cheddar cheese<br />
- 1 tbsp fat-free mayonnaise<br />
- 8 small jalapeno peppers<br />
- 1/4 cup fat-free egg substitute<br />
- 1 cup Fiber One Cereal (ground to breadcrumb like consistency)<br />
- 1 tsp Kosher salt<br />
- 1/2 tsp pepper<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder<br />
-  16 slices <a href="http://www.jennieo.com/products/BreakfastMeats/ExtraLeanTurkeyBacon.aspx"rel="nofollow" target="_blank" >Jennie-O Extra Lean Turkey Bacon</a></p>
<p><strong>Directions:</strong><br />
Preheat oven to 350ºF. Coat a large baking sheet with cooking spray.<br />
In a medium bowl, combine cream cheese, cheddar cheese and mayonnaise; mix well and set aside. Halve jalapenos lengthwise and remove seeds. (Oil and seeds from the peppers can be irritating — wear gloves or put plastic bags over your hands. And don’t rub your eyes.) Stuff jalapeno halves with cream cheese mixture.<br />
Place egg substitute in a shallow dish. Place Fiber One crumbs in a separate shallow dish, and mix in salt, pepper, garlic powder, and onion powder. Dip stuffed jalapeno halves into egg substitute and then roll in Fiber One crumbs to coat. Then wrap one slice of bacon around popper, similar to how it appears in this photo: </p>

Bake until filling is bubbly, about 30 minutes. Serve hot. Recipe makes 16 Bacon Wrapped Jalapeno Poppers.</p>

<h2><u>Weight Watchers Buffalo Chicken Wings Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 spray olive oil cooking spray, or enough to coat sheet<br />
- 12 oz uncooked skinless chicken wings<br />
- 1 1/4 oz Old El Paso Taco Seasoning Mix, or similar product<br />
- 1 cup Frank’s Red Hot Sauce<br />
- 1/2 cup fat-free sour cream<br />
- 2 tbsp blue cheese, or gorgonzola, crumbled<br />
- 2 tbsp fat-free skim milk<br />
- 4 medium stalks celery, cut into 2-inch pieces</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.<br />
Dip wings in Frank’s Red Hot Sauce. Then, place chicken wings in a zip-close plastic bag, add taco seasoning, seal bag and shake to coat. Transfer wings to prepared baking sheet and bake until cooked through, about 18 to 20 minutes.<br />
Meanwhile, to prepare dip, whisk together sour cream, cheese and milk.<br />
Serve wings with dip and celery on the side. Recipe makes 4 servings. </p>
<p>Serving size is 3 wings, 3 tablespoons of dip and 1 celery stalk<br />
