<p>This delicious tangy Thai Cucumber Salad Recipe is a fabulous, 0 Points Total dish that&#8217;s super easy to make, yet is a unique substitute for traditional salads. It&#8217;s a tasty side dish recipe that was given to me by another Weight Watchers member, and I&#8217;m so glad I gave it a try! All the ingredients have 0 Weight Watchers Points, so each serving would have to be pretty big in order to rack up any Points. This can be eaten alone as a salad, or makes a wonderful garnish or topping for healthy meat recipes. If you want a good low calorie salad to add to your Weight Watchers Salad Recipes repertoire, this is one to consider!</p>

<h2><u>Low Calorie Thai Cucumber Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 6 regular sized cucumbers, thinly sliced<br />
- 1/2 cup white vinegar<br />
- 1/2 cup water<br />
- 1/2 cup Splenda (the kind in the box for baking, not the packets)<br />
- 1 tsp salt<br />
- 1/4 cup thinly sliced shallots<br />
- 1/4 cup coarsely chopped red onion<br />
- 2 tbsp sliced fresh hot red or green chilies (use more if you like it spicy!)</p>
<p>**You can peel the cumbers if you prefer, but I left the skin on on for more flavor and texture.</p>
<p><strong>Directions:</strong><br />
Combine vinegar, water, spelnda and salt and boil until Splenda and salt are dissolved. Remove from heat, cool to room temp.<br />
In a large bowl, combine cucumbers, shallots, red onion and chilies. Add cooled vinegar mixture and toss. Enjoy!</p>

But, since today is Fabulous Food Find Friday, I had to find a moment or two to mention these rockin&#8217; 0 Point Total popsicles from none other than Crystal Light! It&#8217;s starting to get pretty darn hot outside these days, and I&#8217;ve been super psyched to hit the freezer aisle at the supermarket to see what new low calorie frozen treats are in store. And when I came across these 15 calorie popsicles, I was so excited to give them a try!</p>

<p>If you like Crystal Light drink mixes, you&#8217;ll go bonkers for their delicious new popsicles! They are the perfect cool down treat, with absolutely ZERO guilt. A great diabetic dessert option as well! They come in super yummy flavors like: Lemonade, Pink Lemonade, Peach Iced Tea, Classic Orange, Cherry Pomegranate, and more! You can eat up to 3 of these frozen treats and STILL have it be zero Points Total! Woo Hoo!!! This is a great snack for any Weight Watcher. Being on Weight Watchers myself, these are going to be my savior this summer. In a medium sized bowl, combine all ingredients.</p>

- 1 tsp fresh lemon juice<br />
- 1/2 cup chopped scallions<br />
- 1/4 cup chopped flat-leaf parsley</p>
<p>** You can add more salt and pepper to suit your taste<br />
** Feel free to throw in some other 0 point veggies to jazz it up. I loved it with tomatoes added!</p>

Loaded with fiber, antioxidants and tons of vitamins, this naturally fat free spaghetti squash has 0 Weight Watchers Points. It&#8217;s a large, intimidating looking, watermelon shaped squash that often goes overlooked at the grocery store, but don&#8217;t pass it by next time! Instead, pick one up and try it grilled or baked and prepared like this recipe, eaten alone, or try substituting it for spaghetti or pasta noodles and top with a low Point marinara or Alfredo sauce! You can also drizzle it with some low calorie butter or reduced fat cheese as well! <h2><u>Weight Watchers Baked Spaghetti Squash Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 ripe spaghetti squash<br />
- Non-fat cooking spray<br />
- Kosher or salt and fresh pepper to taste<br />
- 1 tsp paprika<br />
- 1 tsp garlic powder<br />
- 1 tsp onion powder</p>
<p><strong>Directions:</strong><br />
Cut the squash in half lengthwise, scoop out the seeds and fibers with a spoon. Place on a baking sheet, cut side up, spray lightly with the non-fat cooking spray, and sprinkle with salt, pepper, paprika, onion powder, and garlic powder. Bake at 350° about an hour or until the skin gives easily under pressure and the inside is tender. Remove from oven and let it cool 10 minutes. Using a fork, scrape out the squash flesh a little at a time. It will separate into spaghetti-like strands. Place in a serving dish and serve hot. Total servings per recipe will vary depending on squash size.</p>

<p>Soup is such a great food to eat at this time of year, as it&#8217;s so warm and comforting and it&#8217;s a great meal to have on those cold, snowy days. Being an avid Weight Watcher, I am always on the look out for healthy, low calorie soup recipes that will taste great and have as few Weight Watchers Points as possible. And this Mexican Weight Watchers Soup Recipe certainly fit the bill! It has zero Points, is loaded with fiber and vitamins, and tastes amazing!! I usually make the whole recipe and then freeze individual servings of it, so I can just take it out and easily reheat it anytime I&#8217;m too lazy to prepare another meal, or anytime I&#8217;m craving some yummy soup! It&#8217;s also the perfect vegetarian recipe and vegan recipe to serve up to anyone with dietary restrictions. So the next time you are thinking about giving in to your Mexican food craving and driving through the nearest Taco Bell, so yourself a favor and give this delicious 0 Point Soup Recipe a try instead!</p>

<h2><u>Mexican Style Weight Watchers 0 Points Soup Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 2 cups fresh green snap beans, cut into bite-size pieces<br />
- 3 cloves fresh garlic, minced<br />
- 2 small zucchini, cubed<br />
- 1 cup tomatillos, chopped<br />
- 1 medium jalapeno pepper, finely chopped<br />
- 14 oz canned diced tomatoes, Mexican-style preferred<br />
- ½ medium poblano chili pepper<br />
- 1 medium Spanish onion, chopped<br />
- 1 medium green pepper, chopped<br />
- ½ tsp cumin<br />
- 1 tsp fresh oregano<br />
- 6 cups vegetable broth<br />
- 2 roasted red peppers packed in water<br />
- 1 Tbsp chipotle peppers in adobo sauce<br />
- ¾ tsp salt<br />
- 2 Tbsp fresh lime juice<br />
- ½ cup fresh, chopped cilantro </p>
<p><strong>Directions:</strong><br />
Put snap beans, garlic, zucchini, tomatillos, jalapeno, diced tomatoes, green chili pepper, onion, green pepper, cumin, oregano and vegetable broth into a large soup pot. Puree roasted peppers with chipotle in adobo sauce in a blender or food processor, and add to soup; stir to combine. Cover and bring to a boil over high heat. Reduce heat to low, and simmer, partly covered, for about 10 minutes. Stir in salt, lime juice and cilantro. Serve and enjoy! Makes 12 servings.</p>

<p>This side dish recipe is an old standby of mine. Probably because it&#8217;s SO fast, SO easy and is SO incredibly delicious! Plus, it is loaded with healthy vitamins, minerals and antioxidants and boasts 0 Weight Watchers Points per serving. Each time I make it, I&#8217;m really amazed at how incredibly flavorful the peppers are with barely any other ingredients added to them. If you want a quick, easy and super healthy, low calorie side dish recipe that is so beautifully colorful, it will surely jazz up the aesthetics of your meal, this is one recipe you MUST try! This also makes a wonderful vegetarian recipe or even vegan recipe for all your friends who don&#8217;t eat food with faces. :)</p>

<h2><u>Roasted Bell Peppers Side Dish Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
8 large bell peppers (2 green, 2 red, 2 orange, 2 yellow)<br />
Non-Stick Fat Free Cooking Spray (I like Trader Joe&#8217;s Olive Oil Cooking Spray)<br />
1 tbsp Kosher Salt </p>
<p><strong>Directions:</strong><br />
Preheat oven to broil. Spray a large cookie sheet with non-stick cooking spray. Wash and clean peppers and then cut off stems and remove insides. Slice peppers into thin, 1/4&#8243; rings. In a large mixing bowl, toss pepper rings while spritzing them with the non-stick cooking spray. Make sure all the pepper rings are lightly, but thoroughly coated. Then toss in the kosher salt and make sure all the pepper rings are salted. I like mine a bit salty, but you can feel free to use as little or as much salt as you want. Scatter pepper rings evenly onto cookie sheet and broil until edges of pepper rings begin to blacken (approximately 20 minutes). Remove cookie sheet from over and using tongs, toss the pepper rings around a bit so that they can all cook evenly. Return to over and broil for another 10 &#8211; 15 minutes. Remove from oven and let cool 5 minutes. Enjoy!</p>

<p><strong>Ingredients:</strong><br />
1 cup cherry tomato(es), about 10, cut in half<br />
1 1/2 pound asparagus, (about 40 spears)<br />
2 tsp orange juice<br />
1 Tbsp balsamic vinegar<br />
2 Tbsp shredded Parmesan cheese<br />
1 tsp minced garlic<br />
1/8 tsp black pepper, or to taste<br />
1/8 tsp table salt, or to taste</p>
<p><strong>Directions:</strong><br />
Chop woody ends off asparagus. Microwave for 2 to 3 minutes, or cook in boiling, salted water until barely tender, about 4 to 6 minutes. Plunge into ice water to stop cooking. Drain. Add cherry tomatoes. Stir together vinegar, orange juice and garlic; season to taste. Spoon dressing over asparagus and tomatoes. Sprinkle with Parmesan cheese. </p>

<h2><u>Cumin Tomato Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
6 fresh, ripe, medium sized tomatoes<br />
1/2  tsp olive oil<br />
2 1/2 tbsp of balsamic vinegar<br />
1/2 tsp fresh black pepper<br />
1 tsp salt<br />
1 tbsp cumin<br />
Splash of fresh squeezed lemon juice</p>
<p>*Feel free to play around with seasonings until you get the flavor you like. Just make sure not to use more olive oil, as that will increase the Weight Watchers Points value.</p>
<p><strong>Directions:</strong><br />
After thoroughly washing the tomatoes, julienne them into thick strips. In a separate bowl, combine balsamic vinegar, olive oil, lemon juice, salt, and pepper. Pour over tomatoes. Add cumin to salad, and toss.</p>
<p>Serves 6.<br />

I made this tasty dish using the super fabulous zero calorie Miracle Noodles that I discovered not too long ago. This pasta salad recipe, which is served cold, is great to take to a picnic or barbeque party, and makes a fantastic side dish for many different meats and poultry dishes. It’s easy to prepare, delicious and has barely any calories! </p>

<h2><u>Miracle Noodle Spicy Pasta Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
2 packages of the <a href="http://www.laaloosh.com/miracle-noodle/zero-calorie-pasta" rel="nofollow" target="_blank">Miracle Noodle</a> pasta of your choice (I used the fettuccini noodles)<br />
2 tablespoons vinegar<br />
1 cup sliced celery<br />
1/2 cup of cherry tomatoes, sliced into halves<br />
1 tablespoon prepared mustard ( I chose a Dijon mustard, like Grey Poupon)<br />
1/2 cup chopped red pepper<br />
1 teaspoon salt<br />
1/4 cup chopped red onion<br />
1/8 teaspoon pepper</p>
<p><em>*You can create many variables of this recipe by adding in shrimp, bacon bits, chicken or different veggies. But if you do, just remember to add in the appropriate points!</em></p>
<p><strong>Directions:</strong><br />
In a large bowl, mix vinegar, mustard, salt and pepper until smooth. Add Miracle Noodle pasta, celery, tomatoes, green pepper and red onion. Toss to coat well. Refrigerate covered for at least two hours to blend flavors. Enjoy!</p>
