And it&#8217;s taken every ounce of discipline I have to keep myself from to the nearest Marie Callender&#8217;s and buying one. Even though lower in PointsPlus than most other pies, a slice of Lemon Meringue can still rack up the PointsPlus. The average slice has around 12-15 PointsPlus. Not exactly crazy, but definitely not a bargain. But by making a few small, healthier changes in a traditional lemon meringue pie recipe, I was able to trim off a few Points +, making each serving of 1 slice, just 8 Points +. Not bad for a dessert that truly tastes rich and decadent (this isn&#8217;t a pie made with Splenda and Fiber One, people!). Most of the other low calorie lemon meringue pie recipes I found online just sacrificed too much flavor, and/or used a lot of artificial sweetener, which I am not a fan of. When I want pie, I want PIE&#8230;.not something that tastes like chemicals served on cardboard. When the taste is good, it makes me feel satisfied, and I&#8217;m less likely to go eating something else because my need for fabulous pie wasn&#8217;t met. So, if you are looking for a tasty, yet much more Weight Watchers friendly pie recipe for dessert this weekend, give this one a try, and enjoy the light &#038; lemony flavors &#8212; they are HEAVENLY!</p><p><span

It&#8217;s fresh, lemony, sweet, and full of all the deliciousness that you&#8217;d expect from a traditional Lemon Meringue Pie Recipe, but with just 8 Points + per slice. Not a bad bargain for such a decadent dessert.</em></p><div

class="ingredients"><strong>- Crust</strong><li
class="ingredient">1 cup whole wheat all-purpose flour</li><li
class="ingredient">1/4 teaspoon salt</li><li
class="ingredient">1 tbsp sugar</li><li
class="ingredient">1 tbsp light butter, melted (I used Brummel &#038; Brown)</li><li
class="ingredient">3 tbsp applesauce</li><li
class="ingredient">1-2 tbsp ice water</li><p><strong>- Filling</strong><li
class="ingredient">1 1/4 cups sugar</li><li
class="ingredient">1/4 cup liquid egg substitute (like Egg Beaters)</li><li
class="ingredient">1 large egg white</li><li
class="ingredient">1/4 cup cornstarch</li><li
class="ingredient">1/2 cup freshly squeezed lemon juice</li><li
class="ingredient">1 1/2 cups boiling water</li><li
class="ingredient">1/4 tsp salt</li><li
class="ingredient">2 tbsp freshly grated lemon zest</li><p><strong>- Meringue</strong><li
class="ingredient">2 tbsp light butter (I used Brummel &#038; Brown)</li><li
class="ingredient">3 large egg whites</li><li
class="ingredient">1/2 cup sugar</li><li
class="ingredient">1 tsp vanilla extract</li><li
class="ingredient">1/4 tsp cream of tartar</li><li

class="instructions"><h4 class="instructions">Instructions</h4><ol
class="instructions"><li>To make crust: Set oven rack at lowest level; preheat oven to 425°F. Stir together flour, 1 tablespoon sugar and 1/4 teaspoon salt in a medium bowl.</li><li>In a small bowl, combine the melted butter and applesauce. Slowly stir this mixture into the flour with a fork until the mixture is crumbly. Gradually stir in enough ice water so that the dough will hold together in a ball. Press the dough into a flattened disk.</li><li>Place the dough between two sheets of plastic wrap and roll into a circle about 12 inches in diameter. Remove the top sheet and invert the dough over a 9-inch pie plate. Remove the remaining wrap.</li><li> Fold the edges under at the rim and crimp.</li><li>Line the shell with a piece of foil or parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights or beans, and continue to bake until the crust is golden, 8 to 10 more minutes. Cool the pie shell on a rack while you make the filling.</li><li>Reduce the oven temperature to 350°.</li><li>To make filling: Whisk together 1 1/4 cups sugar, cornstarch and 1/4 teaspoon salt in a medium heavy saucepan. Gradually whisk in boiling water.</li><li>Place the saucepan over medium-high heat and bring to a boil, whisking constantly. Reduce heat to medium-low and cook, stirring, for 1 minute. Remove from the heat.</li><li>Whisk together lemon juice, zest, egg substitute and 1 egg white in a small bowl. Whisk a small amount of the hot mixture into the egg mixture, then whisk this mixture back into the hot sauce.</li><li>Return to a simmer over medium heat, stirring, then cook for an additional 30 seconds. Stir in the butter until melted and pour into the baked pie shell. Set aside while you prepare meringue.</li><li>To make meringue: Beat 3 egg whites in a large bowl with an electric mixer on medium speed until frothy.</li><li>Add the cream of tartar and pinch of salt and beat at high speed until soft peaks form.</li><li>Slowly add 1/2 cup sugar, beating constantly, until the mixture holds stiff, shiny peaks.</li><li>Beat in the vanilla.</li><li>Spread the meringue over the hot filling, sealing to edge of crust. Make attractive peaks with a metal spatula, knife or the back of a spoon.</li><li>Bake until the top is lightly browned, about 15 minutes. class="ingredient">3 cups raspberries, fresh or frozen (thawed)</li><li
class="ingredient">1/2 cup granulated sugar</li><li
class="ingredient">2 large egg whites, at room temperature</li><li
class="ingredient">1/2 teaspoon cream of tartar</li><li
class="ingredient">1/4 tsp salt</li><li
class="ingredient">1/4 tsp vanilla extract</li><li
class="ingredient">2 tbsp lemon juice</li></ul></div><div
class="instructions"><h4>Instructions</h4><ol
class="instructions"><li>Preheat oven to 350°F. Coat a 9-inch pie pan with cooking spray.</li><li>To prepare crust: Process cookies, confectioners&#8217; sugar, milk and butter in a food processor until finely ground.</li><li>Press the mixture into the bottom and up the sides of the prepared pan, creating an even, dense crust. Bake for 12 minutes.</li><li>Cool on a wire rack to room temperature, about 1 hour, pressing any puffed parts of the crust back into the pan.</li><li>To prepare filling: Meanwhile, puree raspberries, vanilla extract, lemon juice and salt in a blender or food processor until smooth.</li><li>Strain through a fine-mesh sieve into a medium bowl, pressing with a rubber spatula to extract the juice; discard seeds.</li><li>Bring 1 inch of water to a slow simmer in a large saucepan. Combine egg whites, granulated sugar and cream of tartar in a 3-quart stainless-steel bowl. Beat with an electric mixer on medium speed until foamy.</li><li>Set the bowl over the simmering water and continue to beat on medium speed, moving the mixer around, until the mixture is glossy and thick, about 3 1/2 minutes. Increase the speed to high, and continue beating over the simmering water until very stiff and glossy, about 3 1/2 minutes more (the eggs will be at a safe temperature, 160°F, at this point).</li><li>Remove from the heat and continue beating on medium speed until room temperature, 3 to 5 minutes.</li><li>Fold the raspberry puree into the meringue until combined.</li><li>Pour the raspberry filling into the pie crust.</li><li>Place the pie on a level surface in your freezer and freeze until solid, at least 6 hours.</li><li>To serve, let the pie stand at room temperature until softened slightly, about 10 minutes, before slicing. /> - 1 tbsp light butter, melted<br
/> - 1/2 tbsp canola oil<br
/> - Pinch of salt<br
/> - 2 cups fresh blueberries<br
/> - 8 oz reduced-fat cream cheese, softened<br
/> - 1/4 cup fat free vanilla flavored Greek yogurt<br
/> - 1/4 cup pure maple syrup, Grade A</p><p><strong>Directions: </strong><br
/> Preheat oven to 325°F.<br
/> Coarsely chop walnuts in a food processor. Add graham cracker crumbs and process until the mixture looks like fine crumbs.<br

However, if I want to stay on track with my Weight Watchers Points Range, I needed to seek out a lower calorie version of this popular, yet simple dessert recipe. Thanks to Aimee&#8217;s Adventures, I found this delicious Butterfinger Pie Recipe! I altered her version a bit to make it a little bit more Weight Watchers friendly, but it still tastes fabulous. /> - 1 tub Fat Free Cool Whip, 8 oz<br

/> - 1/4 cup Hershey&#8217;s Light Chocolate Syrup<br
/> - 1/4 cup Smucker&#8217;s Sugar Free Caramel Topping</p><p><strong>Directions:</strong><br
/> Very lightly spray an 8 x8” glass dish or pan with butter flavored non-fat cooking spray. Line the bottom with the graham cracker sheets into the bottom. Mix together the whipped topping with half of the crushed Butterfinger. Spread the cool whip mixture over the graham crackers. Drizzle both the chocolate syrup and caramel syrup on top of the whipped topping. Sprinkle the remaining half of the Butterfinger on top. Freeze for at least 4 hours. /> - 1 tbsp packed light brown sugar<br
/> - 1 tsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)</p><p>For the pie filling:<br
/> - 1 1/4 cup canned pumpkin<br
/> - 2 large egg whites<br
/> - 1 large egg<br
/> - 2 tbsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)<br
/> - 2 tsp pumpkin pie spice<br
/> - 1/2 cup dark brown sugar<br
/> - 1/4 tsp table salt<br
/> - 1/2 cup fat-free evaporated milk<br
/> - Top with a dollop of Fat-Free Reddi-Whip whipped cream</p><p><strong>Directions:</strong><br
/> Preheat oven to 350 degrees.</p><p>In a food processor, combine graham crackers and light brown sugar, and process into fine crumbs. In a small bowl, combine the crumbs and the melted butter, and pancake syrup, and mix with hands. Then transfer to an ungreased 9” pie pan, and distribute crust mixture evenly, pressing it against the pan with your hands. Put in the fridge and chill for 40 minutes. Then, bake about 8-10 minutes, or until the pie crust starts to turn that yummy golden brown.</p><p>In a large bowl, whip egg whites into a soft peak, using an electric mixer. Fold in remaining ingredients (except the whipped cream). Beat the mixture until smooth, creamy and lump free, and pour into your pie shell. Bake for about 45-50 minutes, or until a knife inserted in the center comes out clean. Let cool for 5-10 minutes. Cut into 8 even slices and top with a nice dollop of the Fat Free Whipped Cream. Once everything has been folded into one meringue looking batch, evenly spread onto top of pie, creating small peaks and mounds for an aesthetic look. /> 1/2 cup(s) reduced-fat peanut butter*<br
/> 4 oz light cream cheese<br
/> 4 oz fat-free cream cheese<br
/> 12 oz fat-free sweetened condensed milk<br
/> 2 tbsp fresh lemon juice<br
/> 1 cup(s) lite whipped topping, thawed if frozen<br
/> 5 tbsp mini chocolate chips, divided<br
/> 1 tbsp Hershey&#8217;s Chocolate Syrup<br
/> 6 oz reduced fat pie crust</p><p>*You can save even more Points in this recipe by substituting the peanut butter with &#8220;<a
href="http://www.betternpeanutbutter.com/">Better&#8217;n Peanut Butter</a>&#8220;, which you can find at Trader Joe&#8217;s or other health food stores. The taste is still very good, but it does a <em>little</em> different that the reduced fat peanut butter. /> In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips. Spoon peanut butter mixture into prepared pie crust; sprinkle remaining 1 tablespoon of chocolate chips over top. Drizzle with chocolate syrup.  Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 10 pieces and serve.
