<p>Ok, I need to be honest about my occasional need for the desire to eat something that has absolutely no nutritional value, but tastes insanely good. And sugary, Frozen Butterfinger Pie falls into that category. I mean, really, who doesn&#8217;t love Butterfingers!?!?! And whoever decided to put it into a pie is a flippin&#8217; genius. However, if I want to stay on track with my Weight Watchers Points Range, I needed to seek out a lower calorie version of this popular, yet simple dessert recipe. Thanks to Aimee&#8217;s Adventures, I found this delicious Butterfinger Pie Recipe! I altered her version a bit to make it a little bit more Weight Watchers friendly, but it still tastes fabulous. Though this isn&#8217;t an official one of Weight Watchers Dessert Recipes, I think it&#8217;s a great dessert idea for anyone who is watching their Points but has a SERIOUS sweet tooth (and Butterfinger craving)!</p>

<h2><u>Butterfinger Pie Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 4 low fat graham cracker sheets<br />
- 1 tub Fat Free Cool Whip, 8 oz<br />
- 1 Butterfinger Candy Bar (2 oz), crushed<br />
- 1/4 cup Hershey&#8217;s Light Chocolate Syrup<br />
- 1/4 cup Smucker&#8217;s Sugar Free Caramel Topping</p>
<p><strong>Directions:</strong><br />
Very lightly spray an 8 x8” glass dish or pan with butter flavored non-fat cooking spray. Line the bottom with the graham cracker sheets into the bottom. Mix together the whipped topping with half of the crushed Butterfinger. Spread the cool whip mixture over the graham crackers. Drizzle both the chocolate syrup and caramel syrup on top of the whipped topping. Sprinkle the remaining half of the Butterfinger on top. Freeze for at least 4 hours. Cut into 8 equally sized pieces.</p>

<p>With all the food filled holidays just around the corner, it&#8217;s time to start stocking up your arsenal of delicious, yet low calorie Weight Watchers Thanksgiving Recipes and Weight Watchers Christmas Recipes. And with Thanksgiving being the first in the lineup, we&#8217;ve got one tough holiday feast to conquer! And this delicious Thanksgiving Pumpkin Pie Recipe is a great dish to add to your lineup of low calorie Thanksgiving recipes! Creamy and delicious, this dessert recipe uses a light graham cracker crust instead of the traditional pie crust recipe. In my opinion, I think it actually tastes better and it helps us cut a lot of calories and Weight Watchers Points from this dish. </p>

<h2><u>Low Calorie Pumpkin Pie Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
For the crust:<br />
- 4 oz reduced-fat cinnamon graham crackers<br />
- 2 Tbsp light butter, melted (I suggest Brummel and Brown)<br />
- 2 large egg white<br />
- 1 Tbsp packed light brown sugar<br />
- 1 tsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)</p>
<p>For the pie filling:<br />
- 1 1/4 cup canned pumpkin<br />
- 1 large egg<br />
- 2 tbsp light Pancake Syrup (I used  Aunt Jemima Butter Light Syrup)<br />
- 2 tsp pumpkin pie spice<br />
- 1/2 cup dark brown sugar<br />
- 1/4 tsp table salt<br />
- 1/2 cup fat-free evaporated milk<br />
- Top with a dollop of Fat-Free Reddi-Whip whipped cream</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350 degrees.</p>
<p>In a food processor, combine graham crackers and light brown sugar, and process into fine crumbs. In a small bowl, combine the crumbs and the melted butter, and pancake syrup, and mix with hands. Then transfer to an ungreased 9” pie pan, and distribute crust mixture evenly, pressing it against the pan with your hands. Put in the fridge and chill for 40 minutes. Then, bake about 8-10 minutes, or until the pie crust starts to turn that yummy golden brown.</p>
<p>In a large bowl, whip egg whites into a soft peak, using an electric mixer. Fold in remaining ingredients (except the whipped cream). Beat the mixture until smooth, creamy and lump free, and pour into your pie shell. Bake for about 45-50 minutes, or until a knife inserted in the center comes out clean. Let cool for 5-10 minutes. Cut into 8 even slices and top with a nice dollop of the Fat Free Whipped Cream. Enjoy!</p>

- 2 tbsp fresh lemon juice<br />
- 1/4 cups all-purpose flour<br />
- 1/4 cups uncooked old fashioned oats<br />
- 3 tbsp reduced-calorie margarine</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F.<br />
Stir together apples, 1/4 cup of brown sugar, cinnamon and lemon juice; pour into a 1 1/2 quart baking dish.<br />
Cut flour, oatmeal, remaining brown sugar and margarine together with a pastry blender or fork in a medium bowl; sprinkle over apple mixture.<br />
Bake until apples are tender and top is browned, about 45 minutes.</p>

- 1 tsp ground cinnamon<br />
- 1 tsp ground ginger<br />
- 1 tsp cornstarch<br />
- 1/8 tsp table salt<br />
- 1 1/2 cups canned pumpkin<br />
- 1 1/2 cups fat-free evaporated milk<br />
- 1/2 cups fat-free egg substitute<br />
- 1 tsp vanilla extract</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350°F. Lightly coat a 9-inch round pie pan with cooking spray.<br />
Cut phyllo sheets in half. Place 1 sheet in prepared pan and lightly coat with cooking spray. Top with another sheet of phyllo, placing corners just to the right of the previous sheet&#8217;s corners. Repeat with remaining sheets to form a circle. Press layered phyllo into pan and roll in edges. Bake until lightly browned, about 10 minutes.<br />
Whisk together brown sugar, spices, cornstarch and salt in a large bowl. Whisk together pumpkin, evaporated milk, egg substitute and vanilla in a medium bowl. Gradually whisk wet ingredients into dry ingredients.<br />

- 1 banana<br />

- 1 cup liquid egg whites<br />
- 1 tbsp sugar<br />
- 1 tsp vanilla extract</p>
<p><strong>Directions:</strong><br />
Prep the sweet potatoes and transfer to a large pot, add water to barely cover. Cover and bring to a boil, let cook until the potatoes are soft, about 20 minutes. Drain. When the potatoes are nearly cooked, puree the banana in a food processor. Add the hot sweet potatoes, butter, lemon juice, salt, nutmeg, and Splenda packets. Mash together until well blended. Transfer to a pie dish lightly sprayed with a non-fat cooking spray. Bake at 350F for about 15 &#8211; 20 minutes or until heated well through. Remove from oven and let cool about 15 min.</p>
<p>For the topping, start by beating liquid egg whites, vanilla extract and sugar to a soft peak. Then, in a separate bowl mix <a href="http://www.laaloosh.com/jet-puffed/marshmallow-creme"rel="nofollow"  target="_blank">Jet-Puffed Marshmallow Creme</a><img style="border:none !important; margin:0px !important;" src="http://www.assoc-amazon.com/e/ir?t=laaloocom-20&amp;l=as2&amp;o=1&amp;a=B000E1BKJU" border="0" alt="" width="1" height="1" /> with 1 part of the soft peaked egg white mixture with a wire whisk, until well blended and marshmallow creme has softened up. Then, beat remaining egg white mixture to a stiff peak and SLOWLY fold into marshmallow mixture in 2 parts. Once everything has been folded into one meringue looking batch, evenly spread onto top of pie, creating small peaks and mounds for an aesthetic look. Bake in oven on 350 degrees for about 15 min or until marshmallow/egg white layer turns a soft golden brown. Serve fresh from oven. Enjoy!</p>

Surely, there had to be a way to make this dream a reality without destroying my diet efforts. And where there&#8217;s a will, there&#8217;s a way! I found this amazing dessert recipe through Weight Watchers and I have to honestly say, this pie recipe is SO good that I CANNOT believe it&#8217;s Weight Watchers recipe!! It&#8217;s so rich and creamy, even just a few bites will satisfy you. This pie is a fabulous dessert to take to a potluck or dinner party, because it&#8217;s so delicious, that I guarantee you that no one will know it&#8217;s a low calorie recipe.</p>

<h2><span style="text-decoration: underline;">Weight Watchers Chocolate Chip Peanut Butter Pie Recipe</span></h2>
<p><strong>Ingredients:</strong><br />
1/2 cup(s) reduced-fat peanut butter*<br />
4 oz light cream cheese<br />
4 oz fat-free cream cheese<br />
12 oz fat-free sweetened condensed milk<br />
2 tbsp fresh lemon juice<br />
1 cup(s) lite whipped topping, thawed if frozen<br />
5 tbsp mini chocolate chips, divided<br />
1 tbsp Hershey&#8217;s Chocolate Syrup<br />
6 oz reduced fat pie crust</p>
<p>*You can save even more Points in this recipe by substituting the peanut butter with &#8220;<a href="http://www.betternpeanutbutter.com/" rel="nofollow" >Better&#8217;n Peanut Butter</a>&#8220;, which you can find at Trader Joe&#8217;s or other health food stores. The taste is still very good, but it does a <em>little</em> different that the reduced fat peanut butter. Though, this substitution will save you 2 Weight Watchers Points per serving!</p>
<p><strong>Directions:</strong><br />
In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips. Spoon peanut butter mixture into prepared pie crust; sprinkle remaining 1 tablespoon of chocolate chips over top. Drizzle with chocolate syrup.  Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 10 pieces and serve. Now drift off into creamy, chocolatey, peanut buttery goodness!</p>

And since I’m a big apple pie fan, I was determined to find a tasty, low calorie apple recipe that would be low in Weight Watchers Points, but still delicious enough to impress my dinner guests. I hit the jackpot with this one! Part apple pie recipe, part apple cobbler recipe, this dessert is a must for fall parties and dinners. Only 4 Weight Watchers Points per slice! Woo hoo!!</p>

<h2><u>Apple Pie Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
4 medium apple(s), McIntosh, peeled and thinly sliced<br />
3 Tbsp reduced-calorie margarine, chilled and cut up in small chunks<br />
1 cup all-purpose flour<br />
2 Tbsp water, or more if necessary<br />
1/3 cup uncooked old fashioned oats<br />
2 tsp sugar<br />
1 Tbsp cornstarch<br />
2 Tbsp reduced-calorie margarine, melted<br />
5 Tbsp all-purpose flour<br />
1/4 cup sugar<br />
1/2 tsp ground cinnamon<br />
2 Tbsp sugar</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Start by making the crust. First, in a large mixing bowl or a food processor, combine 2 teaspoons of sugar and 1 cup of flour. Add 3 tablespoons of chilled, reduced calorie margarine and process until mixture looks crumbly, like coarse meal. If you don’t have a food processor, just use your fingers. Then start to mix in cold water, one tablespoon at a time, and mix well forming a dough. Using a rolling pin, flatten dough in a circle a bit larger than a9-inch pie pan. Press dough into the bottom and up the sides of the pie pan.<br />
Next, make the filling. To do this, combine 1/4 cup of sugar, apples, cinnamon and cornstarch in a large bowl; add in the apple slices and toss to coat. Place mixture in prepared piecrust.<br />
Finally, make the topping by mixing 2 tablespoons of sugar, melted margarine, 5 tablespoons of flour, 2 tablespoons of sugar and oats in a small bowl; scatter over apples.</p>
<p>Bake for about 45 to 50 minutes or until crumbly topping is golden brown in color and apples are tender. Cool for at least a half hour before serving. Serves 8.</p>
<p>SERVING SIZE = 1 slice</p>
