class="ingredient">1 1/2 cups long-grain brown rice</li><li
class="ingredient">3 cups fat free vegetable broth</li><li
class="ingredient">6 oz extra lean turkey sausage (I used the kind from Jennie-O)</li><li
class="ingredient">4 cups zucchini, diced</li><li
class="ingredient">1 cup fresh or frozen corn kernels (thawed, if you are using frozen)</li><li
class="ingredient">2 red or bell peppers, chopped</li><li
class="ingredient">1 large onion, diced</li><li
class="ingredient">1/2 cup fat free milk</li><li
class="ingredient">3 garlic cloves, minced</li><li

class="instructions"><li>Preheat oven to 375°F.</li><li>Pour rice into a 9-by-13-inch baking dish. Bring broth to a simmer in a small saucepan. Stir hot broth into the rice along with zucchini, bell peppers, onion, paprika, salt and pepper.</li><li>Cover with foil. Bake for 45 minutes. Remove foil and continue baking until the rice is tender and most of the liquid is absorbed, 35 to 45 minutes more.</li><li>In a small saucepan, whisk together milk, yogurt and garlic. Cook over medium heat until bubbling and thickened, 2 -3 minutes. Reduce heat to low.</li><li>Add 1 cup shredded cheese, corn and cilantro and cook, stirring, until the cheese is melted. Set aside.</li><li>Spray a large skillet over medium heat and add sausage. Cook, stirring and breaking the sausage into small pieces with a spoon, until lightly browned and no longer pink, about 4 minutes.</li><li>When the rice is done, stir in the sausage and cheese sauce, ad dollop the cream cheese by the teaspoon, over the casserole. Sprinkle the remaining 1/2 cup cheese on top and top with jalapeños.</li><li>Return the casserole to the oven and bake until the cheese is melted, about 10 minutes. /> - 1 cup uncooked cornmeal, yellow<br
/> - 1 14oz can of creamed corn<br
/> - 2 tsp baking powder<br
/> - 1 cup all-purpose flour<br
/> - 1/2 tsp baking soda<br
/> - 2 packets of Splenda sweetener<br
/> - 1 tsp table salt<br
/> - 1/2 cup reduced fat buttermilk<br
/> - 2 large egg whites<br
/> - 2 tsp corn oil</p><p><strong>Directions:</strong><br
/> Preheat oven to 400ºF. Coat an 8-inch square cake pan with non-fat cooking spray (I prefer the butter flavored kind).<br
/> Combine cornmeal, flour, baking powder, Splenda, salt and baking soda in a large bowl. Mix well with a fork and set aside. Combine creamed corn, buttermilk, egg whites and oil in a medium bowl; mix until blended. Fold mixture into dry ingredients and blend. Pour batter into prepared pan. Bake until a wooden pick inserted near the center comes out clean, about 20 minutes. Allow to cool in pan on a wire rack for 10 minutes. Remove from pan and let cool completely. Cut into 8 squares.</p><p>Entire recipe makes 8 servings<br

/> - 1 cup black beans<br
/> - 1 large tomato, chopped<br

/> - 1 tbsp fresh cilantro, minced<br
/> - juice from 1 lime<br
/> - salt and pepper to taste</p><p><strong>Directions:</strong><br
/> Defrost corn. Toss all items together in a medium sized bowl, and add salt &#038; pepper as needed</p><p>Entire Recipe = 5 servings<br

/> - 2 sprays cooking spray, divided<br
/> - 1 slice bacon, uncooked, finely diced<br
/> - 2/3 cup onions, diced<br
/> - 2/3 cup sweet red peppers, diced<br
/> - 1 tbsp all-purpose flour<br
/> - 14 3/4 oz canned cream-style white corn<br
/> - 3 medium corn on the cob, kernels removed* (about 1 3/4 cups)<br
/> - 1/4 cup fat-free egg substitute<br
/> - 3/4 cup low-fat Swiss cheese, shredded<br
/> - 1/4 tsp table salt<br
/> - 1/8 tsp black pepper, freshly ground<br
/> - 3/4 cup seasoned croutons, whole-grain, coarsely crushed</p><p><strong>Directions:</strong><br
/> Preheat oven to 350°F. Coat a 2-quart shallow baking dish with nonstick spray.<br
/> Cook bacon in a medium nonstick skillet over medium-low heat until crisp, about 5 minutes. Drain on paper towels and set aside. Pour off and discard drippings from skillet.<br
/> Add onion to skillet. Reduce heat and cook, stirring occasionally, until softened, about 4 minutes. Add red pepper and cook, stirring occasionally, until vegetables are tender, about 6 to 8 minutes. Add flour and cook, stirring constantly, about 1 minute.<br
/> Transfer vegetables to a large bowl and let cool 5 minutes. Stir in bacon, canned corn, fresh corn, egg substitute, cheese, salt and ground pepper. Spread corn mixture in baking dish. Top evenly with croutons and lightly spray croutons with cooking spray. Cover with foil and bake 30 minutes. Uncover and bake until top is golden and center is set, about 15 minutes more. Let stand 10 minutes before serving.</p><p>Serving size is 1/2 cup<br
