After some playing around one Sunday morning, I decided to revamp this recipe using poached egg whites and a much healthier white wine sauce. I was AMAZED at how good it turned out!!

Initially, the idea of creamed spinach kinda weirded me out. But I’m willing to try just about anything with cheese on it, and since each serving of this dish came out to just 2 points +, I figured it was worth a shot, as I really wanted a new healthy side dish recipe.

If you aren’t familiar with this soup (also called Tom Yum Gai Soup, Tom Yum Kai Soup), it’s a traditional Thai soup made with coconut milk, lemongrass, various vegetable and Thai spices and is characterized by its distinct hot and sour flavors. Some variations are made with shrimp or chicken.
