<p>This simple summer salad is probably one of my favorite salad recipes ever. I just adore the taste combination of sweet tomatoes and basil with the tang of balsamic vinegar and the creaminess of the mozzarella cheese. Plus, it&#8217;s an incredibly fast &#038; easy dish to make, and it&#8217;s pretty diet friendly. It&#8217;s also a great way to get some vitamins, calcium and antioxidants into your diet! And each serving has just a 3 Point Total (5 Point Total for two servings). So, while you can&#8217;t go hog wild and eat the whole thing, it&#8217;s still a healthy, diet-friendly salad to enjoy in controlled portions. This tasty tomato, basil, and mozzarella salad makes a great healthy side dish recipe to serve along with a hearty sandwich or healthy grilled chicken. Though, it&#8217;s such a versatile recipe, you can really serve this with just about any meal. It also makes a great appetizer recipe! </p>

<h2><u>Caprese Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
- 1 large tomato, sliced into 8 slices<br />
- 8 oz fresh mozzarella, sliced into 8 slices<br />
- 5-6 basil leaves, sliced or whole<br />
- 1 tbsp extra virgin olive oil<br />
- 1 tsp balsamic vinegar<br />
- salt and fresh pepper</p>
<p><strong>Directions:</strong><br />
Place sliced tomato on a large plate or platter. Whisk together olive oil, vinegar and salt and pepper. Top tomato slices with mozzarella and then drizzele olive oil and vinegar mixture over all the slices. Spread basil leaves evenly over all slices.</p>

- olive oil non fat cooking spray<br />
- 8 cloves garlic, very thinly sliced<br />
- 1/4 cup finely chopped fresh basil<br />
- 3 tomatoes, peeled, seeded and diced fine.<br />
- Kosher salt to taste<br />
- ground black pepper to taste<br />
- 1/4 cup dry white wine<br />
- 1/2 cup fat free chicken broth<br />
**Optional: Add a tsp of fresh grated Parmesan cheese to each serving for 1 additional Weight Watcher Point</p>

<p><strong>Directions:</strong><br />
Spray a large skillet with the olive oil spray and heat at low to medium temperature. Add the garlic and gently roast on low to medium heat, be very careful not to brown garlic. This should take approximately 3 to 5 minutes. Add the basil, tomato, salt and pepper. Now add the wine raising the heat slightly and cook for about 1 minute. Pour in chicken stock and cook until sauce reduces to a gravy-like consistency, raising the heat again if necessary. At this point reduce heat to low. Drain and rinse pasta, toss in sauce and serve.</p>

1 1/2 pound asparagus, (about 40 spears)<br />
2 tsp orange juice<br />
1 Tbsp balsamic vinegar<br />
2 Tbsp shredded Parmesan cheese<br />
1 tsp minced garlic<br />
1/8 tsp black pepper, or to taste<br />
1/8 tsp table salt, or to taste</p>
<p><strong>Directions:</strong><br />
Chop woody ends off asparagus. Microwave for 2 to 3 minutes, or cook in boiling, salted water until barely tender, about 4 to 6 minutes. Plunge into ice water to stop cooking. Drain. Add cherry tomatoes. Stir together vinegar, orange juice and garlic; season to taste. Spoon dressing over asparagus and tomatoes. Sprinkle with Parmesan cheese. </p>

<h2><u>Cumin Tomato Salad Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
6 fresh, ripe, medium sized tomatoes<br />
1/2  tsp olive oil<br />
2 1/2 tbsp of balsamic vinegar<br />
1/2 tsp fresh black pepper<br />
1 tsp salt<br />
1 tbsp cumin<br />
Splash of fresh squeezed lemon juice</p>
<p>*Feel free to play around with seasonings until you get the flavor you like. Just make sure not to use more olive oil, as that will increase the Weight Watchers Points value.</p>
<p><strong>Directions:</strong><br />
After thoroughly washing the tomatoes, julienne them into thick strips. In a separate bowl, combine balsamic vinegar, olive oil, lemon juice, salt, and pepper. Pour over tomatoes. Add cumin to salad, and toss.</p>
<p>Serves 6.<br />

<p>In the spirit of my excitement over all the low calorie pasta recipes I’ve been making, here is a delicious gourmet pasta sauce recipe that is fresh, healthy and oh so yummy! This homemade pasta sauce sure beats the stuff from a jar and will “wow” your dinner guests. It was so tasty, I couldn’t stop eating it when I was cooking!! The sauce yields lots of heart healthy fiber, antioxidants and lycopene (which is one of the most potent antioxidants and is being investigated as a potential agent for the<br />
prevention of cancers, including prostate cancer)</p>

<h2><u>Melted Cherry Tomato Pasta Sauce Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
Makes 3 quarts<br />
1/4 c. fresh minced garlic<br />
4 oz. *soffrito (or substitute a finely minced mix of 2 parts red onion to 1 part carrot and 1 part celery)<br />
3 27 oz. cans cherry tomatoes (or substitute 4 pints fresh cherry tomatoes and 32 oz. can of crushed tomatoes)<br />
1/2 bunch basil<br />
1/2 bunch parsley<br />
Salt, pepper, sugar, and chili flakes to taste<br />
2 oz. extra virgin olive oil</p>
<p><em>* In Italian cuisine soffrito is a sautéed mixture of chopped onions, celery, carrots, and seasonings</em></p>
<p><strong>Directions:</strong><br />
In a heavy-bottomed sauce pan, gently sauté the garlic and soffrito in oil. Add the cherry tomatoes to the pan. Allow the mixture to gently stew for at least three hours over low heat. Stir periodically. After the second hour, tie herbs together so they can be removed later and add to the pan. When at the preferred consistency, add salt, sugar, pepper, and chili flakes to your liking. Remove the herbs. (For lasagna or pastas, the sauce should be thinner. For pizza or dipping sauce, it should be thicker.) Remove mixture from heat and stir in olive oil. Freeze, or refrigerate up to four days.</p>
<p>Serving Size = 1/2 cup<br />
2 Weight Watchers Points per serving (2 WW Points) </p>

<p>The first time my fiancé made this dish for me, I was blown away by how incredibly healthy and low calorie it is. Shakshooka is a hot and spicy traditional dish that originates from Israel which consists mostly of tomatoes and eggs. But my fiancé has enhanced the traditional Shakshooka recipe with some tasty (and healthy) additions. His version of Shakshuka is astoundingly low calorie, and the nutritional statistics make it one of the healthiest home-cooked meals I’ve ever had. Just one serving big serving (with 2 eggs) packs in about 3/4 of your recommended daily allowance of fruits and vegetables, and yet contains only about 200 calories, 8 grams of protein,  0 grams of fat, about 7 – 8 grams of fiber, which is equivalent to only 3 Weight Watcher Points!!! *Note that these nutritionals are based on not eating the yolk of the egg, which have more fat and calories, but only eating the white. I chose to not eat the yolk of the egg, simply because I don’t like the yolk, but that ended up making a lot more healthy and low calorie /low fat. And on top of all this, Shakshooka tastes INCREDIBLE!!! So many flavors, textures, and colors!</p>
<p>My favorite way to eat the Israeli Shakshooka is spiced up with some Frank’s Red Hot Sauce (best hot sauce EVER!!!), which adds a nice hot and tangy taste. YUM!!! The best part is, you can really pig out on this stuff with absolutely no guilt. So it’s a great way to really satisfy your hunger and pack in some amazing nutrients and vitamins, and stay within your Weight Watcher Points!!!</p>
<p>If you don’t really care too much about calories or you don’t diet then try this…my fiancé likes to eat his Shakshuka in a bowl over fresh Israeli hummus (that can be found at Costco) and wipe it with a warm pita bread. Trust me! He knows what he’s doing…</p>

<h2><u>Shakshuka Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
2 sweet red peppers<br />
2 spoons of olive oil for frying (can be substituted with a low calorie olive oil pan spray)<br />
1 medium onion<br />
3 cloves of garlic<br />
8 ripe tomatoes (Roma is the right size)<br />
6 eggs<br />
2 green hot chili peppers (add more or less according to taste)<br />
1 spoon of tomato paste<br />
1/4 cup fresh basil<br />
1 tsp. of sweet paprika<br />
Salt and pepper (according to taste)</p>
<p><strong>Directions:</strong><br />
1. Peel the onion and garlic then chop them both into very little pieces.<br />
2. Clean the red peppers from seeds and cuts them into small cubes.<br />
3. Clean the green chili peppers from seeds and cuts them into small cubes.<br />
4. Cut the tomatoes into cubes.<br />
5. Chop the basil<br />
6. Heat the olive oil in a frying pan, and then add the onion and garlic. Fry them until the onion is golden clear.<br />
7. Turn the heat down to medium, add the red peppers, mix, and continue frying covered for about 3 more minutes. Mix a couple of times during that time.<br />
8. Add the tomatoes, chili peppers, tomato paste, paprika, and then mix. Cover the pan, and simmer the mixture over low heat for 15 minutes.<br />
9. Add the basil, salt, pepper, and then mix. Gently crack open the eggs without breaking the yolks, and drop them on the vegetables.<br />
10. Cover the pan and continue cooking the mixture for another 5 minutes.</p>
<p>Serve with warm pita bread. Enjoy!</p>
