I’m not ashamed to admit that I’ve jumped aboard the avocado toast train. Yes, it’s a super trendy dish, and yes things that are super trendy tend to annoy me. But the thing is, I’ve been eating avocado toast for a long time now, way before it was a thing. The fact is, it’s delicious. DELICIOUS. And it’s packed full of fresh flavors and nutrition. The combination of heart healthy fats, whole grains, and vitamins, make avocado toast a very nicely well-rounded and complete meal that is as satisfying as it is tasty. It’s one of my favorite Weight Watchers breakfast recipes that I eat over and over again. Plus, it’s a great way to use up my avocados before they rot, because, let’s face it….avocados are SO finicky and their window of usage ability is minimal. One of the things I love about avocado toast is that it is absolutely divine as is, or you can use it as a blank canvas for whatever toppings you want to add. I’ve been known to top mine with a poached egg, crisp bacon, prosciutto, feta cheese, honey, black beans and corn…I could really go on and on, but you get the idea. It may not be super light, but for the amount of nutrition and feeling of satisfaction you get, this easy avocado toast is a bargain at just 5 Smart Points per serving. Try it…it’s ok to be trendy every now and then.

This is one of my very favorite salads. I love to make it for potlucks, it just goes so well and everyone loves it. I also love to make it for myself. It’s a perfect lunch, and lasts all week. It’s full of flavor and color, plus it’s very high in fiber (10 grams per serving), which helps to keep you feeling full longer. I use two red bell peppers, I like the sweeter, subtler flavor better. But if you’d like a little more color, use a green pepper. It lasts well for more than a week in the fridge, so it’s perfect for a week of lunches.

Baked Macaroni and Cheese – 5 Points +

Baked Macaroni and Cheese

This baked macaroni and cheese recipe is easy to prepare as well as low fat. I have many variations for this traditional baked macaroni and cheese dish and this is the one I most recently prepared. The cayenne pepper adds a little spice and I prefer freshly ground pepper as well. I will serve this as a light main meal with a side salad for lunch or dinner. This recipe was prepared as a side dish to chicken loaf (a.k.a. meatloaf) or pork chops.

Baked Macaroni and Cheese – 5 Points +

I have loved baked macaroni and cheese since I was a kid. It’s the perfect comfort food. This is a healthy version and very tasty.

Ingredients

  • 2 cups dry macaroni (Dreamfields Elbows is used for this recipe)
  • 3/4 cup evaporated fat-free milk
  • 1 cup low-fat cottage cheese (Horizon Organic: Low-fat Small Curd Cottage is used for this recipe)
  • 1/2 cup part-skim ricotta cheese
  • 1/2 cup shredded low-fat cheddar cheese (Reduced fat – Cabot’s Sharp Cheddar is used for this recipe)
  • 1 tbsp. grated Parmesan cheese
  • 1 tbsp. dry bread crumbs
  • Pinch cayenne pepper
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Prepare macaroni according to instructions on the box.
  3. In a saucepan, heat milk over low heat.
  4. Add the cheeses (except Parmesan) until melted, stirring constantly.
  5. Drain pasta and place in a 2 quart casserole dish sprayed with cooking spray.
  6. Remove the cheese sauce from the heat then pour on top of cooked pasta.
  7. Stir and mix cheese and pasta well.
  8. Sprinkle with Parmesan cheese, breadcrumbs, salt, pepper, and cayenne pepper.
  9. Bake the casserole for 15-20 minutes until bubbly and the top is browned.

A while back, I came across this Mountain Bread in the refrigerated section at my local Whole Foods store. They looked pretty big, and the nutritional stats indicated that they were only 2 Points + per sheet. So I bought a pack, took them home, and put them to the test, and they were truly fantastic! They are thin and light, but when wrapped around your favorite light wrap fixins’, they are a perfect way to make a big, hearty wrap that is still low in Weight Watchers Points. I’ve eaten them with cold wraps, but prefer to use them with a heated wrap, like this Roasted Red Pepper Wrap. Mountain Bread has only 3 ingredients—flour, water, salt…that’s it! No yeast, no dairy, no cholesterol, no stabilizers, no added sugar, no oil, no artificial ingredients. All varieites have wheat–except Spelt.
