And you can easily substitute the mushrooms and shallots for just about any veggie of choice. Try it with onions, olives, green peppers, eggplant, basil, tomatoes, spinach, or even squash! <h2><span style="text-decoration: underline;">Weight Watchers Grilled Mushroom Pizza Recipe</span></h2>
<p><strong>Ingredients:</strong><br />
8 oz fresh shiitake mushroom, stems removed, caps wiped clean with a damp towel, quartered<br />
6 medium shallot(s), peeled, quartered and chopped<br />
1 tbsp olive oil<br />
1/4 tsp table salt<br />
1 spray(s) cooking spray<br />
1/2 cup(s) pizza sauce, or tomato sauce<br />
4 medium whole wheat tortilla(s)<br />
1 tsp dried oregano<br />
1/8 pound(s) provolone cheese, about 4 thin slices<br />
4 tsp grated Parmesan cheese, Parmigiano-Reggiano recommended</p>
<p><strong>Directions:</strong><br />
Preheat oven to 450ºF. In a large bowl, toss together mushrooms, shallots, oil and salt; spread on a sheet pan in a single layer and lightly coat with cooking spray. Roast until vegetables are crispy, about 12 to 15 minutes; remove from oven and set aside. (Or grill the vegetables in a grilling basket.) Heat an outdoor grill or a grill pan over medium-high heat. To make pizzas, spread 2 tablespoons of sauce on each tortilla; sprinkle each with 1/4 teaspoon of oregano. Top each with 1 slice of cheese that has been torn into pieces, 1 teaspoon of Parmesan and 1/4 of vegetable mixture. Place pizzas on grill or grill pan (you may have to do this in batches depending on the size of your grill pan), and cook until edges begin to brown, about 3 to 4 minutes; rotate pizza. Continue cooking until cheese is bubbly, about 2 to 3 minutes more.</p>

No cooking is required for this dish, so it&#8217;s easy to prepare and is a great dish to make for a party or picnic. Ceviche is marinated in a citrus-based mixture, with lemons and limes being the most commonly used. In addition to adding flavor, the citric acid causes the proteins in the seafood to become denatured, which pickles or &#8220;cooks&#8221; the fish without heat. Traditional style Ceviche was marinated up to 3 hours. Modern style Ceviche usually has a very short marinating period. It&#8217;s super high in protein, yet very low in calories and Weight Watchers Points. And with all the veggies and lime juice, it&#8217;s incredibly healthy and high in antioxidants!<br />

-4 oz scallops, thinly sliced<br />

- 1 large tomato, diced<br />
- 1/2 medium avocado<br />
- 1 small red onion, minced<br />
- 2 tablespoons fresh cilantro<br />
- 3 dashes hot pepper sauce<br />
- salt and pepper to taste</p>
<p>** You can also sub out the scallops and red snapper for shrimp, crab or ahi tuna! (The shrimp one is my FAVORITE!)</p>
<p><strong>Directions:</strong><br />
Toss 4 ounces sea scallops, thinly sliced, and 4 ounces skinned red snapper filet, diced, with 1/2 cup fresh lime juice in a medium glass bowl. Cover and refrigerate until the fish becomes opaque, about 1 hour. Drain, then toss with 1 large tomato, diced; 1/2 medium avocado, pitted, peeled, and diced; 1 small red onion, minced; 2 tablespoons chopped fresh cilantro; 2 tablespoons fresh lime juice; 3 dashes hot pepper sauce; salt to taste; and ground pepper to taste. Serve immediately, cold, on a bed of shredded iceberg lettuce. NOTE: Ask for sushi-grade fish at your market.</p>

I am planning on making them for Christmas and using some decorations on top to make them festive. <p><strong>Ingredients:</strong><br />
- 6 tbsp semi-sweet chocolate chips<br />
- 3 tbsp Smucker&#8217;s Seedless Red Raspberry Jam, or similar product<br />
- 12 fresh raspberries (washed and dried)</p>
<p><strong>Directions:</strong><br />
Place chocolate chips in a small microwavable bowl and microwave on high, stirring every 15 seconds, until chocolate is melted and smooth, about 1 minute.Spoon 3/4 teaspoon of melted chocolate into a small foil candy cup (1-inch wide by 3/4-inch high). Use a small flat paint brush to spread chocolate evenly over bottom and up sides. Place one whole raspberry, upside down on top of chocolate, on the bottom of each cup. Repeat with remaining cups, place them on a plate and refrigerate for 3 minutes or until chocolate is firm. Spoon 3/4 teaspoon of jam into each chocolate-lined cup. Tap bottom of each cup on counter to settle jam.Reheat remaining melted chocolate in microwave, stirring every 10 seconds, until chocolate is completely smooth. Spoon 1/2 teaspoon of melted chocolate over top of jam in a foil cup. Use brush to spread chocolate to sides so that it seals in jam. Repeat with remaining 11 foil cups. Refrigerate 3 minutes or until chocolate is firm, or allow chocolate to firm up at room temperature, about 3 hours. Enjoy!</p>

<p>If there is a food that I could eat every day and not get tired of, buffalo chicken strips would be a top contender. But since following the Weight Watchers diet plan, I was hard pressed to find an amazing buffalo chicken strip recipe that not only tasted great, but would be low in Weight Watchers Points and good for me too. So I made up my own special, low calorie recipe! It tastes amazing, is incredibly low in fat and calories, and packs in an excellent serving of fiber! These buffalo chicken strips are also great to make for a party or picnic, and are a great, healthy snack to chow down on during your favorite football game (Go Steelers!)</p>

<h2><u>Weight Watchers Buffalo Chicken Strip Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
8 oz skinless, boneless chicken breast<br />
1/2 cup egg whites or egg alternative<br />
1 cup original Fiber One Cereal<br />
2 tsp salt<br />
1 tbsp garlic powder<br />
1 tbsp onion powder<br />
1 tsp paprika<br />
1/2 tsp black pepper<br />
1 cup and 2 tbsp Frank&#8217;s Red Hot Sauce<br />
1 tbsp light butter (I used <a rel="nofollow" href="http://www.thedailyplate.com/nutrition-calories/food/balade/light-butter">Balade Light Butter</a>)</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400 degrees, and spray a baking sheet with nonstick cooking spray. Wash and cut chicken breasts into strips that are approximately 1 1/2 inches wide. Set aside.<br />
In a food processor, combine cereal, salt, garlic powder, onion powder, paprika and pepper and pulverize to a fine powder or breadcrumb like consistency. Pour mixture into a shallow bowl or onto a small plate. Set aside.<br />
In a small saucepan, melt butter and then add in 1 cup of the hot sauce. Mix well and warm until heated, but not bubbling or boiling. Pour into a small, shallow bowl, and set aside.<br />
In a small bow, mix egg whites (or egg alternative) with the 2 tbsp or remaining hot sauce. Now take each chicken strip, and coat with egg and hot sauce mixture. Shake off all excess egg from the meat. Next coat chicken in cereal mix until strip is fully breaded. Lay strip on baking sheet. Repeat until all pieces of chicken are breaded and on the baking sheet. Now, with a brush or spoon, drizzle about 3/4 hot sauce and butter mixture over all the chicken pieces. Make sure to coat well.<br />
Bake chicken at 400 degrees until breading becomes crispy and chicken is cooked through (approximately 15-20 minutes). Serve with remaining hot sauce mixture for dipping. YUM!!!!!</p>

Each serving = 4 Weight Watchers Points </p>

<p>Mmmmmmm&#8230;.PANCAKES!!!! I have always adored these sweet, warm, cakey little love patties. But they aren&#8217;t at all diet friendly, so I rarely indulge myself in their yumminess. So when I read that Fiber One had released a new Pancake mix, I was overjoyed!! I already adore their super high fiber cereal, and use it for so many recipes (which I SWEAR, I have been meaning to blog about), so I knew I had to give this high fiber, low calorie pancake recipe a try. I got up early this morning, so excited to make my special Weight Watchers pancakes with the help of <a rel="nofollow" href="http://www.fiberone.com/Product/baking.aspx?key=pancake">Fiber One Pancake Mix</a>. And Oh Em Gee&#8230;..they were SOOOOOO good!! A little on the thin side, but nonetheless, they tasted amazing, and I am so incredibly with this fabulous find. I had <em>three</em> nice sized pancakes <em>with</em> butter and maple syrup for just 5 Weight Watchers Points. And I am <em>stuffed</em>. Fiber One, I so love you. Thanks for this amazing pancake recipe. </p>

<h2><u>Fiber One Weight Watchers Pancake Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
1 cup Fiber One Pancake Mix<br />
2/3 cup cold water</p>
<p><strong>Toppings:</strong><br />
2 Tbsp of a light butter (I used <a rel="nofollow" href="http://www.thedailyplate.com/nutrition-calories/food/balade/light-butter">Balade Light Butter</a>)<br />
1/2 cup sugar free syrup (I used <a rel="nofollow" href="http://maplegrove.stores.yahoo.net/magrsufrsy.html">Maple Grove Farms Sugar Free Maple Syrup</a>)</p>
<p>*I found all of these items at my local grocery store!<br />
And for a bit of fun or variety add a few blueberries, strawberries or banana slices to pancake mix! Just remember to calculate in the extra Points.</p>
<p><strong>Directions:</strong><br />
Coat skillet or frying pan with a non stick cooking spray. Preheat your skillet to about 375 degrees (or until water droplets bounce around). Mix pancake mix ingredients with a wire whisk. Note that the mix <em>will</em> be thin. I found that its best to let the mix sit for about 5 minutes to thicken up a bit. Pour batter into frying pan, making each pancake with just under 1/4 cup of batter, and heat on one side until bubbles break on top of pancake and edges start to dry. Flip and let cook about 30-45 seconds or until pancake is golden brown. Top each serving with 1 tbsp of butter and 1/4 cup of syrup. Enjoy!</p>
<p>Recipe makes 2 servings<br />
Serving size = 3 pancakes<br />
Each serving (with butter and syrup) = 5 Weight Watchers Points</p>

<p>Yogurt is SUCH a great dieting snack&#8230;it&#8217;s loaded with calcium, protein and lots of healthy bacteria. And though I prefer my yogurt frozen and slathered with hot fudge and Snickers pieces, that&#8217;s really not the best diet option. So to keep it healthy, I stick to the traditional version. But there are somany yogurts out there&#8230;.which one do I choose? As I&#8217;m sure you&#8217;ve all seen in the grocery store, there are a gazillion different options&#8230;.so many tempting flavors, so many low calorie options! And now there are all these different yogurts that aid in digestion or that come in smoothie form so you can drink it. With all these different choices, it&#8217;s easy to feel overwhelmed. But which is the BEST one? Well, after LOTS of yogurt sampling, I&#8217;ve finally found that yogurt that makes my tastebuds and my waistline happy!! Which one is it, you ask&#8230;.? </p>

<p>Hands down, the BEST yogurt I&#8217;ve found is Horizon&#8217;s Organic Fat Free Yogurt. <a href="http://www.laaloosh.com/2008/10/20/the-best-low-calorie-yogurt/horizon_yogurt_blueberry/" title="Horizon Blueberry Yogurt"><img src="http://www.laaloosh.com/wp-content/uploads/2008/10/horizon_yogurt_blueberry.jpg" alt="Horizon Blueberry Yogurt" width="175" height="175" class="attachment wp-att-309 alignright" /></a> I based my decision on taste, nutritional statistics and total Weight Watchers Points value. To start with, this yogurt has fantastic nutritional values. Though the flavors can vary slightly in their nutritional stats, my favorite is the Raspberry, clocking in at 140 calories, 0 grams of fat, and 2 grams of fiber, making that 2 Weight Watchers Points for 6oz of yogurt. This brand comes in a variety of flavors like Strawberry, Peach, Vanilla, Raspberry and Blueberry&#8230;.granted these aren&#8217;t the cool, dessert like flavors that other brands offer, BUT&#8230;.and here&#8217;s the BEST part&#8230;they have real fruit on the bottom!!! I am so in love with fruit on the bottom yogurts, but most of those are much higher in calories and fat. Not only does this have the yummy fruit that you can mix in, but the taste is INCREDIBLE!! It&#8217;s really hard to believe that it has only 2 Weight Watchers Points. Another thing I really love about it is that there is no fake, chemical taste&#8230;.this yogurt is all natural. That&#8217;s the one thing that I really dislike about most of the diet yogurts on the market&#8230;they all have that artificial, chemical taste. But Horizon&#8217;s brand tastes wonderfully natural and delicious! I know it&#8217;s easy to be tempted by other brands boasting delicious flavors like Boston Creme Pie or Strawberry Shortcake for just 100 calories, but that option&#8217;s got nothin&#8217; on Horizon&#8217;s Fat Free line. Horizon&#8230;you ROCK my yogurt lovin&#8217; world!!! </p>

I found this amazing dessert recipe through Weight Watchers and I have to honestly say, this pie recipe is SO good that I CANNOT believe it&#8217;s Weight Watchers recipe!! It&#8217;s so rich and creamy, even just a few bites will satisfy you. This pie is a fabulous dessert to take to a potluck or dinner party, because it&#8217;s so delicious, that I guarantee you that no one will know it&#8217;s a low calorie recipe.</p>

<h2><span style="text-decoration: underline;">Weight Watchers Chocolate Chip Peanut Butter Pie Recipe</span></h2>
<p><strong>Ingredients:</strong><br />
1/2 cup(s) reduced-fat peanut butter*<br />
4 oz light cream cheese<br />
4 oz fat-free cream cheese<br />
12 oz fat-free sweetened condensed milk<br />
2 tbsp fresh lemon juice<br />
1 cup(s) lite whipped topping, thawed if frozen<br />
5 tbsp mini chocolate chips, divided<br />
1 tbsp Hershey&#8217;s Chocolate Syrup<br />
6 oz reduced fat pie crust</p>
<p>*You can save even more Points in this recipe by substituting the peanut butter with &#8220;<a href="http://www.betternpeanutbutter.com/">Better&#8217;n Peanut Butter</a>&#8220;, which you can find at Trader Joe&#8217;s or other health food stores. The taste is still very good, but it does a <em>little</em> different that the reduced fat peanut butter. Though, this substitution will save you 2 Weight Watchers Points per serving!</p>
<p><strong>Directions:</strong><br />
In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips. Spoon peanut butter mixture into prepared pie crust; sprinkle remaining 1 tablespoon of chocolate chips over top. Drizzle with chocolate syrup.  Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 10 pieces and serve. Now drift off into creamy, chocolatey, peanut buttery goodness!</p>
<p>Serving size = 1 slice (1/10 of pie)<br />
One serving = 7 Weight Watchers Points (*5 Weight Watchers Points if using the peanut butter substitution mentioned above).</p>

<p><strong>Ingredients:</strong><br />
1 cup pineapple, chunks (very ripe and cold)<br />
1 1/2 medium mango(es), or 1 large mango, peeled, pitted and cubed (very cold)<br />
1/2 cup orange juice<br />
1 1/2 cup ice cube(s)<br />
1/4 cup mint leaves, reserve 2 sprigs for garnish</p>
<p><strong>Directions:</strong><br />
Place all ingredients into a blender and blend until slushy. Pour into 2 tall glasses; garnish with mint and serve. Yields 1 1/2 cups per serving.</p>
<p>Serves 2.<br />
Each serving = 3 Weight Watchers Points</p>

<p>With summer coming to an end soon, it&#8217;s time to savor our last days of those delicious and healthy summer fruits. I found this awesome Weight Watchers Baked Stuffed French Toast Recipe and I wanted to share. I made it just this past Sunday and O M G&#8230;..Sooooooooooo delicious! Stuffed French Toast has never tasted so good! The thing I love most is that it&#8217;s so decadent&#8230;you feel like you&#8217;ve just ordered a fancy, gourmet breakfast from some over-priced restaurant. And of course, with just 4 Weight Watchers Points, it&#8217;s a guilt-free breakfast recipe that&#8217;ll knock your socks off.</p>

<h2><u>Peach-Blueberry Stuffed French Toast Recipe</u></h2>
<p><strong>Ingredients:</strong><br />
 16 slice light whole wheat bread (I like Sara Lee Delightful Whole Grain)<br />
 1 cup blueberries, fresh, or 1 cup frozen, thawed blueberries<br />
 1 large peach(es), chopped or 1 cup frozen, thawed peach slices<br />
 2 1/2 cup fat-free skim milk<br />
 2 cup fat-free egg substitute<br />
 2 Tbsp sugar, granulated<br />
 1 tsp ground cinnamon<br />
 1 tsp vanilla extract<br />
 1 Tbsp powdered sugar</p>
<p><strong>Directions:</strong><br />
Preheat oven to 400ºF. Arrange 8 slices of bread in bottom of a 9 X 13-inch baking dish, squishing slices together to make one layer; sprinkle blueberries and peaches over top. In a medium bowl, whisk together milk, egg substitute, granulated sugar, cinnamon and vanilla extract. Pour half of milk mixture over fruit; top with remaining 8 slices of bread. Pour remaining milk mixture over bread; using a spatula, press top layer of bread slices down to saturate with milk mixture. Cover dish with aluminum foil and bake 20 minutes; uncover dish and bake until egg mixture is set and top is golden brown, about 10 minutes more. Cool slightly before sifting powdered sugar over top. Slice into 8 pieces and serve. </p>
