Who says you always have to eat fajitas in a flour tortilla? Yes, I know it is delicious. Aren’t all carbs? But having your fajita straight out of the skillet is a highly underestimated option. Not only are you saving calories, carbs, fat, and sugar grams, but you can really enjoy the wonderfully bold flavors of the chicken this way. And you can go crazy on the toppings without worrying about it dripping out all over you. I will often make this chicken fajita skillet, and then use the meat on top of salads, rice, beans, or just as is with some of my favorite fajita toppings. Just remember to add in the Smart Points for any extras you may add, like guacamole, sour cream, or cheese. Any way you serve it, this tasty recipe will clearly makes its point – that you don’t always need a tortilla to rock a fajita. Enjoy!

It’s in the 90’s this week, here in Orange County, CA, and yet, I’m making a creamy, comforting Chicken and Broccoli Noodle Casserole. That’s weird, right? It’s too hot! But when I have a craving, not even a heat wave will stop me. And what I’ve been craving, is a rich, decadent, filling casserole that combines meat, veggies, and carbs all in one dish. Because sometimes, I just don’t feel like preparing side dishes. This week, I made a Weight Watchers casserole recipe that was absolutely heavenly. It has all the flavors and textures I wanted, and came out to just 7 Smart Points per serving. If broccoli isn’t your thing, zucchini, mushrooms, or carrots and peas would all work really well too. I’ve also made this with chicken thighs instead of breasts, which was even better. So if you can spare the extra Smart Point, try it with chicken thighs. And one word of advice – don’t skip the bacon/almond meal crumble on top…it’s what really makes this dish!

One Pan Crispy Parmesan Chicken

We are winding down to the last few weeks of the school year, and I am running out of steam. That means I need fast and easy weeknight dinners that are healthy, and Weight Watchers friendly. This One Pan Crispy Parmesan Chicken Recipe is perfect for the days when I want a fabulous, home cooked meal, without requiring a lot of effort. Another fabulous one pan meal for dinner, means a lot less dishes to wash after dinner! This Crispy Parmesan Chicken recipe was a home run with the whole family. The baked chicken was so juicy, and the crispy parmesan coating had a nice hint of garlic and Italian seasonings. Having the veggies coated in the same delicious mixture made them absolutely delectable, and my kids ate every last bite. My son even took leftovers to school for lunch the next day! It’s so good, and so easy to make, you will not regret adding this dish to your meal plan. Enjoy!!

Chicken Pad Thai with Zoodles

You guys, I CANNOT get enough of Zoodles lately! If you haven’t heard of “noodles”, they are simply spiraled zucchini. It’s a great substitute for regular, high calorie pasta or rice noodles, and it takes on the flavor of whatever you are cooking it with, very nicely. After having such great success with it in many other recipes, I decided to try it in one of my most favorite noodle based recipes ever – Pad Thai. So instead of traditional Thai rice noodles, I used my Zoodles instead. It turned out fantastic! It was delicious, and filling, and definitely helped to satiate my craving for Pad Thai. If you have a couple of extra Smart Points to spare, I recommend adding some crushed peanuts on top, just before serving – it really helps to give that authentic, restaurant feel. Enjoy!

Creamy Lemon Parmesan Chicken Piccata

If you’ve ever been to a good Italian restaurant and ordered Chicken Piccata, then you know how absolutely delicious this dish can be. Simple, yet tremendously flavorful. There’s an amazing Italian restaurant not too far from me that I paid a recent visit too (I was craving their breadsticks, but that’s a different story). I decided to try their chicken piccata because of the sauce description in the menu. It was a bit different from most chicken piccatas I’ve had before, and the description had me salivating. Rather than a traditional lemon/wine sauce, they used a creamy Parmesan sauce instead. And for anyone who knows me well, cheese is my weakness. I CANNOT RESIST IT. So I decided to use my “flex” Points and splurge, and it was well worth it! And then I made up my mind to recreate a healthier and lighter version at home so that I could some more regular, guilt free indulging. The creamy, lemony sauce is like a river of velvet in your mouth, and the tender, juicy chicken breasts are the perfect vehicle for that heavenly sauce! I ate this right off the plate, but my kids enjoyed theirs over pasta. Next time, I’ll try serving it over some zoodles. This Creamy Lemon Chicken Piccata is the ultimate in gourmet comfort food!

Grilled Chicken, Pear, and Candied Pecan Salad - 12 smart Points

When I want a salad that is insanely filling and satisfying, this Grilled Chicken, Pear, and Candied Pecan Salad is one of my favorites. I know that 12 Smart Points may seem like a lot, but for an entire meal, that is delicious, and will give me sweet, tangy, and salty all in one, it’s not too shabby of a deal. Nothing is sacrificed in this incredibly tasty dish, and it’s a breeze to prepare. The balsamic maple dressing is absolutely divine, and the variety of flavors and textures in the salad are to die for. There is something about the combination of the creamy, tangy goat cheese, with the sweet and tart cranberries, and the crunchy sweet and salty pecans that truly feels like a party in my mouth. You could make this dish a little lower in Points by cutting out the cranberries and using different nuts or cheese, but in my opinion, every Point is absolutely worth it! The restaurant version of this salad clocks in at around 23 Smart Points, so it really is a great bargain. If you are tired of basic salads, this Grilled Chicken, Pear, and Candied Pecan Salad is a must try!

Chicken Skewers – 5 Smart Points

Whenever I feel like I need a break from cooking for the evening and we don’t have leftovers – I ask my husband to grill something. Sometimes it’ll be something really simple like hamburgers or grilled pork chops, but other times (when I warn him early enough), he marinates something. This time the marinade was really simple – a fat free Italian dressing. We marinated the chicken for about 1 hour, then threaded it on the skewers with the veggies we wanted. We brushed a bit more dressing over the top and grilled it. It was perfect. It’s simple but adds a zesty flavor to the chicken skewers. It’s easy to add a bright and colorful salad, whipped up while the chicken is grilling. We added squash, mushrooms, tomatoes and little red onions to our skewers. We also tried grilled plantains, since my husband wanted to try them (we weren’t fans). Another great thing about these skewers is that I can heat up the leftover skewers and add them to couscous, quinoa or a whole grain pasta for lunch (or dinner). [Read more…]
