Here’s another easy and delicious way to dress up chicken breasts! Summer Green Bean Salad

We are counting down the last few days of school until we are in full summer swing! And summer means lazy days by the pool and little effort in the kitchen. This Summer Green Bean Salad Recipe is the perfect dish for those hot days, when you want a simple dish that’s light and healthy. I like the green beans to be a little crisp, so I just blanch them in the boiling water for just a few minutes, and then immediately transfer them to an ice bath. You could steam them too, if you prefer. The tangy lemon garlic dressing is the perfect complement to the salad, and ties all the components together. And if you are lucky enough to have any leftover, they are just as delicious the next day! Usually salads get gross in the fridge over night, but thanks to this dish being comprised of fresh, crisp veggies, it can be enjoyed again the next day. Yay! Greek Quinoa Salad

Our family is on a quinoa eating kick lately, and I’m taking advantage of it my cooking as many Weight Watchers quinoa recipes as I can! Today’s recipe is just a simple Greek salad with quinoa as the base, instead of lettuce. This makes an amazing side dish to accompany any fish or chicken meal. But you can also make this as a main course salad simply by adding some grilled chicken or fish right on top of it. I just adore the texture and nutty flavor that the quinoa adds to it. And it’s so much more filling than a standard salad! This Greek quinoa salad is so incredibly flavorful, and I’ll often serve it on top of a bed of butter lettuce and top it with some grilled chicken and veggies for a very satisfying meal! It makes a great dish to take to potlucks and barbecues too, so if you are looking for some ideas of dishes to take along and share, this is it. Enjoy!

Chickpea “Salsa” – 3 Smart Points

Chickpea Salad

I really like to use beans in things because it makes it much lower in fat than meat, but it’s still a great source of protein. Beans are also a great source of fiber – which really helps when you’re trying to eat healthy and lose weight. The fiber helps to fill you up and when you feel full longer, you’re less likely to eat as much. They’re also so handy to have on hand. I usually just have a variety of canned beans on hand (several cans of each) so that I have them ready to go when a recipe calls for them. I wanted to do something with fresh garden vegetables, but something with a definitely Mediterranean flavor to it. I ended up combining a couple of recipes, including one with a really tasty oil and vinegar dressing. I used a low calorie pita bread as a scoop and I fell in love with it. It’s easy to put together and right now you can get garden fresh veggies and herbs to put in this. It’s fabulous fresh, and (I think) even better after it’s had a day or two to marinate. While I had it with pita bread the first time, it really wasn’t necessary. It was just as good with a spoon! This will definitely become a favorite salad for my lunch options. [Read more…]

Moroccan Spiced Shrimp Over Garbanzo Bean Salad

With the beautiful summer weather we’ve been having, my husband has been outside grilling food on a very regular basis. And today’s recipe for Moroccan Spiced Shrimp Over Garbanzo Bean Salad was actually inspired by 5 year old who LOVES shrimp! On a recent beach excursion, we stopped to have lunch at a local, seaside restaurant, and my daughter was begging to order anything with shrimp. We opted to get her this dish, and she absolutely loved it. I tried my best to replicate the version from the restaurant, and I’m pretty pleased with the results…it turned out delicious and very light at just 4 Smart Points per serving. Of course, the final approval came from the harshest critic, my little girl herself, and she vehemently approved. Quinoa Cucumber Tomato Salad

Perfect for a light summer side salad, this Quinoa Cucumber Tomato Salad is not only incredibly easy to make, it’s super tasty! I love the slight crunch of the quinoa along with the fresh, crisp vegetables. And the simple lemon dressing pulls it all together wonderfully. This salad is a great way for me to get my kids to eat some vegetables and healthy whole grains – they love this dish. And any leftovers go great in their lunch boxes the next day. This Peruvian Chicken Stir Fry recipe is one of my favorite, and incredibly reliable chicken recipes that deliver an absolutely delicious dish with minimal effort. Sautéed bell peppers, onions, and tomatoes are so flavorful, and the simple stir fry sauce is low in Smart Points, but big on taste. This is a great healthy dinner recipe that you can get on the table in less than 30 minutes, looks lovely, and is a big hit with the entire family. My kids love this over some steamed brown rice, but when I have a few extra Points to spare, I serve it over baked french fries, as is the traditional Peruvian way. It’s finally spring! I don’t know about you, but with some of our recent weather, I feel like it’s easy to forget that. I thought that called for a recipe to remind me of the warmer weather. Something that is refreshing and fresh and delicious, something that makes me feel cooler in warm weather. These marinated tomatoes were just the thing. I used cherry tomatoes, since that’s what I had on hand, but you can use any type of tomatoes you want. If you like your salad to have a little more juice, definitely use a juice tomato, like a regular beef steak tomatoes or even Romas. One of the things I like about apple cider vinegar is that it doesn’t have quite the same bite as other vinegars. It almost seems a little sweet. It’s perfect for these tomatoes, it adds the kick they need to make your mouth water, but isn’t enough to make your eyes water too. I like to let mine sit on the counter while I’m making the rest of dinner to let the flavors blend together better, but if you like your tomatoes chilled, then refrigerate it overnight and you’ll have one delicious, colorful and refreshing side dish!

Mediterranean Salad

I love salads and vinaigrettes. I recently found a really delicious herbed feta that I wanted to try in a light and colorful tossed salad. Since it was an herbed feta, I knew the salad would have to be light and not over powering. I wanted a dressing that could complement the salad and feta, but not compete with it or overpower it. I started with a balsamic vinaigrette but flavored the dressing with a little Italian seasoning. The Italian seasoning perfectly set the dressing off, it helped to lighten the rich flavor of the balsamic so that it complemented the salad. The baby lettuce is my absolute favorite greens for a salad. They are light and tender, and have more flavor than the regular head lettuce. You can also add any of your other favorite vegetables to this salad. Add chopped mushrooms, or some chopped summer squash for a little more color. Give this delicious Mediterranean inspired salad a try for a light and refreshing lunch on these beautiful spring days.

Vegetable pasta is all the rage right now and one of my favorites is zucchini. It’s easy to do and has such as mild flavor that it goes with just about anything. It’s also a great way to add color to my meal without adding lots of carbs from regular pasta. Plus, I get another serving of vegetables, which is something I’ll never complain about. I wanted a pasta dish that is light and refreshing and doesn’t take too much work. I really was looking for a quick and easy lunch meal, and this fit the bill perfectly. While it’s not necessary to cook the zucchini before, I like to cook it a little in the olive oil and garlic so that it’s tender. Lemon Rosemary Baked Chicken Legs

One of the things that I always look for on sale is chicken. I get it on sale and then freeze it until I come up with a delicious recipe that I want to use I for. This baked chicken is just the thing. I used chicken legs that still had bones and skin. I cooked them that way to help keep them moist and tender, but then removed the skin to eat them. Citrus goes so well with chicken, so the dressing is just perfect. A little lemon with a little tangy Dijon mustard and some garlic drizzled over the top. If you like a little more of the dressing flavor in your chicken, use skinless chicken and just bake it covered to keep it moist. I added a few vegetables, just to make it a little more appealing and have another serving of veggies for the meal. I also kept my rosemary whole, since I’m not a big fan of picking the twigs out of my food. That way, the flavor of the rosemary is added to the dish, but I can take it out before serving, just like bay leaves. [Read more…]
