Some people spend all day long cooking their Rosh Hashanah dinner, but I am all about quick and easy meals overs here! This Roasted Honey-Soy Glazed Chicken recipe is an incredibly easy dish to make that requires just a handful of ingredients, but is a mouthful of wonderful flavors. A little sweet, a little salty, a little smoky…all the good tastes are there. But I don’t need to spend all day slaving away in a hot kitchen. Within hot and busy summer days, I rarely have the time or patience to put forth a lot of effort in the kitchen. So I’ve been making Weight Watcher recipes that are fast, easy, and delicious. This Balsamic Roasted Chicken and Vegetables Recipe is a great dish that I find myself cooking again and again because it’s super fast and easy, and my whole family loves it. Sometimes, I’ll even double, or triple this recipe, then freeze it in the marinade so that I can have it available for a quick and easy dinner the following week too. The marinade is so incredibly flavorful, and the meat turns out juicy and delicious. I have sometimes left my veggies in the marinade with the chicken, and that also works….the veggies just come out darker from soaking in the marinade. Such an easy and tasty meal! Enjoy.

Italian Herbed Chicken in a Creamy Mushroom Wine Sauce

When I’m feeling a little fancy, this easy Italian Herbed Chicken in a Creamy Mushroom Wine Sauce Recipe is just the ticket. I had something similar once at an Italian restaurant in Los Angeles, and I was blown away by how rich and flavorful this dish was. So I recreated a lightened up version myself, and it’s pretty amazing. First of all, I love ANY sauce with red wine in it. Seriously, I will just eat it all up with my spoon and then lick the plate. And the red wine sauce simmered with milk and parmesan cheese is oh so heavenly. Most recipes that have a creamy sauce use heavy cream which can really increase the Weight Watchers points. By using milk and a bit of cornstarch, this dish delivers the perfect consistency and flavor with a LOT less saturated fat and calories. My kids ate this over steamed rice, with a side of roasted brussel sprouts. It was sooooo good! Baked Hawaiian Pineapple Chicken Teriyaki

This Baked Hawaiian Pineapple Chicken Teriyaki Recipe is one that my kids ask for again and again. I love that it’s super easy to make, that it tastes fantastic, and is just 6 Smart Points per serving. Just pour the sauce over the chicken pineapple, and peppers, and bake! You could make this even lighter by using chicken breasts instead of thighs, but my family tends to prefer the dark meat. Breasts would work really well though, given that they are cooked in the sauce, so that would help keep them super moist and juicy. Traditional Teriyaki sauces use a lot more sugar, which also helps give a thicker sauce, but this sauce is still deliciously sweet and flavorful without being too sweet. It’s also a perfect topper for steamed rice, which I highly recommend with it. Enjoy!

Today’s Honey Soy Chicken Recipe is yet another dish that my whole LOOOOOOOVED. Including me. I love chicken that has incredible flavor, but to achieve that, it usually requires a long marinade time. During the week, when I’m super busy, I often have to come up with a meal on the fly, and typically don’t have time to wait for a marinade. So when I forget/don’t have time to marinade, I rely on this Honey Soy Chicken dish to deliver a tender and juicy chicken, with knockout flavor. The sauce has all the sweet, salty, and tangy flavors combined to make for one seriously mouthwatering chicken recipe. Serve the chicken (and the remaining sauce from the pan!) over steamed brown rice and veggies for a complete meal.

I first had this tasty dish in a little hole-in-the-wall Italian restaurant in Los Angeles. It was served in a cast iron pan, and the smell alone was enough to have me drooling. Once I dug in, I was pretty sure I was in heaven. Moist chicken, and crisp, golden brown potatoes in a bright garlic wine sauce (it’s quite garlicky, so I’d recommend this dish for garlic lovers only). It was pure perfection. I even ate the peas, which is rare for me, because peas are not my favorite. If you look online, you’ll find a ton of different versions of this popular dish, but my version is slimmed down to offer all the flavor of the traditional dish, but for just 7 Smart Points per serving. Green Olive and Apricot Chicken

Heaven on a dish, this delightfully easy chicken recipe packs a tremendous flavor punch. The sweet and salty flavors of the olives and apricots are a dream, and the bit of caramelization from the chicken just makes this meal melt in your mouth. If you aren’t a fan of apricots, this dish would work well with dried prunes or figs too. And I love how simple it is to prepare! I literally had it in my fridge within 5 minutes, then I just let it sit overnight, so by the time the next evening rolled around, I simply had to toss it in the oven and forget about it. Serve with your favorite salad or steamed veggies, and serve atop some warm, while wheat couscous if you have a few extra Points to spare.
