Who says you always have to eat fajitas in a flour tortilla? Yes, I know it is delicious. Aren’t all carbs? But having your fajita straight out of the skillet is a highly underestimated option. Not only are you saving calories, carbs, fat, and sugar grams, but you can really enjoy the wonderfully bold flavors of the chicken this way. And you can go crazy on the toppings without worrying about it dripping out all over you. I will often make this chicken fajita skillet, and then use the meat on top of salads, rice, beans, or just as is with some of my favorite fajita toppings. Just remember to add in the Smart Points for any extras you may add, like guacamole, sour cream, or cheese. Moroccan Beef and Lamb Meatballs

These Moroccan Beef and Lamb meatballs are definitely a game changer in the meatball department. Tender, succulent, and full of traditional Moroccan spices, this recipe has become a favorite in our household. My kids love to eat them stuffed inside a pita, and topped with my homemade tzatziki sauce and cucumber tomato salad. It is truly a mouthwatering combination. You can easily skewer these meatballs for easy grilling, if you’d prefer that cooked over coals taste….it’s divine! Maybe take some to your 4th of July BBQ this year and blow those burgers and hotdogs out of the water! Everytime I make them, I triple the batch and then freeze some because they are just so incredibly tasty and I love having some remade to heat up. Moroccan Beet Salad

In Morocco, beets are used regularly in salads because they are available year round there. A good friend of mine, who I consider to be an amazing cook, and who is also of Moroccan heritage, once served this beet salad at a dinner she had invited us to. It was so divine, I simply had to find out the recipe and then how to make it Weight Watchers friendly. As luck would have it, this salad is already pretty light and low in Points, so I just had to make a few alterations. And though it takes a bit more preparation time because the beets need to be roasted first, I assure you that it’s absolutely worth the effort. The roasting process lends such a beautiful, and rich flavor to the beets, and when tossed with the remaining ingredients, the end result is a spectacular salad that’s not only lovely and delicious, but high in nutrients as well. Naturally sweet and very healthy, beets have earned the reputation of being a superfood that’s rich in potassium, manganese, vitamin C, and fiber. And they are 0 Smart Points! This cauliflower rice trend that’s been going around has really been working for me! I’m amazed at how many places I can switch out a high calorie, flour based carb, for a much lighter and healthier vegetable instead. This Chicken Taco Bowl is no exception. Because the meat and beans are so wonderfully seasoned, and the 0 Points toppings are also immensely flavorful, you can barely notice that the traditional Mexican rice has been replaced with some 0 Point riced cauliflower. Chicken Pad Thai with Zoodles

You guys, I CANNOT get enough of Zoodles lately! If you haven’t heard of “noodles”, they are simply spiraled zucchini. It’s a great substitute for regular, high calorie pasta or rice noodles, and it takes on the flavor of whatever you are cooking it with, very nicely. After having such great success with it in many other recipes, I decided to try it in one of my most favorite noodle based recipes ever – Pad Thai. So instead of traditional Thai rice noodles, I used my Zoodles instead. It turned out fantastic! It was delicious, and filling, and definitely helped to satiate my craving for Pad Thai. If you have a couple of extra Smart Points to spare, I recommend adding some crushed peanuts on top, just before serving – it really helps to give that authentic, restaurant feel. Enjoy!

Well, my favorite team didn’t make it to the Super Bowl (so close, though!), but that doesn’t mean I won’t partake in Super Bowl festivities! And where there’s a Super Bowl party, there’s food…lots of yummy food. To keep myself on track, I like to bring along a big pot of this delicious Crock Pot Chicken Taco Chili to share. It is SO good, and always a hit on game day. When I take it to a party, I bring along a bag of tortilla chips with it, along with diced onions, avocados, shredded cheese, and sliced jalapeños…some of my favorite taco toppings. This give people the option of dipping the chips in it, or just eating it like a traditional chili – straight out of the bowl. And everyone LOVES it! Cauliflower Nachos

Notch-yo average nacho (see what I did there?), these healthy Cauliflower Nachos are an absolutely decadent treat that are completely guilt free. Nachos are one of my favorite guilty indulgences, and just by making a couple of healthy changes, I can enjoy a big heaping serving of them. In this recipe, we are simply switching out the high fat, high calorie tortilla chips, and substituting them with Mexican spiced, roasted cauliflower slices. Cauliflower has such a mild, neutral flavor, that when you smother it with seasonings, cheese, salsa, red onions, etc, it takes on the flavor those foods, and you don’t really notice it. Granted, it doesn’t have the “crunch” of tortilla chips, but let’s face it…the chips are just a vehicle for all those nacho toppings! Feel free to go crazy and add other toppings like black beans, ground chicken or beef, carne asada, diced peppers…you get the idea. I cannot even begin to tell you how happy this recipe makes me. It’s a MUST try!

I truly believe that this Baked Falafel Recipe is actually much better than the traditional fried version. Chipotle Shrimp Tacos

Oh, how I adore these tacos. This quick and easy Chipotle Shrimp Tacos Recipe is not only a perfect weeknight dinner recipe that can be prepared in a pinch, they are incredibly delicious. The rich, smoky chipotle cream sauce is the star of this dish. The amount of chipotles in adobo sauce will affect how spicy these are, so if you can’t take too much heat, stick with just 1 tbsp. However, if you can handle spicy, then add as much as you’d like. I actually doubled the recipe so that I could have some for lunch the next day. One thing to pay attention to is the tortilla size. The ones I used in this recipe were the “slider” size. If you use a larger tortilla, it may add an extra Point. Serve with black beans, and roasted corn on the cob or other roasted veggies for a complete meal. Enjoy!

Chicken Tacos – 5 Smart Points

The last couple of weeks I’ve had a craving for tacos. Ground beef is finally coming down in price (a bit), but I still frequently turn to chicken. My in-laws raise chickens each year, then butcher them and dole them out among the family. As a result, we always have delicious chickens in the freezer, so we have leftover chicken from our Sunday dinners. It’s a great way to have easy, lean meat that’s ready to put into another recipe for the rest of the week. Chicken tacos is one that is very easy, delicious and is perfect for dinner. I also love the leftovers for lunch, they’re quick and easy and still delicious and healthy. One of the great things about tacos is that you can pile on all the extras you want, and if you do it right, you can still keep the points down by adding mostly veggies.
