Chicken Meatballs and Zoodles

Another amazing Zoodles recipe today! I bought of a ton of zucchini recently,and have been experimenting with “noodles” in place of regular, high calorie pasta noodles. And I just cannot contain my excitement in sharing these recipes!! The other night, my kids wanted spaghetti and meatballs, so I made regular, whole wheat pasta for them, but decided to do zoodles for my husband and I. You guys…it was SO good. I was a bit skeptical about this, but the key was having really flavorful sauce and meatballs, and you don’t even notice the zucchini. It’s a lot easier that using roasted spaghetti squash and I liked the flavor better too. Seriously delicious. If you have yet to get yourself a zucchini spiralizer (THIS one is my favorite), I highly recommend that you do so asap, and start getting on board the zoodle train. You will be SO glad you did.

Italian Herbed Chicken in a Creamy Mushroom Wine Sauce

When I’m feeling a little fancy, this easy Italian Herbed Chicken in a Creamy Mushroom Wine Sauce Recipe is just the ticket. I had something similar once at an Italian restaurant in Los Angeles, and I was blown away by how rich and flavorful this dish was. So I recreated a lightened up version myself, and it’s pretty amazing. First of all, I love ANY sauce with red wine in it. Seriously, I will just eat it all up with my spoon and then lick the plate. And the red wine sauce simmered with milk and parmesan cheese is oh so heavenly. Most recipes that have a creamy sauce use heavy cream which can really increase the Weight Watchers points. By using milk and a bit of cornstarch, this dish delivers the perfect consistency and flavor with a LOT less saturated fat and calories. My kids ate this over steamed rice, with a side of roasted brussel sprouts. It was sooooo good! Chili has always been one of my favorite cold weather foods – there’s just something so comforting and soul warming about it. And my Chipotle Chicken Chili Recipe has an extra boost of flavor heat to warm you up! Made with crumbled ground chicken and Italian sausage, this chili is packed with protein and is incredibly satisfying. I’ve made this recipe many times, and it’s always well received. Colorful Roasted Vegetables – 3 Smart Points

I love to roast vegetables. It’s one of my favorite ways to cook vegetables. It makes the flavors so much richer and more delicious than just steaming the vegetables. I also like to roast them because I can have them ready to go in the oven for Sunday dinner and have the oven set to go on at a specific time. That way they’re ready to go when we get home from church and I have very little prep to do for Sunday dinner. I decided to branch out a bit for these roasted vegetables. I typically do potatoes and carrots, celery and maybe some peppers, so I decided to really make these bright, colorful and different. I started with some very young and tender asparagus. I broke the tough ends off (just bend the stalk and the tough end will snap off, you’ll be left with tender asparagus spears). Then added two colors of carrots, beets, bell peppers and broccoli. I added my usually olive oil and garlic, but then added some rosemary and basil with my salt and pepper. I usually just mix it on the pan (so I don’t have to wash another dish) and then stick it in the oven. You can roast them immediately, or do a delay start (if your oven has one) so that they’re ready to go when you get home. I wouldn’t recommend leaving them all day, but they’re find for an hour or two. I loved the bright colors and different textures of the vegetables. They’re perfect with roast chicken, beef or even pork. Really, they’re perfect with just about anything. I love to add them to my meal when I know that the rest of my meal isn’t going to be colorful and pretty, since they not only add fiber and texture to my meal but make the whole table seems colorful and festive. Chickpea Puttanesca over Polenta

In an effort to eat less meat (the reason why is a whole looking other blog post for another time), I’ve been experimenting with more vegan and vegetarian Weight Watchers Recipes. A friend of mine cooked this for me one day, and it was so good, I knew I had to recreate it at home! The mild, soft polenta is topped with a tangy puttanesca sauce that’s to die for. Now, because you all know I love shortcuts, I used a prepared log of Trader Joe’s Organic Polenta. If you want to make your own from scratch, you absolutely could. I just often have my hands full while cooking dinner, so I try to save time wherever I can. But even with the pre-made polenta, this traditional Italian recipe is divine! You get a hint of the salty brine from the olives and capers, and the sweet and tangy tomato sauce balances it all out. It’s loaded with protein and fiber and is incredibly satisfying. A real bargain for just 6 Smart Points too! Enjoy.

Roasted Red Pepper Tomato Soup – 4 Smart Points

Roasted Red Pepper Soup
I am someone who really enjoys soup in the winter. There’s something about a bowl of rich and delicious soup that is comforting and definitely helps to warm you up on a cold night. Well, today wasn’t actually cold (it was a January warm “snap”), but I still love roasted red pepper tomato soup. Plain tomato soup really isn’t my thing. I’m not a huge fan of the flavor, but roasted red peppers add something to the tomato soup to make it really delicious. I like to make up a huge batch of this and then freeze several quart bags of it, once it’s cooled down. It’s a great way to have a really fast, delicious and homemade dinner ready to go. I usually serve it with grilled cheese sandwiches, but you can just put a few croutons in the soup if you’re watching your carbs. I like the sour cream in this soup. It seems to add a little more creamy flavor without quite as much fat as some options. I typically use Daisy light sour cream, since it doesn’t have all the extra ingredients. You can skip the sour cream to keep the fat down, but it adds the creaminess that you really need to put this soup over the top. [Read more…]

Zucchini Lasagna – 8 Smart Points

Zucchini Lasagna

Who doesn’t love lasagna? It’s a favorite meal of mine, and one that I can easily make gluten free (just use gluten free noodles). It’s a great meal to stick in the freezer when I know I’m going to be out of town, so that my husband can just stick it in the oven after work. I thought I’d give our traditional lasagna recipe a low-carb makeover. Zucchini works so well as noodles in other traditional pasta dishes, so why not lasagna? It turns out this is delicious. I’m pretty picky about how I like my zucchini (especially cooked), but this was delicious. It was tender, but not overpowering with the rest of the delicious sauce. Give this one a try for one of your next family meals. It’ll be a definite hit!
