We are winding down to the last few weeks of the school year, and I am running out of steam. That means I need fast and easy weeknight dinners that are healthy, and Weight Watchers friendly. This One Pan Crispy Parmesan Chicken Recipe is perfect for the days when I want a fabulous, home cooked meal, without requiring a lot of effort. Another fabulous one pan meal for dinner, means a lot less dishes to wash after dinner! This Crispy Parmesan Chicken recipe was a home run with the whole family. The baked chicken was so juicy, and the crispy parmesan coating had a nice hint of garlic and Italian seasonings. Having the veggies coated in the same delicious mixture made them absolutely delectable, and my kids ate every last bite. My son even took leftovers to school for lunch the next day! Roasted Cauliflower Chicken Bolognese

Pasta is one of my kids’ favorite meals, so I find myself making it a lot. The problem is, I also love pasta, but those noodles always end up making the dish too high in Points for me to eat it. So I’m always looking for an alternative way to enjoy my favorite pasta dish, without having to use actual pasta. “Zoodles” has always been a preferred option of mine, but recently I decided to try roasted cauliflower instead, and I have to say, I like it even BETTER! You guys — it is really, really good!! The cauliflower is so mild, it picks up the flavor of the sauce, and is a great way to enjoy a guilt free pasta dish. I recently tried it with my light bolognese sauce, and it was absolutely amazing! What a great way to pack in more nutrition, enjoy a delicious and decadent pasta dish, and not use too many Smart Points. I’ll definitely be trying roasted cauliflower as a substitute for pasta in some other popular Italian recipes too. Enjoy!

Chicken Meatballs and Zoodles

Another amazing Zoodles recipe today! I bought of a ton of zucchini recently,and have been experimenting with “noodles” in place of regular, high calorie pasta noodles. And I just cannot contain my excitement in sharing these recipes!! The other night, my kids wanted spaghetti and meatballs, so I made regular, whole wheat pasta for them, but decided to do zoodles for my husband and I. You guys…it was SO good. I was a bit skeptical about this, but the key was having really flavorful sauce and meatballs, and you don’t even notice the zucchini. It’s a lot easier that using roasted spaghetti squash and I liked the flavor better too. Seriously delicious. If you have yet to get yourself a zucchini spiralizer (THIS one is my favorite), I highly recommend that you do so asap, and start getting on board the zoodle train. You will be SO glad you did.

Chicken Bruschetta

Now that temperatures are starting to heat up here in California (sorry, East Coast), I’ve been craving meals that are fresh and light, as opposed to rich and comforting. One that I tried recently was this delicious Italian Chicken Bruschetta. Bruschetta, if you’ve never had it, is kinda like Italian salsa. It’s a simple blend of fresh tomatoes, basil and garlic. It is incredibly easy to make, but the flavor is wonderfully bright and complex. I decided to use it on top of some simple grilled chicken breasts, and the result was divine! You can grill your chicken, roast it, or pan fry it — whichever you prefer. The fresh bruschetta on top is the perfect complement. This is also magnificent as a sandwich with some fresh Italian bread and some creamy goat cheese – one of my most favorite sandwiches ever! The flavors are so bold and mouthwateringly good. So grab some tomatoes and basil, and give this chicken bruschetta recipe a try….you’ll be so glad you did!

Italian Herbed Chicken in a Creamy Mushroom Wine Sauce

When I’m feeling a little fancy, this easy Italian Herbed Chicken in a Creamy Mushroom Wine Sauce Recipe is just the ticket. I had something similar once at an Italian restaurant in Los Angeles, and I was blown away by how rich and flavorful this dish was. So I recreated a lightened up version myself, and it’s pretty amazing. First of all, I love ANY sauce with red wine in it. Seriously, I will just eat it all up with my spoon and then lick the plate. And the red wine sauce simmered with milk and parmesan cheese is oh so heavenly. Most recipes that have a creamy sauce use heavy cream which can really increase the Weight Watchers points. By using milk and a bit of cornstarch, this dish delivers the perfect consistency and flavor with a LOT less saturated fat and calories. My kids ate this over steamed rice, with a side of roasted brussel sprouts. It was sooooo good! Greek Quinoa Salad

Our family is on a quinoa eating kick lately, and I’m taking advantage of it my cooking as many Weight Watchers quinoa recipes as I can! Today’s recipe is just a simple Greek salad with quinoa as the base, instead of lettuce. This makes an amazing side dish to accompany any fish or chicken meal. But you can also make this as a main course salad simply by adding some grilled chicken or fish right on top of it. I just adore the texture and nutty flavor that the quinoa adds to it. And it’s so much more filling than a standard salad! This Greek quinoa salad is so incredibly flavorful, and I’ll often serve it on top of a bed of butter lettuce and top it with some grilled chicken and veggies for a very satisfying meal! Well, my favorite team didn’t make it to the Super Bowl (so close, though!), but that doesn’t mean I won’t partake in Super Bowl festivities! And where there’s a Super Bowl party, there’s food…lots of yummy food. To keep myself on track, I like to bring along a big pot of this delicious Crock Pot Chicken Taco Chili to share. It is SO good, and always a hit on game day. With the cold, rainy weather we’ve been having in here in SoCal lately, I have been a soup making machine! My kids LOVE soup, and it’s very helpful for me, because it fills me up, is easy to make, and is great to freeze for when I need a quick snack or meal. A recent soup I just made to go with my daughter’s favorite lunch (grilled cheese sandwiches) was this Roasted Red Pepper and Tomato soup. Oh Em Gee….this was SO delicious! The soup was made entire from scratch, with all whole food ingredients. It was light, brightly flavored, and wonderfully fresh. I’ve made homemade tomato soup from scratch before, but the real trick here is the roasting of the vegetables. It adds such a slightly smokey flavor, and really helps to bring out the flavor of the vegetable. And the best part? It’s just 1 Smart Point per serving! You’ve gotta give this one a try ASAP.

Open Faced Chicken Gyro

With 2016 almost at an end, it’s time to get back on track and detox from all the holiday goodies. Gyros have always been one of my favorite guilty indulgences, and today I’m sharing my favorite healthy makeover of a traditional Greek gyro. First of all, I subbed out the fatty, high cholesterol lamb meat with tender chicken breast marinated in an amazing blend of Greek spices, lemon juice and yogurt which helps to tenderize the breasts while giving them fantastic flavor. Also, by making my homemade tzatziki sauce, I was able to lower the calories while also bringing in some more incredible tastes. Trust me when I tell you that after making your own tzatziki sauce, you will never want to buy the pre-made store bought kind again. Finally, everything is served on top of a whole wheat pita, and topped with fresh red onion and tomato slices. It is so good. SO GOOD! And at just 7 Smart Points each, these healthy chicken gyros make a great Weight Watchers lunch idea.

Chipotle Chicken Chili

Chili has always been one of my favorite cold weather foods – there’s just something so comforting and soul warming about it. And my Chipotle Chicken Chili Recipe has an extra boost of flavor heat to warm you up! Made with crumbled ground chicken and Italian sausage, this chili is packed with protein and is incredibly satisfying. I’ve made this recipe many times, and it’s always well received. It can feed large crowds and is relatively inexpensive to make. And at just 7 Smart Points per serving, this Weight Watchers chili recipe tastes like a splurge, but is absolutely guilt free. If I have the time, I will let this cook for 3-5 hours….because the longer it cooks, the tastier it is. Leftover Thanksgiving Turkey White Chili

Got some leftover turkey in your fridge? I sure do. And this Leftover Thanksgiving Turkey White Chili Recipe is exactly what I’m going to be using it in tomorrow. I’ve always felt that the leftover turkey just doesn’t taste as good as the other Thanksgiving side dishes do the next. It always ends up being the last leftover left. And given that turkey can tend to be a bit dry, putting it in a creamy chili is the perfect resolution. The calorie count for this recipe is based on a blend of both white and dark turkey meat. If you use just the white meat, then you can take off about 2 extra Smart Points. It’s such a filling and satisfying dish though, I think it’s worth it to keep the dark meat in there. If I make this for lunch tomorrow, it’ll easily keep me full tis dinnertime, so I don’t mind spending the extra Points. Serve with a light salad or steamed veggies for a complete meal. Chickpea “Salsa” – 3 Smart Points

Chickpea Salad

I really like to use beans in things because it makes it much lower in fat than meat, but it’s still a great source of protein. Beans are also a great source of fiber – which really helps when you’re trying to eat healthy and lose weight. The fiber helps to fill you up and when you feel full longer, you’re less likely to eat as much. They’re also so handy to have on hand. I usually just have a variety of canned beans on hand (several cans of each) so that I have them ready to go when a recipe calls for them. I wanted to do something with fresh garden vegetables, but something with a definitely Mediterranean flavor to it. I ended up combining a couple of recipes, including one with a really tasty oil and vinegar dressing. I used a low calorie pita bread as a scoop and I fell in love with it. It’s easy to put together and right now you can get garden fresh veggies and herbs to put in this. It’s fabulous fresh, and (I think) even better after it’s had a day or two to marinate. While I had it with pita bread the first time, it really wasn’t necessary. It was just as good with a spoon! This will definitely become a favorite salad for my lunch options. [Read more…]
