Tuscan White Bean and Sausage Soup Recipe – 6 Smart Points

Tuscan White Bean and Sausage Soup

A true comfort food, this Tuscan-Style White Bean and Sausage Soup makes a delightful, cozy dinner on a cold winter’s day. I love how the flavors of this soup come together, and warms your home with the most amazing aromas. If I want to kick things up a notch, I’ll use spicy Italian sausage instead of the mild. It’s SO good! And this Weight Watchers soup recipe doesn’t take a lot of time or effort to prepare….just around 30 minutes. Another great healthy dinner idea for when you’re short on time. If you prefer a creamy texture to the soup, just process 1 of the cans of beans before adding them to the soup. You can keep the other beans whole. That will add some thickness to the broth, while still leaving some beans whole for texture. I personally like it with a broth-y base so I can dip some toasted crostini or garlic bread into it. And at just 6 Smart Points per serving, this satisfying soup is an ideal dinner or lunch that will fill you up! Enjoy.

Chicken Meatballs and Zoodles – 6 Smart Points

Chicken Meatballs and Zoodles

Another amazing Zoodles recipe today! I bought of a ton of zucchini recently, and have been experimenting with “noodles” in place of regular, high calorie pasta noodles. And I just cannot contain my excitement in sharing these recipes!! The other night, my kids wanted spaghetti and meatballs, so I made regular, whole wheat pasta for them, but decided to do zoodles for my husband and I. You guys…it was SO good. I was a bit skeptical about this, but the key was having really flavorful sauce and meatballs, and you don’t even notice the zucchini. It’s a lot easier that using roasted spaghetti squash and I liked the flavor better too. Seriously delicious. If you have yet to get yourself a zucchini spiralizer (THIS one is my favorite), I highly recommend that you do so asap, and start getting on board the zoodle train. You will be SO glad you did.
