Pasta is one of my kids’ favorite meals, so I find myself making it a lot. The problem is, I also love pasta, but those noodles always end up making the dish too high in Points for me to eat it. So I’m always looking for an alternative way to enjoy my favorite pasta dish, without having to use actual pasta. “Zoodles” has always been a preferred option of mine, but recently I decided to try roasted cauliflower instead, and I have to say, I like it even BETTER! You guys — it is really, really good!! The cauliflower is so mild, it picks up the flavor of the sauce, and is a great way to enjoy a guilt free pasta dish. I recently tried it with my light bolognese sauce, and it was absolutely amazing! What a great way to pack in more nutrition, enjoy a delicious and decadent pasta dish, and not use too many Smart Points. I’ll definitely be trying roasted cauliflower as a substitute for pasta in some other popular Italian recipes too. Enjoy!
Another amazing Zoodles recipe today! I bought of a ton of zucchini recently,and have been experimenting with “noodles” in place of regular, high calorie pasta noodles. And I just cannot contain my excitement in sharing these recipes!! The other night, my kids wanted spaghetti and meatballs, so I made regular, whole wheat pasta for them, but decided to do zoodles for my husband and I. You guys…it was SO good. I was a bit skeptical about this, but the key was having really flavorful sauce and meatballs, and you don’t even notice the zucchini. It’s a lot easier that using roasted spaghetti squash and I liked the flavor better too. Seriously delicious. If you have yet to get yourself a zucchini spiralizer (THIS one is my favorite), I highly recommend that you do so asap, and start getting on board the zoodle train. You will be SO glad you did.
Turning traditional, fussy dishes into a simpler casserole version has been one of my favorite cooking pastimes recently. We are all big stuffed pepper fans over here, so I thought I’d make an attempt to turn it into a casserole instead, which turned out to be a fantastic idea! You get all the wonderful flavors of the customary stuffed peppers, but with less effort and an easier to eat form. Plus, this Weight Watchers dinner recipe was easy to freeze and store in individual serving containers, so that I could have a healthy meal easily available when needed. It was delicious, satisfying, and just 5 Smart Points per serving. We’ll definitely be adding this dish into regular rotation around here!
So apparently, this “crack slaw” thing is a big deal. I’ve been hearing all about it lately, and with such an interesting name, I had to see what in the world it was. Crack slaw is basically just a simple stir fry made with cabbage and ground beef that is supposed to be so incredibly delicious that it’s addictive. Just like crack. Given that it’s high in protein, and low in sugar and carbs, I knew this would be a perfect Weight Watchers recipe to try. So I did a bit if research, and came up with my own version of crack slaw. I choose to use ground chicken instead of ground beef to lower the fat content, added in some broccoli slaw I had on hand, and made a few tweaks to the seasoning. And I have to say, this was pretty darn good! You could definitely play around with this and incorporate any veggies you’d like. Red bell pepper, snow peas, mushrooms are a few great options. And at just 2 Smart Points per serving, this Weight Watchers recipe could be a life saver!
Well, here we are…the last day of 2016. And I’m full steam ahead in the kitchen prepping for weeks of healthy eating and holiday binging detox! Today’s recipe is one that is a HUGE help to me when I’m trying to cut calories…Stuffed Cabbage Soup. Growing up, my mom would often make stuffed cabbage rolls for dinner. I remember that they were really tasty, but that we didn’t have them often because the recipe required a lot of steps and it was quite time consuming to make. So to get the flavors of traditional stuffed cabbage rolls without all the work, I prefer to make my “lazy mom” version, which basically combines all the ingredients in a soup rather than the rolls. It’s WAY easier, and it tastes wonderful! So bright and fresh, but still hearty and satisfying. I eliminated the rice to save some calories, and I honestly didn’t miss it at all. If you still feel like you need the rice, you could always try Miracle Rice, which is zero calories, so it won’t affect the Smart Points count at all. I actually just made a huge batch of this soup, and am freezing individual portions of it, so I can have it on hand when I’m hungry or hangry (so hungry that I’m angry). It prevents me from eating food that isn’t a part of my healthy eating plan which can derail my progress. If you love stuffed cabbage rolls, I highly recommend this leaner, lighter, soup version instead! Enjoy. And Happy New Year!!
Chili has always been one of my favorite cold weather foods – there’s just something so comforting and soul warming about it. And my Chipotle Chicken Chili Recipe has an extra boost of flavor heat to warm you up! Made with crumbled ground chicken and Italian sausage, this chili is packed with protein and is incredibly satisfying. I’ve made this recipe many times, and it’s always well received. It can feed large crowds and is relatively inexpensive to make. And at just 7 Smart Points per serving, this Weight Watchers chili recipe tastes like a splurge, but is absolutely guilt free. If I have the time, I will let this cook for 3-5 hours….because the longer it cooks, the tastier it is. If there’s one food I could eat everyday for weeks without tiring if it, it’s tacos. That’s partly because there are SO many different ways to prepare them, and I’d never get bored. For this chicken tacos recipe, I used cabbage leaves instead of traditional taco shells to help cut carbs and calories. I also added some swiss chard leaves for added nutrition and for it’s aesthetics. The fresh, raw corn salsa is such a unique flavor too…which I adored. My husband said he would have preferred that the corn was roasted first, so if raw corn isn’t for you, just roast the cob in the oven or on the grill first. But the real show pony of this recipe is the chipotle sour cream!! I could NOT get enough of it! These tacos were a total hit…my 6 year old devoured them….even with that cabbage shell. And at just 5 Smart Points per taco, you are getting one seriously delicious and nutritious dish!
