I’m all about Weight Watchers Soup Recipes these days, and my Lentil, Beef, and Quinoa Soup was definitely one of my favorite new recipes that came out of my kitchen this week. I love soups that are hearty, and filling, and pretty much a complete meal in one bowl. The tender lentils and juicy ground beef are the stars of this soup. They add wonderful flavor and texture, and are complemented perfectly by the earthy quinoa, wholesome vegetables and incredible spices. It’s a pretty easy soup to throw together, it delivers a lot of flavor, and is perfectly satisfying. The nourishing ingredients are a powerhouse of nutrition too…tons of fiber, protein, and vitamins. On a chilly fall day, this Lentil, Beef, and Quinoa Soup recipe makes a great lunch or dinner with little to no side dishes needed. I’d serve this with maybe a light green salad and nothing more. Moroccan Beef and Lamb Meatballs

These Moroccan Beef and Lamb meatballs are definitely a game changer in the meatball department. Tender, succulent, and full of traditional Moroccan spices, this recipe has become a favorite in our household. My kids love to eat them stuffed inside a pita, and topped with my homemade tzatziki sauce and cucumber tomato salad. It is truly a mouthwatering combination. You can easily skewer these meatballs for easy grilling, if you’d prefer that cooked over coals taste….it’s divine! Maybe take some to your 4th of July BBQ this year and blow those burgers and hotdogs out of the water! Everytime I make them, I triple the batch and then freeze some because they are just so incredibly tasty and I love having some remade to heat up. Brussel sprouts. It seems that most people either love them or hate them. I fall into the “love them” category, and I’m grateful that my kids do too! There are many ways to prepare them, but my absolute favorite method is roasting. It brings out the most delicious flavor, and I just cannot get enough of them! In this recipe, I paired them with some sweet potatoes, added some delicious seasonings, and then finished it off by tossing them in red wine vinegar. The flavor combination was spectacular! Something about the earthy, almost bitter taste of the brussel sprouts, with the tender sweetness of the sweet potatoes, just makes this dish mouthwateringly good. Moroccan Beet Salad

In Morocco, beets are used regularly in salads because they are available year round there. A good friend of mine, who I consider to be an amazing cook, and who is also of Moroccan heritage, once served this beet salad at a dinner she had invited us to. It was so divine, I simply had to find out the recipe and then how to make it Weight Watchers friendly. As luck would have it, this salad is already pretty light and low in Points, so I just had to make a few alterations. And though it takes a bit more preparation time because the beets need to be roasted first, I assure you that it’s absolutely worth the effort. The roasting process lends such a beautiful, and rich flavor to the beets, and when tossed with the remaining ingredients, the end result is a spectacular salad that’s not only lovely and delicious, but high in nutrients as well. Naturally sweet and very healthy, beets have earned the reputation of being a superfood that’s rich in potassium, manganese, vitamin C, and fiber. And they are 0 Smart Points! So if you haven’t been getting any beets in your diet, this Moroccan Beet Salad is the recipe to try. Enjoy!

This cauliflower rice trend that’s been going around has really been working for me! I’m amazed at how many places I can switch out a high calorie, flour based carb, for a much lighter and healthier vegetable instead. This Chicken Taco Bowl is no exception. Because the meat and beans are so wonderfully seasoned, and the 0 Points toppings are also immensely flavorful, you can barely notice that the traditional Mexican rice has been replaced with some 0 Point riced cauliflower. Not only is it healthier, but it’s just as delicious and filling. I even mixed some of the cauliflower rice in with regular rice and gave it to my kids….they gobbled it right up. Classic Cuban Picadillo Recipe – 5 Smart Points

Classic Cuban Picadillo

If you’ve never had it/heard if it before, picadillo is a traditional and popular dish that is a staple in Cuban cuisine. It’s basically a tender stew of ground beef and tomatoes, with cinnamon and/or raisins added for sweetness, and olives added for salt. It’s typically served over rice, but also works great as a stuffing for empanadas, quesadillas or wraps. It smells and tastes heavenly, and is the ultimate in Cuban comfort food. This recipe is favorite of my kids’ and always gets gobbled up. They eat it with the rice, and my husband and I just ate it as is. To keep it healthy and Weight Watchers friendly, I just used an extra lean ground beef and used cinnamon instead of raisins. It was incredibly fast and easy to make, and was absolutely divine. Truly a satisfying and indigent dish that is totally guilt free. I highly recommend giving this one a try!

Today, my kids asked me to post about their favorite salmon recipe – my Honey Lime Salmon. Roasted salmon is a great meal option for busy days when I’ve had little to no time to prep, because it cooks so quickly. Plus, this particular Weight Watchers salmon recipe is easy to follow, and requires just a handful of ingredients. So with little fuss, I can get a healthy and delicious meal on the table that the whole family enjoys. I often will throw some chopped veggies on the baking pan to cook along with salmon, and I’ll toss them with any extra honey lime sauce I may have. Then it becomes a simple, one pan meal, which means less to clean up. Yay! I’ve also served this over some fresh steamed rice, if I’m looking to add some carbs to the meal. But it’s such a tasty and easy meal, you’ll find this recipe becoming one of your go-to’s too.

Crock Pot Chicken Taco Chili

Well, my favorite team didn’t make it to the Super Bowl (so close, though!), but that doesn’t mean I won’t partake in Super Bowl festivities! And where there’s a Super Bowl party, there’s food…lots of yummy food. To keep myself on track, I like to bring along a big pot of this delicious Crock Pot Chicken Taco Chili to share. It is SO good, and always a hit on game day. When I take it to a party, I bring along a bag of tortilla chips with it, along with diced onions, avocados, shredded cheese, and sliced jalapeños…some of my favorite taco toppings. This give people the option of dipping the chips in it, or just eating it like a traditional chili – straight out of the bowl. And everyone LOVES it! It’s a Weight Watchers Super Bowl recipe that is super easy to make, freezes wonderfully, and tastes incredible. Cauliflower Nachos Recipe – 5 Smart Points

Cauliflower Nachos

Notch-yo average nacho (see what I did there?), these healthy Cauliflower Nachos are an absolutely decadent treat that are completely guilt free. Nachos are one of my favorite guilty indulgences, and just by making a couple of healthy changes, I can enjoy a big heaping serving of them. In this recipe, we are simply switching out the high fat, high calorie tortilla chips, and substituting them with Mexican spiced, roasted cauliflower slices. Cauliflower has such a mild, neutral flavor, that when you smother it with seasonings, cheese, salsa, red onions, etc, it takes on the flavor those foods, and you don’t really notice it. Granted, it doesn’t have the “crunch” of tortilla chips, but let’s face it…the chips are just a vehicle for all those nacho toppings! Feel free to go crazy and add other toppings like black beans, ground chicken or beef, carne asada, diced peppers…you get the idea. I cannot even begin to tell you how happy this recipe makes me. It’s a MUST try!

Baked Falafel with Tahini

I truly believe that this Baked Falafel Recipe is actually much better than the traditional fried version. The flavors from the spices and fresh parsley and cilantro are bright and bold, and the garbanzo beans are thick and meaty. The outside is crisped to perfection, and the inside is soft and creamy. Topped with homemade tahini sauce and fresh cucumber salad, and stuffed into a whole pita, it’s one seriously satisfying meal. You can even skip the pita, and serve the falafel and on top of a big salad. With lots of protein, fiber, and flavor, this healthy homemade falafel recipe is an excellent one to try this New Year.
