If you are trying to eat gluten-free, or just healthier in general, my modern take on traditional Middle Eastern Tabbouleh Salad is a great recipe to try. The bright, fresh herbs, the tender, nutty quinoa, and the tangy, lemony dressing, all make for a perfect flavor combination. Tabbouleh is originally a Lebanese dish, and is a staple in Middle Eastern cuisine, though it is traditionally made with bulgar. But I decided to try using the multi-colored quinoa that I had on hand in place of the bulgar. The end result was a wonderfully flavorful salad that has a more delicate texture, and offers more protein than bulgar-based tabbouleh. This makes it an ideal Weight Watchers vegan recipe, because the protein content of the quinoa makes it a great choice for vegans and vegetarians who cannot get their protein servings from meat. Also, the health benefits from quinoa are no joke – it’s an amazing source of fiber, amino acids, magnesium, and riboflavin. And at just 4 Smart Points per serving, this light, lemony, and refreshing Quinoa Tabbouleh Salad makes a great summer salad, but I love it so much, it’s on my table throughout all the seasons!

If you are cooking a Weight Watchers dinner on a budget, this Sole Piccata recipe is an ideal option. Sole is relatively inexpensive, and it’s a mild flavored fish that works well in a variety of dishes. Given that I’ve always loved chicken piccata, I decided to try a version using sole in place of the chicken. The sole is simply dusted with seasoned flour, pan fried, and then topped with a beautiful sauce made with wine, butter, and capers. The wine and butter sauce is really the star of this recipe. Summer Green Bean Salad

We are counting down the last few days of school until we are in full summer swing! And summer means lazy days by the pool and little effort in the kitchen. This Summer Green Bean Salad Recipe is the perfect dish for those hot days, when you want a simple dish that’s light and healthy. I like the green beans to be a little crisp, so I just blanch them in the boiling water for just a few minutes, and then immediately transfer them to an ice bath. You could steam them too, if you prefer. The tangy lemon garlic dressing is the perfect complement to the salad, and ties all the components together. And if you are lucky enough to have any leftover, they are just as delicious the next day! Usually salads get gross in the fridge over night, but thanks to this dish being comprised of fresh, crisp veggies, it can be enjoyed again the next day. Yay! Perfect for poolside parties, summer BBQs, and 4th of July picnics, this 1 Point salad is a must try.

Open Faced Chicken Gyro

With 2016 almost at an end, it’s time to get back on track and detox from all the holiday goodies. Gyros have always been one of my favorite guilty indulgences, and today I’m sharing my favorite healthy makeover of a traditional Greek gyro. First of all, I subbed out the fatty, high cholesterol lamb meat with tender chicken breast marinated in an amazing blend of Greek spices, lemon juice and yogurt which helps to tenderize the breasts while giving them fantastic flavor. Also, by making my homemade tzatziki sauce, I was able to lower the calories while also bringing in some more incredible tastes. Trust me when I tell you that after making your own tzatziki sauce, you will never want to buy the pre-made store bought kind again. Finally, everything is served on top of a whole wheat pita, and topped with fresh red onion and tomato slices. It is so good. SO GOOD! And at just 7 Smart Points each, these healthy chicken gyros make a great Weight Watchers lunch idea.
