An easy wholesome dinner that is made with fresh ingredients, and takes very little prep time. If you’ve ever had bruschetta as an appetizer, then you know how magical the flavor combination of tomatoes, basil, garlic and balsamic vinegar is. This Chicken Bruschetta Bake recipe takes all the divine flavors of a bruschetta appetizer, and turns it into a complete meal. Typically, bruschetta is served on bread, toast, or crackers. But here, it’s baked over top of chicken breasts, which keeps them tender and juicy, and locks in those incredible flavors. If you are trying to eat gluten-free, or just healthier in general, my modern take on traditional Middle Eastern Tabbouleh Salad is a great recipe to try. The bright, fresh herbs, the tender, nutty quinoa, and the tangy, lemony dressing, all make for a perfect flavor combination. Tabbouleh is originally a Lebanese dish, and is a staple in Middle Eastern cuisine, though it is traditionally made with bulgar. But I decided to try using the multi-colored quinoa that I had on hand in place of the bulgar. The end result was a wonderfully flavorful salad that has a more delicate texture, and offers more protein than bulgar-based tabbouleh. This makes it an ideal Weight Watchers vegan recipe, because the protein content of the quinoa makes it a great choice for vegans and vegetarians who cannot get their protein servings from meat. Also, the health benefits from quinoa are no joke – it’s an amazing source of fiber, amino acids, magnesium, and riboflavin. And at just 4 Smart Points per serving, this light, lemony, and refreshing Quinoa Tabbouleh Salad makes a great summer salad, but I love it so much, it’s on my table throughout all the seasons!

If you’ve ever had those adorable little Asian Chicken Lettuce Wraps, you know how tasty they are, but also how messy they can be to eat. One of my all time favorite Weight Watchers holiday salad recipes, I’ve made this Pomegranate, Apple, and Date Salad Recipe more times than I can recall! Not only is it lovely, but it’s super easy, and it works well as a complement to many meals. Traditionally, it’s always on my table every Rosh Hashanah, as it’s full of my foods that are symbolic of the holiday. But I also will brung it to a Christmas dinner party, or serve it along with Thanksgiving dinner. It’s just such a lovely and delicious salad that is always a hit. Sometimes I’ll add some crumbled gorgonzola, blue cheese, or brie wedges, other times I may sub out the dates with fresh figs or persimmon. Sooooo good!! Some people spend all day long cooking their Rosh Hashanah dinner, but I am all about quick and easy meals overs here! This Roasted Honey-Soy Glazed Chicken recipe is an incredibly easy dish to make that requires just a handful of ingredients, but is a mouthful of wonderful flavors. A little sweet, a little salty, a little smoky…all the good tastes are there. But I don’t need to spend all day slaving away in a hot kitchen. Chickpea and Sumac Salad

One of the best things about living in Southern California is the diversity of foods and restaurants. Growing up in PA, my diet was pretty American standard. But after moving to Los Angeles, a whole new world of foods and flavors was opened to me, and I’ve never been happier. Middle Eastern foods are almost always a hit with me, and after dining at a Turkish restaurant recently, I discovered this super simple, yet incredibly flavorful Chickpea and Sumac Salad Recipe. The key in this dish is to really work that sumac into the onions with your hands. It takes that bitter edge off of the onions while making them both a little sweet and a little tart. Combined with tender garbanzo beans, tangy lemon juice, and bright mint and parsley, this said packs a big flavor punch. It’s loaded with fiber and protein, which makes it really quite satisfying for just 4 Smart Points. If you eat vegan, this salad is sure to become a staple in your meals. But we are meat eaters, and I love serving this salad with my Moroccan Beef and Lamb Meatballs. So good!!!

Mexican Beef and Zucchini Skillet

Here’s another amazingly good low carb Weight Watchers recipe that was a big hit with my family. I had a few extra zucchini on hand recently that I didn’t want to go to waste, so I put together this Mexican Beef and Zucchini Skillet Recipe for a quick, easy and healthy dinner. All the ingredients are inexpensive and are almost always on hand in my pantry. For the kids, I served this over some brown rice and they loved it! Surprisingly, they gave me no grief about the zucchini being in there. I really love this dish with the ground beef, even though it adds extra fat and calories. The flavor of the meat works nicely with the mild zucchini. But if you want to trim this recipe down a couple of Points, you could use ground chicken or turkey instead. With the beans and zucchini, it’s bulked up very well, and is absolutely satisfying. This Mexican Beef and Zucchini Skillet recipe is perfect for busy weeknight dinners. And leftovers freeze nicely, too! Enjoy.

It may be in the high 80’s this week, but I’ve been in need of some comfort food lately. And while enjoying one of my favorite soups, French Onion – which I ADORE, I got the idea for a simple casserole that incorporated some of those divine flavors. I wanted it to have some protein, and I needed it to be kid-friendly too, because it just makes my life so much easier when the whole family eats the same thing.
