One of my all time favorite Weight Watchers holiday salad recipes, I’ve made this Pomegranate, Apple, and Date Salad Recipe more times than I can recall! Not only is it lovely, but it’s super easy, and it works well as a complement to many meals. Traditionally, it’s always on my table every Rosh Hashanah, as it’s full of my foods that are symbolic of the holiday. But I also will brung it to a Christmas dinner party, or serve it along with Thanksgiving dinner. It’s just such a lovely and delicious salad that is always a hit. Sometimes I’ll add some crumbled gorgonzola, blue cheese, or brie wedges, other times I may sub out the dates with fresh figs or persimmon. Sooooo good!! I’ve even made this for lunch and by adding some grilled chicken breast on top. Such a simple, versatile salad recipe that is as pleasing to the palette as it is to the eye. Enjoy!

Chickpea and Sumac Salad

One of the best things about living in Southern California is the diversity of foods and restaurants. Growing up in PA, my diet was pretty American standard. But after moving to Los Angeles, a whole new world of foods and flavors was opened to me, and I’ve never been happier. Middle Eastern foods are almost always a hit with me, and after dining at a Turkish restaurant recently, I discovered this super simple, yet incredibly flavorful Chickpea and Sumac Salad Recipe. The key in this dish is to really work that sumac into the onions with your hands. It takes that bitter edge off of the onions while making them both a little sweet and a little tart. Combined with tender garbanzo beans, tangy lemon juice, and bright mint and parsley, this said packs a big flavor punch. It’s loaded with fiber and protein, which makes it really quite satisfying for just 4 Smart Points. If you eat vegan, this salad is sure to become a staple in your meals. But we are meat eaters, and I love serving this salad with my Moroccan Beef and Lamb Meatballs. So good!!!

Balsamic Roasted Chicken and Vegetables

Within hot and busy summer days, I rarely have the time or patience to put forth a lot of effort in the kitchen. So I’ve been making Weight Watcher recipes that are fast, easy, and delicious. This Balsamic Roasted Chicken and Vegetables Recipe is a great dish that I find myself cooking again and again because it’s super fast and easy, and my whole family loves it. Sometimes, I’ll even double, or triple this recipe, then freeze it in the marinade so that I can have it available for a quick and easy dinner the following week too. The marinade is so incredibly flavorful, and the meat turns out juicy and delicious. I have sometimes left my veggies in the marinade with the chicken, and that also works….the veggies just come out darker from soaking in the marinade. Such an easy and tasty meal! Enjoy.

Baked Falafel with Tahini

I truly believe that this Baked Falafel Recipe is actually much better than the traditional fried version. The flavors from the spices and fresh parsley and cilantro are bright and bold, and the garbanzo beans are thick and meaty. The outside is crisped to perfection, and the inside is soft and creamy. Topped with homemade tahini sauce and fresh cucumber salad, and stuffed into a whole pita, it’s one seriously satisfying meal. You can even skip the pita, and serve the falafel and on top of a big salad. With lots of protein, fiber, and flavor, this healthy homemade falafel recipe is an excellent one to try this New Year. Open Faced Chicken Gyro

With 2016 almost at an end, it’s time to get back on track and detox from all the holiday goodies. Gyros have always been one of my favorite guilty indulgences, and today I’m sharing my favorite healthy makeover of a traditional Greek gyro. First of all, I subbed out the fatty, high cholesterol lamb meat with tender chicken breast marinated in an amazing blend of Greek spices, lemon juice and yogurt which helps to tenderize the breasts while giving them fantastic flavor. Also, by making my homemade tzatziki sauce, I was able to lower the calories while also bringing in some more incredible tastes. Trust me when I tell you that after making your own tzatziki sauce, you will never want to buy the pre-made store bought kind again. Finally, everything is served on top of a whole wheat pita, and topped with fresh red onion and tomato slices. It is so good. SO GOOD! And at just 7 Smart Points each, these healthy chicken gyros make a great Weight Watchers lunch idea.

Baked Hawaiian Pineapple Chicken Teriyaki

This Baked Hawaiian Pineapple Chicken Teriyaki Recipe is one that my kids ask for again and again. I love that it’s super easy to make, that it tastes fantastic, and is just 6 Smart Points per serving. Just pour the sauce over the chicken pineapple, and peppers, and bake! You could make this even lighter by using chicken breasts instead of thighs, but my family tends to prefer the dark meat. Breasts would work really well though, given that they are cooked in the sauce, so that would help keep them super moist and juicy. Traditional Teriyaki sauces use a lot more sugar, which also helps give a thicker sauce, but this sauce is still deliciously sweet and flavorful without being too sweet. It’s also a perfect topper for steamed rice, which I highly recommend with it. Enjoy!

Chicken Tacos – 5 Smart Points

The last couple of weeks I’ve had a craving for tacos. Ground beef is finally coming down in price (a bit), but I still frequently turn to chicken. My in-laws raise chickens each year, then butcher them and dole them out among the family. As a result, we always have delicious chickens in the freezer, so we have leftover chicken from our Sunday dinners. It’s a great way to have easy, lean meat that’s ready to put into another recipe for the rest of the week. Chicken tacos is one that is very easy, delicious and is perfect for dinner. I also love the leftovers for lunch, they’re quick and easy and still delicious and healthy. One of the great things about tacos is that you can pile on all the extras you want, and if you do it right, you can still keep the points down by adding mostly veggies. Mexican Quinoa – 8 Smart Points

Even though not everyone in the house likes quinoa, I do. I like to make up a batch in my rice cooker and then make simple, nutritious and delicious lunches with it. It provides a nice change from salads on some days. However, I’m a huge fan of one pot meals. Anything that I can do that doesn’t have the kitchen covered in dishes is great (my husband is even more a fan, since he does the dishes when I cook!). This one is great. All those delicious Mexican flavors that I love – black beans, corn, onions, cumin, garlic and cilantro all wrapped up into one delicious dish. Since avocadoes were on sale recently, and we had a perfectly ripe one, I sliced up avocado to put on top after it was done cooking. My favorite part was how easy it was. Lemon Pepper Vegetables

One of my favorite ways to make vegetables is to steam or sauté them and then season them. I found a grill seasoning once that was really delicious, but it used dried rosemary and sometimes the twigs would get stuck in your teeth. I decided that since I loved the flavor, but not the rosemary, I would try my own seasoning. I found a perfect combination that I love to use when I want some steamed or sautéed vegetables, but want to add some extra flavor. One of the key ingredients is lemon pepper. It seems to add a little brightness to the flavor that really sets the vegetables off. I love to season steamed cauliflower and carrots this way. It’s a healthier way to add some flavor to them without adding cheese or butter and brown sugar. But this time I sautéed some mixed veggies and added my favorite spices. I loved the result. It added a delicious flavor to the vegetables and really spiced them up without adding extra calories. Asian Tossed Salad with Tofu – 7 Smart Points

Asian Salad With Tofu

There are two things about this recipe that I love – salad and Asian. This salad is filled with Asian flavors, from the garlic and sesame dressing to the seasoned tofu. Tofu was an acquired taste for me. Growing up, my mom would make it, but I wasn’t a huge fan of the texture, so it took a long time before I tried it again and realized that I actually like it. The key to really tasty tofu is to make sure it’s seasoned well. Typically, you can’t stir it much, or it will disintegrate, so just simmer it for a while (15 – 25 minutes) in some seasoned broth and you’ll have a seriously tasty meal when you’re done. It’s something you can add to Oriental soups (like a chicken noodle), Asian noodles (even just spaghetti with a peanut dressing and tofu) or serve it on top of rice. I used what I had on hand for vegetables, but feel free to change up the veggies to suit your personal tastes. I like to salad the best when the tofu is still warm, but not hot (or cold). I think it has the best flavor. It’s a simple salad that doesn’t take long to make, but it’s delicious and packed with fiber.

Tuna Salad Stuffed Tomatoes

I think that everybody has those favorite easy meals. The ones that you gravitate to when you’re home by yourself for the night. For my husband, one of those meals is a tuna salad sandwich. I thought I’d try and make a slightly more elegant version of a tuna salad sandwich with these tomatoes. It works great. The larger tomatoes, like beefsteak tomatoes, have lots of seeds and pulp on the inside that are easy to scoop out. Once the insides are removed, you can use it as a little bowl for just about anything. In my case, that was a rather delicious tuna salad. I lightened it up a bit by using fat free mayonnaise and non fat Greek yogurt, but didn’t sacrifice anything in the flavor. Be sure to use white or light tuna canned in water and then drain it before flaking it into the salad. I added the hardboiled egg because I had a couple on hand, but I’ve also tried it without, and it’s just as tasty. It’s a great way to really make a classic favorite a little more sophisticated. Cabbage Shell Chicken Tacos with Chipotle Cream

If there’s one food I could eat everyday for weeks without tiring if it, it’s tacos. That’s partly because there are SO many different ways to prepare them, and I’d never get bored. For this chicken tacos recipe, I used cabbage leaves instead of traditional taco shells to help cut carbs and calories. I also added some swiss chard leaves for added nutrition and for it’s aesthetics. The fresh, raw corn salsa is such a unique flavor too…which I adored. My husband said he would have preferred that the corn was roasted first, so if raw corn isn’t for you, just roast the cob in the oven or on the grill first. But the real show pony of this recipe is the chipotle sour cream!! I could NOT get enough of it! These tacos were a total hit…my 6 year old devoured them….even with that cabbage shell. And at just 5 Smart Points per taco, you are getting one seriously delicious and nutritious dish!
