Chicken Bruschetta Bake – 5 Smart Points

Chicken Bruschetta Bake

An easy wholesome dinner that is made with fresh ingredients, and takes very little prep time. If you’ve ever had bruschetta as an appetizer, then you know how magical the flavor combination of tomatoes, basil, garlic and balsamic vinegar is. This Chicken Bruschetta Bake recipe takes all the divine flavors of a bruschetta appetizer, and turns it into a complete meal. Typically, bruschetta is served on bread, toast, or crackers. But here, it’s baked over top of chicken breasts, which keeps them tender and juicy, and locks in those incredible flavors. It also ups the protein content and lowers the carbs, making it a healthier and lighter meal. The melted mozzarella cheese really seals the deal on this dish, and gives that creamy, melty goodness that just can’t be compromised. Not all delicious and healthy Weight Watchers recipes require hours of painstaking effort in the kitchen. This Chicken Bruschetta is a breeze, and delivers a fantastic meal that the whole family will enjoy.

Chicken Pesto Bake Recipe – 3 Smart Points

Chicken Pesto Bake

Here’s another easy and delicious way to dress up chicken breasts! In the Chicken Pesto Bake recipe, the chicken breasts are first topped with flavorful pesto sauce, then fresh tomatoes and mozzarella cheese. It’s literally, just a handful of ingredients, but it delivers quite a tasty dish. I usually just buy a jar of prepared pesto sauce for this, but you can also make your own, if preferred. But at just 3 Smart Points per serving, this simple Weight Watchers chicken recipe offers a great way to indulge in wonderful flavors, while still keeping the Points low. It’s also packed with protein and extremely low carb. If you have the extra Points to spare, try this on some fresh Italian bread and serve as a sandwich. I usually like to pair this dish with a fresh side salad or some steamed veggies for a complete meal. Enjoy!

Chicken and Broccoli Noodle Casserole Recipe – 7 Smart Points

Chicken and Broccoli Noodle Casserole

It’s in the 90’s this week, here in Orange County, CA, and yet, I’m making a creamy, comforting Chicken and Broccoli Noodle Casserole. That’s weird, right? It’s too hot! But when I have a craving, not even a heat wave will stop me. And what I’ve been craving, is a rich, decadent, filling casserole that combines meat, veggies, and carbs all in one dish. Because sometimes, I just don’t feel like preparing side dishes. This week, I made a Weight Watchers casserole recipe that was absolutely heavenly. It has all the flavors and textures I wanted, and came out to just 7 Smart Points per serving. If broccoli isn’t your thing, zucchini, mushrooms, or carrots and peas would all work really well too. I’ve also made this with chicken thighs instead of breasts, which was even better. So if you can spare the extra Smart Point, try it with chicken thighs. And one word of advice – don’t skip the bacon/almond meal crumble on top…it’s what really makes this dish!
