It’s in the 90’s this week, here in Orange County, CA, and yet, I’m making a creamy, comforting Chicken and Broccoli Noodle Casserole. That’s weird, right? It’s too hot! But when I have a craving, not even a heat wave will stop me. And what I’ve been craving, is a rich, decadent, filling casserole that combines meat, veggies, and carbs all in one dish. Because sometimes, I just don’t feel like preparing side dishes. This week, I made a Weight Watchers casserole recipe that was absolutely heavenly. It has all the flavors and textures I wanted, and came out to just 7 Smart Points per serving. If broccoli isn’t your thing, zucchini, mushrooms, or carrots and peas would all work really well too. I’ve also made this with chicken thighs instead of breasts, which was even better. So if you can spare the extra Smart Point, try it with chicken thighs. And one word of advice – don’t skip the bacon/almond meal crumble on top…it’s what really makes this dish!

We are counting down the last few days of school until we are in full summer swing! And summer means lazy days by the pool and little effort in the kitchen. This Summer Green Bean Salad Recipe is the perfect dish for those hot days, when you want a simple dish that’s light and healthy. I like the green beans to be a little crisp, so I just blanch them in the boiling water for just a few minutes, and then immediately transfer them to an ice bath. You could steam them too, if you prefer. The tangy lemon garlic dressing is the perfect complement to the salad, and ties all the components together. And if you are lucky enough to have any leftover, they are just as delicious the next day! If you’ve never had (or even heard of) Balela Salad before, let me fill you in. Balela is a Middle-Eastern garbanzo and black bean salad, tossed with a tangy, herbed vinaigrette. I typically make this delicious salad anytime I’m cooking for vegans or vegetarians. The beans offer a nice dose of protein, and are wonderfully filling. It’s such a versatile recipe too — you can serve it as a side salad, as a relish for meat or fish, or as a dip for crackers, breads, or pita chips. I’ve also used this in a sandwich or wrap. I’m telling you…a ton of things can be done with this recipe! We’ve been watching a lot of hockey lately (playoffs and now the Stanley cup championship), and this is the perfect game day snack. We are winding down to the last few weeks of the school year, and I am running out of steam. That means I need fast and easy weeknight dinners that are healthy, and Weight Watchers friendly. Moroccan Beet Salad

In Morocco, beets are used regularly in salads because they are available year round there. A good friend of mine, who I consider to be an amazing cook, and who is also of Moroccan heritage, once served this beet salad at a dinner she had invited us to. It was so divine, I simply had to find out the recipe and then how to make it Weight Watchers friendly. As luck would have it, this salad is already pretty light and low in Points, so I just had to make a few alterations. And though it takes a bit more preparation time because the beets need to be roasted first, I assure you that it’s absolutely worth the effort. The roasting process lends such a beautiful, and rich flavor to the beets, and when tossed with the remaining ingredients, the end result is a spectacular salad that’s not only lovely and delicious, but high in nutrients as well. Naturally sweet and very healthy, beets have earned the reputation of being a superfood that’s rich in potassium, manganese, vitamin C, and fiber. And they are 0 Smart Points! So if you haven’t been getting any beets in your diet, this Moroccan Beet Salad is the recipe to try. Enjoy!

This cauliflower rice trend that’s been going around has really been working for me! I’m amazed at how many places I can switch out a high calorie, flour based carb, for a much lighter and healthier vegetable instead. This Chicken Taco Bowl is no exception. Because the meat and beans are so wonderfully seasoned, and the 0 Points toppings are also immensely flavorful, you can barely notice that the traditional Mexican rice has been replaced with some 0 Point riced cauliflower. Roasted Cauliflower Chicken Bolognese

Pasta is one of my kids’ favorite meals, so I find myself making it a lot. The problem is, I also love pasta, but those noodles always end up making the dish too high in Points for me to eat it. So I’m always looking for an alternative way to enjoy my favorite pasta dish, without having to use actual pasta. “Zoodles” has always been a preferred option of mine, but recently I decided to try roasted cauliflower instead, and I have to say, I like it even BETTER! You guys — it is really, really good!! The cauliflower is so mild, it picks up the flavor of the sauce, and is a great way to enjoy a guilt free pasta dish. I recently tried it with my light bolognese sauce, and it was absolutely amazing! What a great way to pack in more nutrition, enjoy a delicious and decadent pasta dish, and not use too many Smart Points. I’ll definitely be trying roasted cauliflower as a substitute for pasta in some other popular Italian recipes too. Enjoy!

Stuffed Pepper Casserole Recipe – 5 Smart Points

Stuffed Pepper Casserole

Turning traditional, fussy dishes into a simpler casserole version has been one of my favorite cooking pastimes recently. We are all big stuffed pepper fans over here, so I thought I’d make an attempt to turn it into a casserole instead, which turned out to be a fantastic idea! You get all the wonderful flavors of the customary stuffed peppers, but with less effort and an easier to eat form. Plus, this Weight Watchers dinner recipe was easy to freeze and store in individual serving containers, so that I could have a healthy meal easily available when needed. It was delicious, satisfying, and just 5 Smart Points per serving. We’ll definitely be adding this dish into regular rotation around here!
