It’s perfect for just about every salad – including this fruit one. Just like the feta – trust me on this one, you REALLY want to add the dressing in this salad. It might be the strangest thing you’ve done, but you need the tangy balsamic vinaigrette to really take this salad to the next level.

Ingredients
 

  • 6 cups watermelon - (diced)
  • 1 ½ cups fresh blueberries
  • cup fresh mint leaves - (finely chopped)
  • cup reduced fat feta cheese - (crumbled)
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt to taste

Instructions
 

  • In a large bowl, whisk together the oil, vinegar, and salt.
  • Add in the remaining ingredients, and gently toss to combine.
