Oct 05 2011 Low Calorie Candied Yams Recipe – 5 Points +With the holidays quickly approaching, I’ve been in the kitchen experimenting with some delicious low calorie ideas for Weight Watchers Thanksgiving Recipes, and I am having way too much fun with this! One of my personal favorites is candied yams. I never liked them much as a child, but as an adult, I grew to love them. But with the amount of butter and sugar in most traditional candied yams recipes, the Points Plus count would be way out of control. This lower calorie version still uses all of the essential ingredients (can’t skimp on those!), but with just a few tweaks to make them more Weight Watchers friendly. Each serving is just 5 Points +, and that’s for 3/4 cup, which is a pretty decent serving size for a side dish. If you want candied yams on your table this Thanksgiving, these are a must try. Oct 04 2011 Roasted Tomato Gazpacho Recipe – 1 Points +Traditionally, a tomato based cold soup made with raw vegetables, this version calls for roasting or grilling the vegetables first, to add a delicious smoky flavor. Light and refreshing this Roasted Tomato Gazpacho is just 1 Points + for a cup and is jam packed with fiber, antioxidants and Vitamin C. It’s so flavorful and satisfying and goes great with your favorite salad or sandwich. The first time I made this, I served it in little cups as an appetizer for a party…and it was a huge hit! This is a super tasty way to get your veggie servings in too. Enjoy! Man, I love Trader Joe’s….what did I ever do before this store existed? Just recently, I was spotted their Trader Joe’s Queso Cheese Dip on the shelf, and was REALLY craving some. I almost walked away, assuming that it’d be super fattening and way too many Points Plus, but I decided to pick it up and just have a look. Well I’m sure glad I did!!! I was BLOWN AWAY by what I saw on the nutritional label…each 2 tbsp serving has 0 Points Plus!!! That’s right, people…ZERO POINTS PLUS!!! And it tastes really good! So if you’ve got a craving for some cheesy nachos made with Queso Dip, Trader Joe’s, once again, is the place to go. I just bought about 10 jars of this stuff! Perfect for a quick and easy low calorie game day dip too…no one will have any idea that it’s low calorie. P.S. Check out the nutritional stats… photo credit: lol foodie Take advantage of all the delicious seasonal squash with this amazingly yummy Winter Vegetables and Pasta recipe. Healthy and light, you’ll get a full 2 cups serving for just 6 Points +!! Now that’s what I call a meal, people. Just by using a low calorie, high fiber pasta, and bulking up the dish with lots of veggies, you’re able to get a truly delicious vegetarian pasta meal without using up a lot of your Weight Watchers Points Plus, AND you’ll be satisfied. And with the fantastic flavors of the butter, sage, thyme and wine, this dish is truly reminiscent of a fabulous fall day. Enjoy!
