I don’t know about you, but I LOVE pasta salad. And if you love it as much as I do, you’ll really enjoy this delicious (and healthy) recipe! This is a great recipe to make for parties or large family dinners, as it serves 10. It’s also a very colorful dish (so your dinner guests will love it), and it’s loaded with vitamins and healthy fats. Also, if you don’t have fresh salmon, you can used canned (it’s easier anyway). I made this salmon pasta salad once for a backyard BBQ and it was a huge hit! My friends all loved it and treated me like I was a gourmet chef. Ha!

This is one of the easiest chicken recipes I’ve ever used. Man, I just love these crock pot recipes!! In less than 5 minutes, I’ve got everything in the slow cooker and there is nothing more I need to do! Plus, this low calorie basil chicken recipe tastes amazing and is a great meal for those following the Weight Watchers program. This is a great meal to cook for the whole family, or to divvy up into individual portions to be eaten at a later time (this is a GREAT way to have low point, ready made meals on hand).

This sausage and chicken recipes is one of my fiancé’s all time favorites. And I like cooking it because it’s an easy recipe to prepare. Not to mention it’s delicious and a big serving is only 6 Weight Watchers POINTS! Gumbo, which is a local version of French bouillabaisse, has graced every proud Louisianan table at one time or another. And this lightened up version is just as tasty as the traditional delicacy of the bayou.

TIP: This homemade gumbo recipe can be prepared with fresh vegetables for a slightly more crunchy texture.

Shakshuka Recipe – Spicy Tomatoes and Eggs Breakfast from Israel

The first time my fiancé made this dish for me, I was blown away by how incredibly healthy and low calorie it is. Shakshuka is a hot and spicy traditional dish that originates from Israel which consists mostly of tomatoes and eggs. But my fiancé has enhanced the traditional Shakshuka recipe with some tasty (and healthy) additions. His version of Shakshuka is astoundingly low calorie, and the nutritional statistics make it one of the healthiest home-cooked meals I’ve ever had. Just one serving big serving (with 2 eggs) packs in about 3/4 of your recommended daily allowance of fruits and vegetables, and yet contains only about 200 calories, 8 grams of protein, 0 grams of fat, about 7 – 8 grams of fiber, which is equivalent to only 3 Weight Watcher Points!!! *Note that these nutritionals are based on not eating the yolk of the egg, which have more fat and calories, but only eating the white. I chose to not eat the yolk of the egg, simply because I don’t like the yolk, but that ended up making a lot more healthy and low calorie /low fat. And on top of all this, Shakshuka tastes INCREDIBLE!!! So many flavors, textures, and colors!

My favorite way to eat the Israeli Shakshuka is spiced up with some Frank’s Red Hot Sauce (best hot sauce EVER!!!), which adds a nice hot and tangy taste. YUM!!! The best part is, you can really pig out on this stuff with absolutely no guilt. So it’s a great way to really satisfy your hunger and pack in some amazing nutrients and vitamins, and stay within your Weight Watcher Points!!!

If you don’t really care too much about calories or you don’t diet then try this…my fiancé likes to eat his Shakshuka in a bowl over fresh Israeli hummus (that can be found at Costco) and wipe it with a warm pita bread. Trust me! He knows what he’s doing…

This tasty Autumn Vegetable Minestrone soup is a great low calorie soup recipe to keep on hand. With just one WW point, it’s a dieter’s best friend! I like to make a large batch of this soup and then divide it up into individual portions and freeze them. That way, when hunger strikes and I’m looking for something quick and easy to make, I can just grab one of these low calorie soups right out of my freezer and heat it up! Slow Cooker Asian Spiced Beans Recipe – 7 Point Value

This slow cooker recipe for Asian Spiced Beans with Rice, complete with Weight Watcher Points, is one of the best I’ve ever had. It’s thick and hearty, and loaded with fiber and protein, so you feel very full with just one serving. If you really want to amp up your nutrients, you can substitute brown rice for the cooked white rice. I also preferred to use black beans instead of the red beans because I like the taste better.

Crockpot Arroz Con Pollo Recipe – 7 Point Value

Arroz con pollo is a traditional dish from Spain and Latin America. It translates as “Rice with Chicken” in Spanish. There are many different ways to prepare this tasty meal, but below is my special Weight Watchers chicken recipe version, with lower calories, yet still with all the yumminess! Some people may use saffron in arroz con pollo, but I did not in this recipe. Though, feel free to add it to your version, if you’d like, as it will not affect the Weight Watchers Points Value. Vegetable Soup Recipe – The Infamous 0 Point Value Soup

In the world of Weight Watchers, this 0 Points soup has reached celebrity status. It’s yummy, easy to make, and has ZERO POINTS!!! As a Weight Watchers member, this soup has been a staple for me. I find it best to make a large batch on the weekend, and then divide into 1 1/2 cup portions (those little plastic Ziploc containers work great for this), and store them in my fridge or freezer. This way, when I’m busy during the week, I can just whip out one of these babies on a moment’s notice!

Nothing says authentic cowboy cookin’ luck Arizona Chuck Wagon Beans. I absolutely adore this meal, but I thought there was no way I could manage to eat it and still stay within my Weight Watchers Points Range for the day. So when I found this recipe online one day, I was ecstatic! I couldn’t wait to give it a try. It ended up turning out perfectly! Actually, it turned out so well, my fiancé didn’t even know it was low calorie! Ha!
