Ok, I admit that I’m a bit obsessed with butternut squash lately, but can you blame me? It’s everywhere right now, it’s incredibly healthy, versatile and delicious. I just can’t help myself. And while browsing through some Weight Watchers Fall Casserole Recipes, I came across one that I revamped and made into a super yummy and healthy dinner. This Butternut Squash and Pasta Casserole Recipe was the perfect low calorie meal idea and my family loved it! Still with all the fabulous fall flavors I was hoping for, each serving had just a 4 Point Total. And it was so hearty and filling! With Halloween, and all those other food focused holidays just around the corner, I’ve been in the kitchen a LOT, looking for some yummy Weight Watchers Holiday Recipes to share with all of you! I’m a sucker for all the delicious homemade Halloween Recipes that are all over the place right now, and thought this tasty, low calorie Apple Cobbler Recipe was something everyone would enjoy. Just by making a few, simple substitutions to the traditional cobbler recipe, I was able to get the Point Total to just 4 per serving. Not bad. Your guests are in for both a trick and treat if you serve this delicious dessert at your Halloween party this year. No one will have any idea that this homemade apple cobbler is Weight Watchers friendly!

This fabulous side dish recipe is so amazingly yummy, and yet incredibly healthy!! Each nicely sized serving of my Cauliflower & Butternut Squash Curry Recipe is just a 2 Point Total. It’s loaded with fantastic flavor and spice, is high in fiber, and still very low in calories, making it a perfectly healthy recipe for weight watchers. And I think it’s a great way to get some more veggies into your diet, while indulging in some super tasty curry sauce too! Though this isn’t an official one of Weight Watchers Side Dish Recipes, try serving it with some low calorie grilled chicken breast for an easy meal that will satisfy the whole family.

Since temperatures have been pretty high this past week, I convinced my husband to break out the grill for one last summer grilling recipe. This light and lean Grilled Flank Steak with Asparagus and Onions was a HUGE success!! I love steak, but being a Weight Watchers member, I usually avoid this dish. So I was thrilled when I came across this flank steak recipe. It’s SO flavorful, and the asparagus and onions help to bulk up the serving, so it’s actually quite satisfying. And with just a 4 Point Total per serving, this is a fabulous weight watchers steak recipe. Get those grills back out, folks!

Despite all the tasty fall recipes that can destroy your diet faster than you can say Pumpkin Pie, with the abundance of fall vegetable recipes, it’s not hard to find a lot of delicious low Points dishes you can incorporate into your plan without missing out on fall flavors. One of my favorite seasonal staples, is this tasty, low calorie Butternut Squash Soup Recipe. It’s creamy, tasty and full of fiber, but low on Weight Watchers Points. In fact, each super yummy serving has just a 3 Point Total. By incorporating a few of the basic ingredients from traditional brown butter sage sauce recipes, this Butternut Squash Soup is sure to please your palate without punishing your waistline.

While shopping at Trader Joe’s this morning, I was lured to the sample booth by a heavenly, enticing aroma…Pumpkin Spice Cream Cheese Spread, served on Cinnamon Swirl Bread. Ummm…YUMM!!!!! Both me and my 19 month old son gulped our samples down faster than you can imagine. God, it was good! But, after looking over the products that hey used to make it, this pumpkin cream cheese recipe would not have been very weight watchers friendly. So I headed home to make my own lighter version. And I was ultimately successful! Creamy and sweet and full of pumkin-y goodness, each serving is just a 2 Point Total. Serve some on top of a 1 Point Cinnamon Bagel for a FABULOUS WW snack idea! Though it’s not an official one of Weight Watchers Fall Recipes, this Cream Cheese Pumpkin Spread Recipe can be used in so many ways, I’m sure you will all just go crazy experimenting with it. Enjoy!
