One of my kids’ favorite meals is the “yellow chicken on a stick”, which most people know to be Thai Chicken Satay. And I can’t blame them for liking it. It’s got tender, juicy chicken that’s marinated in a truly divine peanut sauce and then it’s grilled to perfection and served with extra sauce for dipping. What’s not to love?

However, the easiest way to get Thai Chicken Satay is to go out to eat. However, as great as it is to not have to cook or do the dishes, going out to eat has two major downsides – it gets expensive and it leads to eating other delicious, but usually high calorie foods that I don’t need (Mango Sticky Rice, anyone?). So, I like to try and make my family’s favorite meals at home and to give them a lighter, healthier twist.

french onion chicken casserole 675x465 1

It may be in the high 80’s this week, but I’ve been in need of some comfort food lately. And while enjoying one of my favorite soups, French Onion – which I ADORE, I got the idea for a simple casserole that incorporated some of those divine flavors.

There are always those vegetables that fill you with trepidation. They’re the ones that if they’re cooked right are delicious and amazing, but if not, well, there’s always the garbage can. Cabbage is one of those vegetables. It’s usually overcooked, bland, and doesn’t win any prizes for its looks either.

Don’t get me wrong, cabbage can be good. When you fry it up with onions and apples in bacon grease, it’s pretty good. Not healthy, but good. Well, luckily for you, I’ve got a cabbage recipe that is both good and healthy. This Garlic Roasted Cabbage Wedges recipe is amazing.

Every family has those snacks that the whole family loves and will gobble down in no time. One of those snacks for our family is chips and salsa. Everybody loves it. And we eat it. A LOT.

Typically, when I’m busy, I use store bought salsa. However, everyone’s favorite is when I’ve got enough time to make some amazing, fresh salsa. There is nothing like it.

beef and vegetable stirfry

I can honestly never get enough of Chinese stir fry. I love it in all forms. But the restaurant version can be pretty high in Points. So I like to try my hand at healthy knock-offs of my favorite Chinese fast food dishes. One of the easiest and best attempts resulted in this delicious Beef and Vegetable Stir Fry Recipe.

Chicken is something that I frequently turn to in my recipes. It’s simple and mild, so it’s easy to dress it up and not have the flavor of the meat overwhelm the entire dish. That’s not even counting that chicken will usually come on sale and chicken breast is a great way to keep the points low in recipes.

The trouble with chicken is that, like veggies or anything else, it’s easy to get stuck in a rut. But I have an amazing, simple, easy, and delicious way to dress up your chicken breasts! Enter this Chicken Pesto Bake recipe. The chicken is topped with a flavorful pesto sauce, tomatoes, and mozzarella cheese. It’s amazing.

chicken fajita skillet

Who says you always have to eat fajitas in a flour tortilla? Yes, I know it is delicious. But having your fajita straight out of the skillet is a highly underestimated option. Not only are you saving calories, carbs, fat, and sugar grams, but you can really go crazy on the toppings without worrying about it dripping out all over you.
