Low Calorie Garlic and Tomatoes Pasta Recipe

  • 3 packs Miracle Noodle Spaghetti
  • olive oil non fat cooking spray
  • 8 cloves garlic, very thinly sliced
  • 1/4 cup finely chopped fresh basil
  • 3 tomatoes, peeled, seeded and diced fine
  • Kosher salt to taste
  • ground black pepper to taste
  • 1/4 cup dry white wine
  • 1/2 cup fat free chicken broth

**Optional: Add a tsp of fresh grated Parmesan cheese to each serving for 1 additional Weight Watcher Point

  1. Spray a large skillet with the olive oil spray and heat at low to medium temperature.
  2. Add the garlic and gently roast on low to medium heat, be very careful not to brown garlic. This should take approximately 3 to 5 minutes.
  3. Add the basil, tomato, salt and pepper. Now add the wine raising the heat slightly and cook for about 1 minute.
  4. Pour in chicken stock and cook until sauce reduces to a gravy-like consistency, raising the heat again if necessary. At this point reduce heat to low.
  5. Drain and rinse pasta, toss in sauce and serve.

Entire recipe makes 3 servings

Those noodles are so expensive!!! I just want to order one or two bags to see how they taste, etc, but the smallest order you can make is 10 bags for $38!! Forget that.

  2. mmmm….

this sauce was so good. I changed it up a tiny bit…I used canned tomatoes since I didn't have fresh. It made it a little watery so I added some corn starch which probably changed the points up a bit. I also added some small bits of cooked shrimp. it was delicious. I'm not so keen on the noodles though. Taste wasn't the issue since they didn't really taste like anything….but the texture was so strange. I wonder if I did something wrong when rinsing and drying them? Next time I'll just use some whole wheat pasta and take the extra points.
